Spinach and Artichoke Breakfast Casserole

Last weekend, we were invited to a potluck brunch for a friend’s birthday. I wanted to bring a savory breakfast dish that would work well for a crowd.

With the big game this weekend, my mind went to making a breakfast version of spinach artichoke dip. I live in Philadelphia, so I clearly had to make a green dish too!

This Spinach and Artichoke Breakfast Casserole is packed with spinach, artichokes, bell peppers, onions and cheese. The result is a flavorful dish that can feed up to 12.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 (10 oz) package frozen chopped spinach, thawed
  • 1/2 cup chopped green onions
  • 1 (14 oz) can artichokes hearts, drained and chopped
  • 1 green bell pepper, chopped
  • 12 large eggs
  • 1/4 cup milk
  • 1/4 cup grated parmesan cheese
  • 1  teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons chopped fresh chives, for garnish

Chocolate Pumpkin Cake with Cinnamon Cream Cheese Frosting

Every year, I have two responsibilities for Thanksgiving: make Bloody Mary’s as everyone arrives and show up with a dessert that is chocolate and/or pumpkin.

This year, I decided to make a dessert that is both pumpkin-y and chocolatey: Chocolate Pumpkin Cake!

This recipe for Chocolate Pumpkin Cake is adapted from a Country Living recipe, and uses my cinnamon cream cheese frosting from my Pumpkin Spice Cupcakes recipe.

Ingredients:

Chocolate Pumpkin Cake:

  • 2½ cups all-purpose flour
  • 1 cup cocoa powder
  • 1 tablespoon baking powder
  • ½ tablespoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • ¾ cup low fat buttermilk
  • 1 (15 oz can) pumpkin purée
  • ½ tablespoon vanilla extract
  • 1 cup plus 2 tablespoons unsalted butter (2.25 sticks), at room temperature
  • 1½ cup dark brown sugar
  • 1½ cup granulated sugar
  • 5 large eggs, at room temperature

Cinnamon Cream Cheese Frosting:

  • 2 (8 oz) packages of Cream Cheese, softened
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1 tablespoon vanilla extract
  • 2 (16 oz) packages powdered sugar
  • 1 tablespoon ground cinnamon

Optional Chocolate Frosting:

  • 1/2 cup unsalted butter, softened
  • 1/3 cup cocoa powder
  • 1 1/2-2 cups powdered sugar
  • 2 1/2 tablespoons milk
  • 1 teaspoon vanilla extract

Pumpkin Polenta with Fall Vegetables

I’m a huge pumpkin fan, and I don’t mean “pumpkin spice” when I say that (although I do love pumpkin spice things as well!)

I haven’t made a savory pumpkin dish for a while, so I was excited to try this recipe for Pumpkin Polenta with Fall Vegetables I found on the Food Network. I adapted it slightly, but for the most part kept it the same.

This recipe adds pumpkin puree to creamy polenta and then tops it with roasted butternut squash and Brussels sprouts, making for a perfect fall meal!

Ingredients:

  • 1 pound Brussels sprouts, trimmed and quartered (about 4 cups)
  • 1 pound cubed peeled butternut squash (about 3 cups)
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • Kosher salt and freshly ground pepper
  • 2 cups milk
  • 1 cup cornmeal
  • 1 15-ounce can pure pumpkin puree
  • 3/4 cup grated parmesan cheese (about 2 ounces), plus more for topping
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons chopped fresh sage, plus some leaves for garnish
  • the juice of 1 lemon, to taste

Pistachio Muffins

I love pistachios. So when my friend and I were determining what freezer-friendly recipes to make for a cooking marathon last weekend, I immediately suggested we make pistachio muffins.

Luckily, my friend was willing to make a batch with me!

As I mentioned in an earlier post, Bob’s Red Mill sent us a goodie box of ingredients to help with our cooking day, which included their Unbleached White All-Purpose Flour.

We used a recipe I found on Food.com to make these muffins.

Ingredients (makes one dozen muffins):

  • 1 1/3 cups all purpose flour (I used Bob’s Red Mill unbleached white all-purpose flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • the zest of 1 lemon
  • 1/2 cup finely chopped pistachios

Spinach and Cheese Strata

There is a little cafe in Old City Philadelphia that I absolutely love called Wedge and Fig. It’s essentially a cheese shop converted into a bistro, so they really know how to choose the best cheese for a particular dish. One of my absolute favorite dishes they serve on their brunch menu is a spinach and cheese strata “savory layers of egg, Cantal cheese, spinach, shallots and bread.” It’s absolutely fantastic.

This weekend, I kind of had an epiphany: strata is a great make ahead option! I decided to make a batch of my own ahead of a busy week, and then portioned it out into containers to bring into work.

Like Wedge and Fig’s version, I used Cantal cheese, spinach and shallots. Cantal is a farmhouse cheese from France that has a flavor somewhat similar to Cheddar — buttery and tangy. I added in some Parmigiano-Reggiano cheese as well as some sourdough bread to bring a bit more tanginess to the dish.

Ingredients:

  • 1 (10-oz) package frozen chopped spinach, thawed
  • 1 cup finely chopped shallots
  • 3 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 8 cups cubed sourdough bread (1/2 lb)
  • 2 cups grated Cantal cheese
  • 1 cup grated Parmigiano-Reggiano cheese
  • 1 1/2 cups milk
  • 1 cup heavy cream
  • 9 large eggs
  • 2 tablespoons Dijon mustard

Hot Cross Buns

Today is Good Friday, which means it’s about time I shared a recipe for Hot Cross Buns!

Hot Cross Buns are a sweet slightly spiced bun with dried fruit. A cross made of icing is piped on top. They are traditionally made and served on Good Friday as a way to break the fasting associated with Lent. There are a bunch of superstitions surrounding hot cross buns. My favorite is that gifting a hot cross bun on Good Friday guarantees friendship between the recipient and gift giver for the year.

Hot Cross Buns aren’t exactly the easiest recipe; it took me most of the day to make them because you need time to let the dough rise. But these tasty little guys are worth it.

Bob’s Red Mill hooked me up with some of their awesome products to help make these hot cross buns, including active dry yeast, all-purpose flour, and currants.

Dijon Herb Crusted Salmon with Creamy Dill Sauce

I am not shy about my love of Cooking Light magazine. Their recipes are what got me started on my cooking journey. Not only are their recipes on the healthier side, but most are also great for weeknight meals. This recipe for Dijon Herb Crusted Salmon with Creamy Dill Sauce is no different.

Seafood in general is a great weeknight option because it tends to take less time to cook. If you haven’t noticed, I’m a big fan of seafood, particularly salmon; I have almost 40 recipes for salmon alone on this blog!

So when I spotted a new salmon recipe in my most recent Cooking Light, well, I had to make it.

Ingredients:

  • 2 (6-oz.) salmon fillets
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon  black pepper
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon finely chopped fresh flat-leaf parsley

Key Lime Pie Cupcakes

We’ve been pretty lucky weather-wise in Philadelphia recently, but are back to it feeling like actual winter. Blah.

I’ve been dreaming of warmer weather (and warmer weather recipes)! I must not be the only one, because the Florida Keys & Key West are hosting an awesome event tomorrow night to help the Philadelphia area dream of the sun and sand.

Tomorrow, 24 of Philadelphia’s top food writers and influencers are getting behind the stove to face off “Iron Chef style” at Walnut Hill College. The influencer who creates the best Keys-inspired dishes within the time limit will win a trip to the Florida Keys and be named an honorary Keys Chef. Guest judges from the Keys will include Chef Bobby Stoky and Philadelphia’s favorite son Pat Croce. The sold out event includes an evening of food, cocktails, fun and friendly competition.

How awesome would it be to win a trip to the Keys? The Florida Keys are a string of tropical islands off the southern tip of Florida and are known for their awesome fishing, snorkeling and scuba diving. In fact, the Keys have the only living coral barrier reef in the U.S., not to mention awesome food and drink. The most well known dish from the Florida Keys is Key Lime Pie.

I was bummed that I wouldn’t be able to attend, but still wanted to get in on the fun, so I decided to make a spin on Key Lime Pie — Key Lime Pie Cupcakes!

Key Limes are smaller than “normal” limes and are a bit more tart. These little guys don’t give off a lot of juice though, so it takes quite a bit to make this recipe. Key Lime Pie is made with key lime juice, egg yolks, and sweetened condensed milk to make a smooth, tangy pie filling with a graham cracker crust.

Ingredients:

Crust:

  • 1/2 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 2 tablespoons unsalted butter, melted

Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
  • 2/3 cup sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup evaporated milk (or regular milk)
  • 1/4 cup key lime juice
  • 1/2 teaspoon key lime zest

Key Lime Curd:

  • 3 egg yolks
  • 1/4 cup plus 2 tablespoons granulated sugar
  • 1/2 cup key lime juice
  • 1/4 tsp grated key lime zest
  • 1/8 tsp salt

Frosting:

  • 1 cup (2 sticks) unsalted butter
  • key lime curd
  • 1 tsp. vanilla extract
  • 3-4 cups powdered sugar
  • ¼ cup sweetened condensed milk

Chicken Chilaquiles Casserole

My fiance is obsessed with leftovers. For whatever reason, he seems to think that most food tastes better the second time around. So I typically make a few more servings than we need so that he has his beloved leftovers the next day.

I made this recipe for Chicken Chilaquiles Casserole recently for dinner using OXO’s 3 quart baking dish (9×13). Chilaquiles are actually typically a breakfast recipe, using lightly fried tortillas and salsa. This version is a casserole take on the traditional, and uses grilled corn tortillas baked with a quick homemade tomatillo salsa, rotisserie chicken, and cheese.

Ingredients:

  • meat from 1 rotisserie chicken, shredded (~3 cups)
  • 1 cup 1% low-fat milk
  • 1/3 cup packed fresh cilantro leaves
  • 1 (26 oz) can whole tomatillos, drained
  • 1 (4.5 oz) can chopped green chilies, drained
  • 1/2 cup chopped scallions
  • 1 cup finely chopped Monterey Jack cheese, divided
  • 3 tablespoons grated Parmesan cheese

Peanut Butter Banana Oatmeal Smoothie

My weekends have become so busy lately as my wedding gets closer. We are now just 2 months from the big day, and every weekend I feel like I have something wedding related I have to attend to.  Because I am always on the go, it has become kind of difficult to get a good breakfast in on weekends, so my go-to breakfast of choice are smoothies, like this Peanut Butter Banana Oatmeal Smoothie!

I love smoothies, but some smoothies don’t keep me full long enough to really be worth making them. So I’ve amped up this smoothie with a few ingredients I picked up at Walmart to keep me full longer.

The base of this smoothie is Oikos Vanilla Triple Zero Greek Nonfat Yogurt, which has 15 grams of protein per 5.3oz which helps me stay full longer. The yogurt also has 0 fat, 0 added sugar,* and 0 artificial sweeteners.

I’m a firm believer that peanut butter makes smoothies taste so much better, so I also used Jif™ Peanut Powder  to add peanut buttery goodness. The Peanut Powder has 85% less fat that traditional peanut butter and no sugar added.

Chicken Agrodolce with Creamy Polenta

Happy New Year! Our unseasonably warm weather seems to have left with 2015, and colder temperatures are here to stay for a while. This recipe for Chicken Agrodolce with Creamy Polenta from Cooking Light’s December 2015 issue is great for cold nights — it’s comforting without being too heavy.

Agrodolce means “sweet and sour” in Italian. In this recipe, the golden raisins provide the sweetness while the red wine vinegar adds a touch of sour flavor to the sauce. The chicken thighs are simmered in the sauce and served with a creamy polenta to soak up the flavors.

Ingredients:

  • 3 cups 1% low-fat milk
  • 2 1/3 cups unsalted chicken stock, divided
  • 1/2 teaspoon kosher salt, divided
  • 2/3 cup cornmeal
  • 1 1/2 teaspoons olive oil

Seared Scallops with Chestnut Puree

 I absolutely love scallops. My fiance on the other hand does not. So I rarely make them. But when I found myself with a fiance-free dinner recently, it was clear what I was going to make!
This recipe for Seared Scallops with Chestnut Puree from Cooking Light makes use of winter-y ingredients such as chestnuts and blood oranges to make a simple but seemingly fancy dinner.
 The scallops are seared and placed on a chestnut puree, then drizzled with a blood orange vinaigrette. I added some dandelion greens, which have a subtle bitterness to them that is a nice contrast to the sweet chestnut puree.
Ingredients:
  • 1 cup packaged precooked chestnuts
  • 1/2 cup packaged precooked chestnuts, finely chopped
  • 1 cup whole milk
  • 1/2 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 2 1/2 tablespoons fresh blood orange juice
  • 1 tablespoon red wine vinegar

I come from an Irish family, so mashed potatoes are a very important part of every large family meal. If it was socially acceptable, I’d fill my plate just with mashed potatoes and gravy at holiday meals.

Mashed potatoes are quite a staple in my life, so I now find myself to be a bit of a mashed potato connoisseur. I like mine super creamy, but don’t necessarily want them loaded with butter to achieve that creaminess.

I personally like to add in Chobani® Non-fat Plain Greek Yogurt. Not only does it deliver the creaminess I am looking for, but it is high in protein (44% of your daily value to be exact) and is low in fat. The yogurt contains no artificial flavors or sweeteners and is only made with natural ingredients that are not genetically modified.

This recipe is definitely a favorite of mine. It uses minimal ingredients and is really simple to make! You can also snazz it up however you’d like! I picked up all of my ingredients at Walmart; you can find Chobani with the other yogurts in the Dairy section.

Main Ingredients:

  • 2 lbs potatoes
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup Chobani® Non-fat Plain Greek Yogurt

Can you believe Thanksgiving is this week?? This year has just flown by!

 

Thanksgiving is my absolute favorite holiday. It’s a day spent with family and friends over good food, just enjoying each other’s company.

 

We spend Thanksgiving at my aunt and uncle’s house. Every year, I bring a little something up to contribute to the meal. For the past few years, I’ve done desserts. My sister put in a request for a chocolate cake this year because in her words, “there’s not enough chocolate at Thanksgiving.”

 

 

We usually have quite a few desserts for the taking, so I decided to make the cake with less added sugar with the help of SPLENDA® Brown Sugar Blend.

 

SPLENDA® Brown Sugar Blend works just like regular brown sugar, but with half the calories. I picked up a bag at Walmart (it can be found in the baking aisle with the other sweeteners, or on Walmart.com).

 

I love the flavors of Hazelnut and Chocolate together, so I tested out a recipe for chocolate hazelnut cake with chocolate frosting this past weekend.

 

The cake uses ground hazelnut in the batter to add a nutty, buttery flavor as well as a really nice texture to the cake.

  • 1/2 cup ground hazelnut (hazelnut meal)
  • 1 cup SPLENDA® Brown Sugar Blend
  • 3/4 cups cocoa powder

Slow Cooker Pumpkin Pie Spice French Toast Casserole #DelightfulMoments

It’s no secret that I love all things Pumpkin. I have over 20 posts on my blog including pumpkin/pumpkin spice, but haven’t posted a pumpkin-themed recipe yet this year, what an oversight!

To make up for my lack of pumpkin posts, I’ve got a pret-ty awesome recipe for you today that can be used as a super decadent breakfast (perfect for snow days or holiday mornings with family!) or a really delicious dessert.

This recipe for Slow Cooker Pumpkin Pie Spice French Toast Casserole is flavored with International Delight’s Pumpkin Pie Spice Creamer, which I picked up at my local Walmart. (It can be found in refrigerated bins near the milk, or at the end of an aisle in a refrigerated case.)
