Pomegranate Olive Oil Cake

I love love love pomegranates. The burst of tanginess is awesome in both sweet and savory dishes.

It is once again pomegranate season (the season runs from ~October through ~January), so I am thrilled to be cooking again with one of my favorite ingredients.

POM Wonderful must have heard about my love of their products, because I was contacted to try out their POM POMS Fresh Arils and pomegranates. I will have a few recipes over the coming weeks, but lets start with something a little sweet.

This recipe for Pomegranate Olive Oil Cake is from the POM Wonderful website. It is topped with a Vanilla Crème Anglaise, a drizzle of olive oil, and some fresh pomegranate arils.

Ingredients:

Olive Oil Cake

  • ¾ cup POM POMS Fresh Arils
  • 2 cups all-purpose flour + 1-2 teaspoons flour, separated
  • 2 teaspoons baking powder
  • 4 whole eggs, at room temperature
  • 1 cup + 3 tablespoons granulated sugar
  • the juice and zest of 1 lemon
  • ½ teaspoon kosher salt
  • 6 tablespoons unsalted butter, melted
  • ¾ cup extra-virgin olive oil
  • 2 tablespoons turbinado sugar

Vanilla Crème Anglaise

  • 15 egg yolks
  • 1 quart whole milk
  • 1 quart heavy cream
  • 3 teaspoons vanilla extract
  • 1½ cups sugar

Grilled Peach Old Fashioned Cocktail

I am absolutely loving my Coyote Outdoor Grill; I have been grilling anything and everything I can find! To see some of my other recipes I’ve made using my beloved grill, check them out here. This time, I wanted to branch out and find recipes that you may not necessarily consider making on the grill.

I found this awesome recipe for a Grilled Old Fashioned from Damaris Phillips (Food Network). How does one grill a cocktail? Well, you grill the fruit that goes into it!

I kept to the recipe for the most part, but added in some peaches for extra flavor because my husband loves all things peach and ended up with this recipe for Grilled Peach Old Fashioned Cocktail. I also substituted in Rye Whiskey to suit our personal tastes. Feel free to use your favorite bourbon of choice instead.

My friends and I loooooove Old Fashioned’s so I was thrilled to find a new version of our favorite cocktail. I make a mean Fizzy Old Fashioned that is a perfect “punch” for groups of friends; it’s not nearly as strong as a typical Old Fashioned, but the bourbon taste is still very present.

Ingredients:

  • 1/2 orange, cut into slices
  • 12 pitted cherries
  • 1 peach, cut into quarter slices, with the stone removed
  • Cooking Spray
  • 5 tablespoons turbinado sugar (such as Sugar in the Raw)
  • 3 dashes bitters
  • 1 (750-ml bottle) rye whiskey (such as Bulleit Rye)
  • 1 liter club soda, cold or  blood orange soda, cold
  • ice

A quick note for my gluten-free friends. Rye whiskey, obviously derived from rye, is gluten-free. The distilling process removes the gluten proteins. So drink away!

Blackberry Black Tea Coconut Ice Cream

I have been meaning to review this really yummy tea for quite a while now. I blame my boyfriend; he swiped my can of The Republic of Tea’s HiCAF Toasted Coconut Black Tea Bags and brought it to work with him!

 

 

The Republic of Tea is one of my favorite tea companies, their tea is so good! (One of my go-to’s is their Earl Greyer Tea) I also really like their packaging; the tins make it easy to transport and keep the tea bags more fresh than they would be in a box.

 

 

What makes this tea particularly noteworthy is that the caffeine content of this tea is enhanced with green tea extract and pure caffeine isolated from premium tea leaves, so it’s a great morning pick-me-up. This tea also has a natural coconut flavor and a touch of licorice flavor, making for quite the tasty tea! It’s really yummy with a splash of milk. To really enhance the coconut flavor, add a little turbinado sugar to your tea too. (You can now understand why my boyfriend stole this tea from me!) The HiCAF Toasted Coconut Black Tea is also gluten free, carb free, with no added sugars.

 

 

I love using tea and coffee in recipes and the flavors of this tea just begged to be used in a dessert! The inspiration for this recipe was a Sunset recipe for a Blackberry-Black Tea Sorbet. Because there is already a flavor of coconut in the tea, I wanted to further enhance that by turning this recipe for a sorbet into a vegan ice cream using coconut milk. 

 

 

Making ice cream is really easy but it takes quite a bit of preparation. First, you need an ice cream maker. (Luckily my mom had one!) The bowl of the ice cream maker has to be frozen for at least 24 hours before it’s ready to use. For this particular recipe, the tea bags need to be steeped in the coconut milk, cooled, and refrigerated before making the ice cream. Plus the whole ice cream mixture needs a few hours in the fridge to get cold. Whew!

Slow Cooker Baby Back Ribs

I received a fun challenge from the Mystery Ingredient Blogger Showcase a few weeks back: have a mystery ingredient sent my way and come up with my very own recipe using it.

I received the package last week and found the following inside:

Coleman’s Mustard and Mustard Powder! Coleman’s has been producing mustard products in England since the early 1800’s so they know their product. As one of the oldest existing food brands, Coleman’s yellow tin is a symbol of quality mustard powder and prepared mustard.

 

I have never worked with mustard powder before so I wanted to use that in a recipe. I was just at a wedding in Texas and didn’t have time to get some barbecue while I was there, so I’ve had quite the craving for ribs. I have no idea what a traditional Texas barbecue sauce would be (and a friend of mine told me mine is actually more of a Kansas City sauce) but I figured mustard powder would be a great addition to my Slow Cooker Baby Back Ribs and would hopefully fulfill my craving.

Coleman’s Mustard Powder is no joke; it’s pretty hot. It’s made from a mixture of both brown and white mustard seeds and heats up when added to a liquid. So I used it sparingly in the sauce but for the spice enthusiasts, feel free to increase the amount used.

 

Ingredients:

  • 2 lbs. baby back ribs
  • salt and pepper, to taste
  • 1 cup ketchup
  • 1/4 cup turbinado sugar (I used Sugar In The Raw)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons low sodium soy sauce (or coconut aminos to make gluten free)
  • 2 tablespoons apple cider vinegar
  • 2-4 drops hot sauce
  • 3 garlic cloves, minced
  • 1 teaspoon Coleman’s mustard powder

Grilled Mission Figs with Mascarpone and Spiced Honey

I mentioned in my previous post (Prosciutto, Fig, and Arugula Flatbread with Balsamic Reduction) that I have quite a few fresh figs at the moment. No complaints here, but I do want to use them all and not waste any, figs are delicious, and grilled mission figs are the best!

Not only are grilled mission figs super tasty, but they are good for you too. (I love when that happens!) According to California Figs, one serving of fresh figs (1/2 cup or 3-4 medium figs) delivers 5 grams of fiber (20% of your suggested daily value), 354mg potassium (10% DV), and 53mg calcium (6% DV) with just 120 calories. Figs are also fat, sodium, and cholesterol free.

Dried figs are available all year round, but fresh figs have a shorter availability period. Mission Figs, which I am using in this recipe, are available longer than most figs and can be found fresh from late May through as late as November.  Because they are mostly a summer produce, I just have to add them to the grill!

I also received a bunch of really awesome kitchen gadgets while at the conference. As I’ve mentioned in the past, I’m a huge fan of OXO and already had my own set of graters, so I actually have an extra set to give away! (Update: I actually have TWO sets to give away so there will be two lucky winners!) I use my set of graters all the time. The zester is my favorite, mainly because every time I work with any form of citrus, I make sure to zest it before juicing to add extra flavor to the dish. The coarse grater comes in handy with soft and semi-soft cheese, but can be used for anything that needs a larger grate. The medium grater is perfect for carrots, chocolate, and the like. This recipe for Grilled Mission Figs with Mascarpone and Spiced Honey is based off a recipe on Whole Living. The only large difference is that I grilled the figs beforehand.

Ingredients:

  • 4 large fresh, ripe figs, stems trimmed, halved lengthwise
  • olive oil (about 1 tablespoon)
  • 1 teaspoon fresh mint leaves, chopped
  • 1 tablespoon turbinado sugar
  • 1/3 cup mascarpone, softened
  • 1/3 cup honey
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 4 sprigs fresh mint
  • lemon zest, to taste (optional)
