I had to change the original recipe (linked above) a bit because I realized I didn’t have any corn syrup and was just too darn lazy to go out and buy some. This recipe is also halved from the original. You will need to have a Popsicle mold to make these. If you don’t have one, this might also work just as a “water ice” type treat; try just freezing the mixture in a bowl (if anyone tries this, please let me know how it turns out).
Use a spoon to press down on the strainer to help push all the juices through.
This will remove all seeds and any parts of the strawberries that didn’t fully blend.
Discard the solids left behind.
Divide among 4 ice-pop molds.
Insert a Popsicle stick into each slit (this helps to keep the sticks centered).
I made these once before and they are excellent! Good idea on the mesh strainer. I will try that next time!
These look and I am sure taste fantastic. Funny you should mention Philly, I was there while you were in Ireland and believe it or not bought Popsicle molds at a discount shop in Gallery at Market East (I think it was called 5 below). I have not done anything with them yet but maybe this will motivate me..

This was delicious. I used 4 cups of strawberries because I figured why not. I ended up making 4 pops and full tray of ice cubes. A day later I made some strawberry Margaritas and used the ice cubes – yummy! I can’t wait to experiment with different berries.
