Grilled Caesar Salad

If you’ve never had Grilled Caesar Salad before, you’re in for a treat! This variation on the classic adds a bit of smokiness from the grill. I added in some grilled tomatoes as well, because who doesn’t love tomatoes?

The dressing for this recipe is Greek-yogurt based, so its slightly tangy and perfect with the charred bits of romaine lettuce. I found the dressing recipe on myrecipes.com.

Ingredients:

For the dressing:

  • 3 tablespoons plain 2% reduced-fat Greek yogurt
  • 2 tablespoons grated Parmesan cheese
  • 4 teaspoons fresh lemon juice
  • 1 tablespoon water
  • 2 teaspoons extra-virgin olive oil
  • 1 1/4 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 anchovy fillet, finely chopped (can omit to make vegetarian)
  • 1 small garlic clove, minced
  • 1/4 teaspoon ground pepper

For the salad:

  • 2 romaine hearts, halved lengthwise
  • salt and pepper, to taste
  • the juice of 1/2 lemon
  • cooking spray
  • ~20 cherry tomatoes
  • 4 slices of a French baguette
  • shaved Parmesan cheese, if desired

Lamb Burgers with Feta-Mint Spread and Sweet Potato Fries

I’ve been in a bit of a cooking rut recently; I’ve had a difficult time figuring out what new recipes I want to try. Luckily, Cooking Light always has some inspiration for me. This time, it came in the form of a lamb burger.


This lamb burger recipe is actually half lamb/half beef and is really simple to make. I also made sweet potato fries as a side, super delicious!

Ingredients:

Burgers:
1/2 cup finely chopped onion
1/4 cup chopped fresh flat-leaf parsley
1 teaspoon minced garlic
1 teaspoon grated lemon rind
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8 teaspoon ground cumin
8 ounces lean ground lamb
8 ounces 90% lean ground sirloin
Cooking spray
4 hamburger buns
1/4 cup plain fat-free Greek yogurt
2 tablespoons reduced-fat feta cheese, crumbled
1 tablespoon finely chopped fresh mint
1 teaspoon lemon juice
1 cup baby arugula

Fries:
1 large sweet potato, peeled
1 tablespoon extra-virgin olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/8 teaspoon ground red pepper

Chipotle Tofu Tacos with Avocado Cream

Creamy Mashed Potatoes

I come from an Irish family, so mashed potatoes are a very important part of every large family meal. If it was socially acceptable, I’d fill my plate just with mashed potatoes and gravy at holiday meals.

Mashed potatoes are quite a staple in my life, so I now find myself to be a bit of a mashed potato connoisseur. I like mine super creamy, but don’t necessarily want them loaded with butter to achieve that creaminess.

I personally like to add in Chobani® Non-fat Plain Greek Yogurt. Not only does it deliver the creaminess I am looking for, but it is high in protein (44% of your daily value to be exact) and is low in fat. The yogurt contains no artificial flavors or sweeteners and is only made with natural ingredients that are not genetically modified.

Chobani® Non-fat Plain Greek Yogurt is a simple and tasty substitute for any recipes that use sour cream, mayonnaise, or oil, making it a super versatile product. I almost always have a quart in my fridge for smoothies, baking, and creamy dressings.

Chocolate Earl Grey Cakes

We are coming up on Mother’s Day again! Every year, I make my mom a little treat that almost always include citrus and/or bergamot, and this year is going to be no different! (Previous years treats: Lemon Tart with Raspberry Shortbread Crust, Lemon Angel Food Cupcakes, and Lemon Earl Grey Squares; I even made her a Grapefruit Bergamot body scrub!)

 

 

I thought I’d try something a bit different (and chocolatey) this year, while still including Bergamot in the recipe (bergamot is what gives Earl Grey it’s signature flavor). This adapted recipe from Real Simple is for Mini Chocolate Earl Grey Bundt Cakes. Aren’t they cute?

Grilled Saffron Rack of Lamb

I love the flavor that grilling adds to a recipe but I struggle with grilling protein to the correct temperature. This means we sometimes end up with dry, chewy and overcooked food or, even worse, super rare/raw meat.

 

Luckily, Verizon Wireless’ Philadelphia Tri-State Region team gave me the opportunity to try out an iGrill thermometer that not only displays the temperature, but also uses Verizon’s LTE 4G network to send me an alert when my protein has reached the temperature I want!

 

 

I was so excited about this product that I decided to really test it out and used it on a pretty finicky meat: lamb. Lamb is a protein that should be cooked to medium rare and not much more. It gets really tough and chewy if overcooked. It’s pretty easy to overcook as well; lamb continues to cook after being removed from heat so it has to be removed before reaching the ideal internal temperature for medium rare. Plus, it’s a pretty expensive meat so you want it to be perfect!

 

I found this recipe for Grilled Saffron Rack of Lamb on Bon Appetit. The recipe includes temperature guides to help cook the lamb to a perfect medium-rare.

 

 

The iGrill Thermometer takes a lot of the guesswork out of the process. The thermometer comes with two probes so you can track the temperature of two meats at the same time. You just insert the probe into the thickest part of the meat (not touching a bone). The thermometer pairs with your phone through Bluetooth. Using the iGrill app on your smartphone, you can set a temperature or a timer to alert you when your meat is finished cooking. Pretty nifty, right?

 

 

Ingredients:

  • 2 racks of lamb, rib bones frenched
  • salt and pepper, to taste
  • 2 garlic cloves, crushed
  • 1 cup plain 0% Greek yogurt
  • 2 tablespoons olive oil
  • the zest of 1 lemon

Hazelnut-Mocha Banana Smoothie

I am trying to get into the habit of making (and wanting) smoothies for breakfast. They are so simple to make and work great for meals on the go. My boyfriend is a huge fan of green smoothies, where he adds various fruits to the blender along with some kale. I don’t mind them, but I thought I’d baby step my way into the smoothie world with something a little more my speed: an oatmeal banana smoothie with espresso and chocolate hazelnut. Mmmmm.

This recipe is adapted from Foxes Loves Lemons, a fellow food blogger as well as a recipe developer. Her recipes are mouthwatering and her pictures are just amazing! She also manages to post daily which just blows my mind. How she manages to deliver such amazing posts daily is beyond me!

My recipe below is a touch different than Foxes Loves Lemons because I wanted to incorporate Nocciolata, a dark chocolate and hazelnut spread, into my smoothie. To see the original version, check out her blog post here.

Whole Grain Mustard Potato Salad

I’ve never fully understood traditional potato salad. Mayo on potatoes just doesn’t appeal to me, especially on hot summer days where you always seem to find it as a side at barbecues and picnics, which is why this recipe for Whole Grain Mustard Potato Salad appeals to me!

I came across a whole grain mustard based potato salad from 1st & Fresh Catering a while back that had no mayo and was absolutely delicious. I’ve been meaning to try to make my own version ever since. So when our friends said they were having people over this weekend to barbecue, I knew exactly what I was going to make! (These poor friends of mine are always my taste testers for new recipes, from Cornbread to Brownies with Grilled Fruit. Hopefully they don’t mind!)

 

This recipe does include some Greek yogurt to keep the dish creamy but is fairly minimal. To kick the flavor up a notch, I included some of Healthy Solutions Spice Blends’ Salmon with Dill Spice Blend. The spice blend includes dill (of course), onion powder, and garlic powder along with some other spices that I thought would really complement the whole grain mustard. The result is a spicy potato salad that is sure to be a hit!

Spice Roasted Salmon

So sorry for the lack of posts! I just moved and finally dug out my pots and pans, spices, and pantry items and am ready to get cooking again! Because unpacking is still taking up most of my nights, expect a few quick recipe posts in the coming days. I thought I’d get started with my favorite meal: salmon! This recipe for Spice Roasted Salmon takes just fifteen minutes!

This recipe from Cooking Light is so simple but packs a ton of flavor. The salmon is sprinkled with garam masala, a spice mixture commonly used in Indian cooking. The ingredients can vary, but typically include ground pepper, cumin, cloves, and cardamom. There is a slight heat to garam masala, so the salmon is topped off with a cooling yogurt mixture.

Ingredients:

  • 1 1/2 tablespoons olive oil, divided
  • 4 (6-ounce) sustainable salmon fillets
  • 3/4 teaspoon garam masala
  • 5/8 teaspoon kosher salt, divided

Fresh Salmon Burgers

Everyone loves a good hamburger at a summer barbecue, but sometimes you just want something a little different. Salmon burgers are a really delicious option and are healthier too. Homemade salmon burgers are really easy to make and blow the frozen ones in the supermarket out of the water. This recipe from Coastal Living takes about 5 to 10 minutes to prep and then just another 5 minutes to cook. To snazz up the salmon burger a bit, I also made a Greek yogurt topping and added some lemon and garlic to the buns before toasting.

Ingredients:

Salmon Burgers:

  • 1 slice white bread
  • 1/4 cup milk
  • 1 1/2 pounds salmon fillet
  • 1 teaspoon salt
  • 2 tablespoons fresh dill finely chopped
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • sliced cucumbers, optional

Buns:

  • 4 hamburger buns

Grilled Chicken with Tomato-Avocado Salad

I am in a grilling mood so there is going to be an influx of barbecue recipes on here, I think very few people will complain. We finally have a grill, but haven’t set it up yet (oops) so I am still making this recipe on my grill pan. This is a recipe from Cooking Light in the latest issue. I made a few changes just based on what I could find but the recipe is primarily in tact.

Ingredients:

  • 1/4 cup nonfat buttermilk
  • 3 tablespoons 0% Greek yogurt
  • 2 tablespoons minced fresh flat-leaf parsley
  • 1 tablespoon minced shallots
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon cider vinegar
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon kosher salt
  • 1 large garlic clove, minced
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • Cooking spray
  • 1 teaspoon onion powder
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon kosher salt, divided
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon  chili powder

Quinoa Chicken Curry

I’m excited to share with you this recipe for Quinoa Chicken Curry, but before I do, I wanted to share a bit about quinoa.
Although quinoa seems to be a bit of a “new” super food, it has actually been around for thousands of years and was considered one of the most important crops of the Incas. This grain-like seed is really easy to cook (you cook it like rice) but is chock full of nutritional benefits. Quinoa’s high protein content makes it a great choice for vegans and vegetarians. It is also a complete protein which means it contains all the essential amino acids. Quinoa is also rich in vitamins and minerals, including magnesium, phosphorous, zinc, iron, potassium, calcium, vitamin B, folate, and riboflavin. Quinoa is also naturally gluten free, and can be ground into a flour that allows for gluten free baking. Whew.
I really didn’t know much about quinoa, or how to use it. So I was excited to be given the chance to review The Complete Idiot’s Guide Quinoa Cookbook to learn more about it.  The book is full of quinoa recipes, including breakfast, dinner, and even dessert recipes. I wanted to try one of the more traditional preparations of quinoa, but can’t wait to delve into the more interesting uses for it in future posts (Lemon Poppy Seed Quinoa Cupcakes, anyone?) The book had a recipe for Quinoa Indian Chicken Curry that sounded absolutely fantastic!
Ingredients:
  • 1 cup uncooked quinoa, rinsed and drained
  • 4 cups chicken broth, divided
  • 2 boneless skinless chicken breasts, cut into 1 inch pieces
  • 4 tablespoons olive oil, divided
  • 6 teaspoons curry powder, divided
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 1 medium head cauliflower, chopped into 1 inch pieces
  • 1/2 tsp ground cumin
  • 1 tsp celery seed
  • 1/2 tsp fennel seed
  • 1/2 tsp turmeric
  • 1/3 cup plain low-fat yogurt
  • 1/3 cup nonfat sour cream
  • 1/2 cup cashews
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp salt
  • 1/2 tsp pepper
Yields 5 cups, or about 4 servings.

Chilled Creamy Cucumber Soup

Cucumbers are everywhere right now, and as much as I love just eating them raw, I thought it might be a nice change to try to use them cooked. Cucumber soup, chilled, sounds oh so refreshing doesn’t it? I found this recipe for Chilled Creamy Cucumber Soup from Eating Well.  It uses an avocado and some plain yogurt, making a really creamy delicious soup. Plus, it only takes 35 minutes to make (it is additional time to chill).
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tablespoon lemon juice
  • 4 cups peeled, seeded and thinly sliced cucumbers, divided
  • 1 1/2 cups vegetable broth, or reduced-sodium chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Pinch of cayenne pepper
  • 1 avocado, diced
  • 1/4 cup chopped fresh parsley, plus more for garnish
  • 1/2 cup low-fat plain Greek yogurt

Begin by prepping all your ingredients. Mince the garlic, dice the onion, peel, seed, and slice the cucumber, and dice your avocado. (I added a squeeze of lemon juice over the avocado to keep it from browning).
Heat the olive oil in a large pot over medium high heat. Add your onion and garlic to the pot, stirring occasionally. Cook for 4 minutes.
Add the lemon juice and cook for another minute. Add the cucumber, broth, salt, pepper, and cayenne (optional) and bring to a simmer.
Reduce heat and simmer for 6 to 8 minutes, or until the cucumbers are soft.

Add thesoupto a blender (be careful), removing the center of the top of the blender. Add the avocado and parsley.

Place a paper towel over the open hole before blending.  Blend on low until smooth. (I just do all of this in the pot using an immersion blender, I find it less hazardous hehe).

If you want to eat the soup hot, pour into a serving bowl and stir in the yogurt. Top with cucumber slices and garnish with parsley. If chilling the soup, refrigerate for at least one hour, then stir in the yogurt and garnish before serving.

The soup is smooth, a little tangy from the Greek yogurt, and ends with a slight hint of spice. I like mixing in the parsley and chopped cucumbers into the soup to give it some texture.

I love what I call “after work recipes.” I can make this when I get home and can eat before 8 pm. For an even more refreshing soup, try substituting mint or dill for the parsley.

Spicy Moroccan Chicken Skewers

I know, I know. I really need to up my chicken recipes. Cooking Light must realize this too because they had a recipe for Spicy Moroccan Chicken Skewers that I couldn’t pass up. The original recipe suggested serving the skewers with Greek yogurt, so I made a quick raita to go with them. I also served it with a simple couscous. This recipe does involve marinating the chicken for 2 hours, so prepare accordingly. (I made this over a weekend, I think this might be tough to make on a weeknight.)
Ingredients:
  • 1 1/2 tablespoons minced fresh garlic
  • 1 1/2 tablespoons chile paste (such as sambal oelek)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 5/8 teaspoon kosher salt, divided
  • 4 skinless, boneless chicken thighs, cut into 30 pieces
  • 1/2 yellow bell pepper, cut into 12 pieces
  • 12 cherry tomatoes
  • Cooking spray
  • 1/4 cup plain 2% reduced-fat Greek yogurt
  • 1/2 a cucumber, chopped
  • 2 tablespoons chopped mint
  • the juice of 1 lime
  • Salt and pepper, to taste

Tandoori Chicken Thighs with Saffron Rice

Adding spices to your meal is a great way to add tons of flavor to a dish without adding calories. Because you need so little of the spice to enhance a dish, it’s a pretty cost-effective way to add flavor as well. (I try to buy my spices outside of supermarkets where they are really marked up. Spice Terminal in Reading Terminal was my favorite spot — I hope it’s coming back soon! update: The Head Nut is now open!) This dish in the latest Cooking Light for Tandoori Chicken Thighs incorporates traditional Indian spices which I absolutely love. I also made a quick saffron rice to go with the chicken.
Ingredients (this recipe makes 2 servings):
For the chicken:
  • 1 cup plain 2% reduced-fat Greek yogurt
  • 1/4 cup finely chopped onion
  • 1 1/2 tablespoons grated peeled fresh ginger
  • 1 tablespoon ground cumin
  • 1 teaspoon cayenne
  • 1/2 teaspoon ground turmeric
  • 5 garlic cloves, minced
  • 4 skinless, boneless chicken thighs
  • 1/2 teaspoon kosher salt
  • 1 tablespoon canola oil
For the rice:
  • 1 cup uncooked basmati or similar rice
  • 1 1/2 cup boiling water
  • 1/2 tsp saffron, crushed
  • 1 tablespoon ghee, or butter
  • 6 cardamom pods
  • 1 cinnamon stick
  • 4 whole cloves
  • 1/4 teaspoon tumeric
  • Salt, to taste
