Peach, Vidalia Onion, and Pancetta Flatbread

Note: I was sent a box of Vidalia onions to make this post. Opinions are mine alone.

Spring is one of my favorite times of year for cooking. As the weather warms, all sorts of fun produce hits the shelves, bringing so many more options for creative meals! One of the most versatile spring produce options are Vidalia onions.

Vidalia onions are known as America’s favorite sweet onion.

Grown in 20 counties in Southern Georgia, their distinctive taste is a result of the combination of weather, water and soil in that specific region.

Vidalia onions are in season from April to August, so this is the perfect time to show them off in some recipes! This recipe for Peach, Vidalia Onion, and Pancetta Flatbread plays off the sweetness of Vidalia onions with grilled peaches, while balancing out the flavor with some pancetta and a touch of chili powder. The rosemary and chives add some freshness to the flatbread, brightening up the other flavors.

Ingredients:

  • 4 oz Pancetta, cubed
  • 2 Vidalia onions, cut into thin slices, then halved into half moons
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Pinch chili powder
  • Store bought pizza dough (use gluten free dough to make recipe gluten free)
  • 2 large ripe peaches, cut into wedges (or, if not in season, frozen peach slices that have been thawed work too)

Creamy Avocado Soup

My husband and I have had some fairly heavy (but delicious) food recently. So this weekend, I was in search of something a bit lighter for lunch that would still fill us up, like this creamy avocado soup.

This chilled Creamy Avocado Soup recipe from Cooking Light fit the bill! The soup is bulked up a bit with silken tofu, romaine lettuce, and peas to go along with the avocados.

In fact, it has half of your daily fiber and 9 grams of protein in one serving. And yet, it feels so light!

Ingredients:

  • 1 (12-oz.) pkg. silken tofu, drained
  • 2 cups water
  • 2 cups chopped romaine lettuce
  • 1 cup frozen green peas
  • 3 ripe avocados, peeled and chopped
  • 3 tablespoons fresh lime juice
  • 3 tablespoons white wine vinegar
  • 1 teaspoon kosher salt
  • 3/4 teaspoon black pepper, divided

Spinach Lemon Ricotta Pasta

Well. The weather refuses to act like spring.

But I’m sick of waiting for spring to arrive to make delicious spring food!

So this recipe for Spinach Lemon Ricotta Pasta has spring ingredients that are still comforting in chilly weather – spinach with a lemony ricotta sauce over fettuccine.

Ingredients:

  • 1 pound fettuccine
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 2 (5 oz bags) baby spinach

Sheet Pan Blackened Shrimp with Citrus and Roasted Fennel

I’m kind of on a Sheet Pan kick. I love how simple they are, and how easy cleanup is! And this recipe for Sheet Pan Blackened Shrimp with Citrus and Roasted Fennel is no different!

This recipe is adapted from a Cooking Light recipe to make it a pure sheet pan meal.

I know the combination of flavors may seem a bit odd, but it really comes together in the end. My husband even asked for this to be put in our normal dinner rotation!

Ingredients:

  • 2 small oranges (I used one navel, one blood orange)
  • 2 medium fennel bulbs with stalks
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 1/4 teaspoon pepper
  • 6 small shallots, halved
  • 2 teaspoons sweet paprika
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chopped fresh oregano
  • 1/4 teaspoon ground red pepper
  • 1 pound large shrimp, peeled and deveined, tails on

Spinach and Artichoke Breakfast Casserole

Last weekend, we were invited to a potluck brunch for a friend’s birthday. I wanted to bring a savory breakfast dish that would work well for a crowd.

With the big game this weekend, my mind went to making a breakfast version of spinach artichoke dip. I live in Philadelphia, so I clearly had to make a green dish too!

This Spinach and Artichoke Breakfast Casserole is packed with spinach, artichokes, bell peppers, onions and cheese. The result is a flavorful dish that can feed up to 12.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 (10 oz) package frozen chopped spinach, thawed
  • 1/2 cup chopped green onions
  • 1 (14 oz) can artichokes hearts, drained and chopped
  • 1 green bell pepper, chopped
  • 12 large eggs
  • 1/4 cup milk
  • 1/4 cup grated parmesan cheese
  • 1  teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons chopped fresh chives, for garnish

Linguine and Clams

I’m sure this happens to everyone: you go out and buy ingredients for a specific recipe, but then are left with “extras” from that recipe. Normally, it’s not a big deal and you can just incorporate it easily into another recipe. But when I went to make Sheet Pan Paella recently, my supermarket was only selling 50 packs of clams. That’s a lot of clams!

To use them up, I decided to make Linguine and Clams, but used what I had on hand to make it work. So, technically, I made spaghetti and clams. And it tasted just as good. 🙂

I love the relative simplicity of this dish. It also reminds me of my grandpa; linguine and clams were his favorite. So I was surprised that I hadn’t posted a recipe for Linguine and Clams on my blog yet. Time to fix that!

I adapted this version of Linguine and Clams from Bon Appetit.

Ingredients:

  • 1 heaping tablespoon salt
  • 12 garlic cloves, divided
  • 4 oz day old bread, cut into smaller pieces (I used half of a sandwich roll)
  • 2 tablespoons plus 1/4 cup olive oil
  • the zest of one lemon
  • 2 teaspoons anchovy paste
  • 1/2 teaspoon crushed red pepper flakes
  • 1/3 cup dry white wine
  • 2 dozen clams, scrubbed
  • 1 (16 oz) box linguine (or spaghetti)
  • 1/2 cup chopped parsley (I randomly had curly parsley on hand. Flat works too)
  • 2 tablespoons unsalted butter

Warm Salmon Salad

I’m not going to lie, the idea of a salad in the winter is not exactly appealing to me. I prefer warm food when it’s cold out, so hooray for this Warm Salmon Salad!

So when I saw this recipe for a Supercharged Salmon Salad, I was pretty pumped.

The original recipe used raw kale and shaved Brussels sprouts to make a cold salad, but it can easily be adapted to be a warm, comforting dish.

Ingredients:

  • 1/2 cup water
  • 1/4 cup uncooked quinoa, rinsed and drained
  • 1/2 teaspoon kosher salt, divided
  • 2 (6-oz.) wild salmon fillet
  • Cooking spray
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups roughly chopped lacinato kale
  • 3 ounces shredded Brussels sprouts (about 1 cup)
  • 1/3 cup steamed and peeled beets (you can buy precooked beets)
  • 1 tablespoon tahini (sesame seed paste), well stirred
  • 1 tablespoon lemon juice
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon warm water

Pumpkin Polenta with Fall Vegetables

I’m a huge pumpkin fan, and I don’t mean “pumpkin spice” when I say that (although I do love pumpkin spice things as well!)

I haven’t made a savory pumpkin dish for a while, so I was excited to try this recipe for Pumpkin Polenta with Fall Vegetables I found on the Food Network. I adapted it slightly, but for the most part kept it the same.

This recipe adds pumpkin puree to creamy polenta and then tops it with roasted butternut squash and Brussels sprouts, making for a perfect fall meal!

Ingredients:

  • 1 pound Brussels sprouts, trimmed and quartered (about 4 cups)
  • 1 pound cubed peeled butternut squash (about 3 cups)
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • Kosher salt and freshly ground pepper
  • 2 cups milk
  • 1 cup cornmeal
  • 1 15-ounce can pure pumpkin puree
  • 3/4 cup grated parmesan cheese (about 2 ounces), plus more for topping
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons chopped fresh sage, plus some leaves for garnish
  • the juice of 1 lemon, to taste

Sheet Pan Steak Fajitas

One of the biggest bummers of cooking a lot (and, boy do I cook a lot) is that the dishes are never ending. I can basically fill up my entire dishwasher with some meals! But some weeknights, you just do NOT want to deal with all those dishes. Which is why it’s great to have a couple of one pot, or in this case, one sheet pan recipes.

Fajitas work really well as a sheet pan meal. You just add the onions and peppers to a pan, broil until they begin to brown, and then add your protein of choice.

For these Sheet Pan Steak Fajitas, I decided to use Moyer Beef’s London Broil to make steak fajitas.

Ingredients: (serves 4)

Seasoning: (or can use Mexican seasoning mix)

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder

Other ingredients:

  • 1 cup olive oil
  • the juice of 3 limes, divided
  • 1 (~3 lb) London Broil
  • 4 medium-sized bell peppers, multi colored if desired, thinly sliced
  • 1 medium-sized onion, thinly sliced
  • 8 (6 inch) flour tortillas (or corn tortillas for gluten free)
  • 1/2 cup pico de gallo
  • 3 tablespoons sour cream (omit for dairy free)
  • 1 tablespoon fresh cilantro, chopped

To make, combine the garlic powder, onion powder, cumin, salt, pepper, coriander, smoked paprika, and chili powder in a small bowl (Note, if you don’t have all of these spices on hand, you could use a Mexican seasoning mix as well. You’d need 3 1/2 tablespoons).

Add the olive oil and the juice of two limes to a large gallon zip top bag. Add the spices, seal, and move the mixture around in the bag to evenly combine.

Add the London broil to the bag, seal, and evenly coat in the mixture. Let sit at room temperature for 2 hours, turning the bag over at least once. (You could also add this to your fridge overnight to marinate. Just let come to room temperature before cooking).

Thinly slice your bell peppers and onion and add to a large bowl. Drizzle with olive oil and season with salt and pepper, toss to combine.

When ready to cook, preheat your broiler.  Add the pepper and onion mix to a sheet pan in a single layer. Broil for approximately 8 minutes or until some of the mixture begins to brown.

Move the mixture to each side of the pan.

Remove the London broil from the ziptop bag and add to the pan, discarding the marinade.

Broil for approximately 5-7 minutes per side, or until the meat is browned and cooked through (135 to 140 degrees F for medium rare). Be sure to watch your veggies in particular, they can burn really quickly when using a broiler. Remove from the oven and let stand for 5 minutes.

After 5 minutes, thinly slice the beef, or cut into bite sized pieces.

Add to the tortillas and top with pico de gallo, sour cream, and fresh cilantro. Squeeze the remaining lime over top of the fajitas and serve.

If you like heat, I’d suggest also topping with jalapeno, or adding a bit of hot sauce on top.

This is a really satisfying dinner that’s really simple to make!

The little bit of char on the veggies adds a bit more flavor to the seasoned beef and sweetness of the onions and peppers.

After a yummy meal, it’s even better knowing that you only have one sheet pan and two bowls to clean!

Freezable Ratatouille

This Freezable Ratatouille is another recipe my friend and I made last weekend during our cooking marathon. This time of year is perfect for making a huge batch of ratatouille and freezing it!

Ratatouille is a produce-heavy dish, using eggplants, zucchini, onions, and peppers. My friend doesn’t really love eggplant, so I used fairy tale eggplants which are smaller, with thinner skins and are a bit sweeter than regular eggplants.

This Freezable Ratatouille also allows you to do a lot of the prep work ahead of time. The vegetables are cooked separately, so prep work does go into a bunch of bags, but it makes the cooking process much easier. We used a recipe from The Kitchn as our base.

Ingredients (makes 8 to 10 servings):

  • 2 medium yellow onions, chopped
  • 3 medium green bell peppers, chopped
  • 6 to 8 medium zucchini, cut into bit sized pieces
  • 4 large tomatoes, chopped
  • 4 garlic cloves, minced
  • 2 fairy tale eggplants
  • 2 tablespoons olive oil
  • 1 bay leaf

Steak and Eggs Hash

Last weekend, I stumbled upon a farmer’s market while walking around my neighborhood and picked up a bunch of veggies: peppers, tomatoes, onions, and potatoes. I didn’t really have plans for the vegetables, but then I realized these ingredients would make a really tasty hash!

I had been planning on making a steak and eggs recipe using Moyer Beef’s Angus Top Sirloin, so after my bounty at the farmer’s market, that morphed into a steak and eggs hash!

Grilled T Bone Steak with Gremolata

One of my favorite parts of working with Moyer Beef this summer is that I am trying cuts of beef I’ve never had before, like a T-bone steak. T-bone steak is a bone-in steak and includes the strip loin and tenderloin; it’s named a T-bone, because, well, the bone looks like a T.

T-bones are considered pretty high-quality steaks, and as such, don’t need much effort to make them taste amazing. They are also huge (in my opinion), usually 16-24+ ounces. So I invited over some friends to help my husband and me enjoy our bounty (they didn’t seem to mind too much).

For these steaks, I decided to add a simple dry rub and top with gremolata to add some freshness. Because it was absolutely beautiful this weekend, there was no way I wasn’t grilling them outdoors! The result was this Grilled T Bone Steak with Gremolata.

  • 2 tablespoons smoked paprika

Grilled New York Strip Steak with Honey-Tarragon Blue Cheese Butter and Grilled Tarragon Potatoes

First up, I decided to make a grilled meal using Moyer Beef’s Angus New York Strip Steaks. New York Strip Steak is also known as Kansas City Strip Steak or Ambassador Steak in the US and Sirloin Steak or Porterhouse Steak in Europe.  This cut is particularly tender and flavorful. Angus New York Strip Steak, known for their marbling, are even more flavorful (marbling = flavor). This cut of steak comes from the short loin, along the back of the cow. (Fun fact = a T-bone steak is a New York Strip Steak with the bone and tenderloin still attached.)

So, in my opinion, the flavor of a New York Strip Steak should be allowed to mostly shine on its own. Adding a bit of fancy butter on top won’t hurt though, right?

Playing off the flavors of the Honey-Tarragon Blue Cheese Butter, I also made Grilled Tarragon Potatoes to go with the steak. The result is these crave worthy recipes for Grilled New York Strip Steak with Honey-Tarragon Blue Cheese Butter & Grilled Tarragon Potatoes!

 

Ingredients:

Steak: (serves 2, multiply as needed)

Honey-Tarragon Blue Cheese Butter: (serves up to 8)

  • 1 stick (1/2 cup) salted butter, softened to room temperature
  • 1/4 cup crumbled Blue Cheese (I used a Smokey Blue Cheese to highlight the grilling flavor)
  • 1 teaspoon honey
  • 1 teaspoon fresh tarragon, finely chopped
  • 1/8 tsp black pepper

Grilled Tarragon Potatoes: (serves 2, multiply as needed)

  • 12 oz baby potatoes, halved (I used tri-color potatoes)
  • 1/2 shallot, finely chopped
  • 2 teaspoons fresh tarragon, finely chopped

  • zest from 1 lemon

Grilled Red Snapper with Chunky Tomato Watermelon Salsa

I have the unnecessary “skill” of setting off my smoke alarm almost every time I use my oven or stovetop. I’m going to blame it on my house having an overly sensitive smoke alarm (which I guess is better than one that doesn’t work at all). So in the summer, I basically turn every recipe into a grilling recipe so I can cook outdoors.

This recipe is adapted from Cooking Light. Making it on the grill means I didn’t get as crispy skin on my red snapper (mainly because it stuck to the aluminum foil), but that’s ok. Feel free to check out the original recipe to make indoors.

Ingredients:

  • 1 1/2 cups halved heirloom cherry tomatoes
  • 1 1/2 cups diced seedless watermelon
  • 1/4 cup finely chopped red onion
  • 1 jalapeno, minced
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon finely chopped fresh mint
  • 2 tablespoons fresh lime juice
  • 3 tablespoons canola oil, divided
  • 3/4 teaspoon kosher salt, divided
  • 4 (6-oz.) skin-on red snapper fillets

Shaved Cucumber Greek Salad

Excuse the lack of posts, my husband and I went to Montreal and Quebec City last week, so no cooking for me! Both Montreal and Quebec City are pretty amazing food cities, and I definitely made to eat my way through both. (And yes, we somehow managed to have poutine four times!)

Needless to say, when we returned to Philly, we both were looking to eat a bit… lighter.

This recipe adapted from Cooking Light for Shaved Cucumber Greek Salad is a simple but different take on a traditional Greek salad. It looks fancier than it really is, the only special tool needed is a veggie peeler.

Ingredients:

  • 2 cucumbers
  • 1 large heirloom tomato, cut into wedges
  • 2/3 cup pitted Castelvetrano olives
  • 1/2 cup sliced green onions
  • 1/3 cup feta cheese, crumbled (I suggest using French feta)
  • 2 teaspoons fresh oregano leaves
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1/4 teaspoon pepper
  • 1/8 teaspoon kosher salt
