Sambal Chicken with Peppers and Tomatoes

Did you know that I have over 1,000 recipes on my blog? That’s a lot of cooking inspiration! So it’s probably not a surprise that I like to look back on old recipes I’ve made and either use them as is or change them up a bit and make a new recipe! This recipe for Sambal Chicken with Peppers and Tomatoes is heavily inspired by my old post for Spicy Moroccan Chicken Skewers, which is originally a Cooking Light recipe.

The chicken has a light heat to it, which adds nice flavor to the overall dish. I grilled my chicken, but you can also sauté it on days where the weather isn’t cooperating for grilling!

Ingredients:

  • 1 1/2 tablespoons minced garlic
  • 1 1/2 tablespoons chile paste (such as sambal oelek)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 bell pepper, seeds and membranes removed, sliced
  • 1 pint cherry tomatoes
  • 1/4 cup plain Greek yogurt
  • 1 small cucumber, chopped
  • 2 tablespoons chopped mint
  • the juice of 1 lime
  • Salt and pepper, to taste
  • cooked rice, for serving

Pressure Cooker Persian Lamb and Herb Stew

Note: I was sent a copy of The Instant Pot Kosher Cookbook, 100 Recipes to Nourish Body and Soul in order to write this post. Opinions are mine alone.

It is most certainly Instant Pot season! Work (at least for me) is busy this time of year, and yet, I crave meals that take a while to cook! Using an Instant Pot saves me a ton of time, so I tend to use it a lot this time of year.

I was recently sent a copy of The Instant Pot Kosher Cookbook by Paula Shoyer, which is filled with so many delicious sounding Kosher-friendly dishes! With The Instant Pot Kosher Cookbook (paid link) (paid link), Shoyer has curated 100 irresistible recipes for every table that even a novice cook can prepare in minutes. It is filled with modern takes on classic Jewish recipes, with all recipes offering options to adapt for special diets and allergies.

As I was paging through, I kept going back to a recipe for Persian Lamb and Herb Stew. I love a good lamb recipe, so I was excited to try this out! I adapted the below recipe ever so slightly from the original in the cookbook.

Ingredients:

  • 2 tablespoons olive oil
  • 3 pounds lamb cubes
  • 1 large onion, chopped
  • 4 garlic cloves, finely chopped
  • 3 green onions, sliced, divided
  • 1/2 cup mint leaves, chopped
  • 1/2 cup parsley leaves, chopped
  • 1/2 cup cilantro leaves, chopped
  • 1/2 cup fresh dill, chopped
  • 1 1/2 cups boiled water
  • 1/4 teaspoon saffron threats
  • 1 yellow apple, cut into bite sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • the zest of one lime
  • cooked rice, if desired

Coconut and Turmeric Chicken Curry

I came across a recipe for Sri Lankan Coconut and Turmeric Chicken Curry a while back, but was unable to find all of the ingredients to actually make it. (Curry leaves are difficult to come by near me!)

Recently, I just gave up and decided to make it with some substitutions.

This recipe from Delicious.com, even with my adjustments, is so fantastic that I can only imagine how good the original is!

Ingredients:

  • 1 medium white onion, roughly chopped
  • ~1 1/2 inch piece ginger
  • 3 garlic cloves, crushed
  • 1 small jalapeno, seeds and membranes removed
  • 8 boneless skinless chicken thighs
  • 4 tablespoons coconut oil, divided
  • 1 tablespoon ground turmeric
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons smoked paprika
  • 3 cardamom pods, smashed
  • 1 piece of cinnamon
  • 2 whole cloves
  • 3 bay leaves
  • 1 (13.5 oz) can coconut milk, well shaken
  • 1 cup chicken stock
  • 2 tablespoons cashews, finely chopped, plus extra to serve
  • the zest and juice of 1 lime
  • Coconut flakes, and sliced scallions, to serve

Pressure Cooker Barbacoa Beef Tacos

I’m not going to lie, pressure cookers have always kind of intimidated me. I was under the impression that they were difficult to use, and easy to mess up.

Well, after trying out the Cosori Premium 6qt pressure cooker over the past couple of weeks, I’m here to tell you they are actually quite easy to use!

Pressure cookers are definitely having a moment right now, but they’ve actually been around since the 1600’s in some form or another. Pressure cookers use steam pressure to help cook food faster. When cooking tough meat, pressure cookers help tenderize the meat and cook it surprisingly quickly in the process.

I couldn’t wait to test the pressure cooker out! I immediately thought of barbacoa – super tender and shredded meat (typically lamb or beef) with seasonings, so it’s time to try making Pressure Cooker Barbacoa Beef Tacos!

We eat a lot of tacos in my house, so I knew this would be a perfect test of the pressure cooker’s ability. This recipe actually uses two of the features available -” sauté/brown” and “meat/stew” pressure cooking. Ingredients: (makes 12 servings)

  • 6 garlic cloves
  • 1 medium onion, peeled and quartered
  • 1 chipotle in adobo, plus 3 tablespoons chipotle in adobo sauce
  • 2 tablespoons ground cumin
  • 2 tablespoons ground oregano
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves

Pineapple Fried Rice with Chicken #ChineseNYeats

Next Monday begins the Year of the Monkey, according to the Chinese Lunar New Year calendar. Celebrations are held around the world, particularly in places with large Chinese populations, including Mainland China, Hong Kong, Taiwan, Singapore, Thailand, Cambodia, Indonesia, Malaysia, and the Philippines. Locally, Philadelphia’s Chinatown holds a bunch of different events to celebrate, including a parade and a midnight dance performance on the 8th.

My favorite place in the city, Reading Terminal Market, along with the Philadelphia Chinatown Development Corporation, is featuring demonstrations of the cuisine and cultures of Asia next weekend. To get in the spirit, I decided to make one of my favorite Thai dishes: Pineapple Fried Rice with Chicken.

 

This recipe comes together really quickly with the help of Minute Rice, Dole and Kikkoman.

For this recipe, I used White Minute Rice, Dole Pineapple Chunks, and Kikkoman Less Sodium Soy Sauce and Sriracha Sauce, which I picked up at my local Wegmans, which were found in the rice aisle, canned fruit aisle, and Asian foods aisle, respectively.

Carrot Ginger Soup

Like much of the east coast, Philadelphia got hit with a blizzard last weekend. Which meant I had a whole weekend to make a bunch of meals, like this Carrot Ginger Soup!

This Carrot Ginger Soup from Cooking Light is comforting and creamy without any cream! The hint of curry powder brings such a nice warmth to the dish.

It makes 12 servings, so it’s a great recipe to stock your freezer. I love it as a side to my sandwich or salad for lunch!

Ingredients:

  • 3 tablespoons unsalted butter (or margarine to make dairy-free)
  • 3 tablespoons olive oil
  • 1 cup chopped onion
  • 2 tablespoons finely chopped peeled fresh ginger
  • 2 garlic cloves, minced
  • 7 cups fat-free, lower-sodium chicken broth (or vegetable broth to make vegetarian)
  • 4 cups diced carrots (~1.5 lbs)
  • 1 cup dry white wine
  • the juice from 1/2 lime
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh cilantro, for garnish

Now that it’s January, Football Fever seems to be everywhere! If you are planning on hosting friends and family for the big game, I have a great way to feed a crowd without forcing you to be in the kitchen all day (and all game).

With the help of Farm Rich’s Boneless BBQ Chicken Bites, you can make simple but delicious food for a group! What really makes the corn salsa stand out is roasting the corn in the oven beforehand, which can be done while also cooking the Boneless BBQ Chicken Bites. You can have a little taco bar ready to go in just 30 minutes!

Ingredients (serves 4, multiply as needed):

For Roasted Corn Salsa:

  • 1/2 of (8 oz) package frozen corn kernels, thawed
  • 1/2 tablespoon olive oil
  • salt and pepper, to taste
  • 1/2 cup canned black beans, rinsed and drained
  • 1 jalapeno, ribs and seeds removed, minced
  • 1/2 red onion, diced (about 1/2 cup)
  • 1/4 pint cherry tomatoes, cut into eighths (about 1/2 cup)
  • the juice of one lime
  • 1 tablespoon cilantro

For the tacos:

  • Farm Rich BBQ Style Boneless Chicken Bites, cooked
  • White corn tortillas
  • 1/2 cup shredded monterey Jack cheese
  • 1/4 cup sour cream
  • 1/2 pint cherry tomatoes, quartered
  • 8 lime wedges (1 lime)

  • the remaining canned black beans, rinsed and drained
  • the remaining roasted corn
  • 1/2 red onion, diced

Rockfish Tacos

This weekend, my fiancé went fishing with a friend and his friend’s father. They had quite a successful trip, and came home with a ton of Rockfish! Rockfish, also known as striped bass, is a mild whitefish that can be prepared many different ways, so I was jazzed!

We had some that night on the grill (yum!), but there was plenty left over, and my fiance’s friend was nice enough to send us home with more fish. I had a hankering for fish tacos, so these Rockfish Tacos are the end result! Rockfish, or striped bass, is the perfect balance of flaky and meaty, so it works wonderfully in tacos.

Ingredients:

  • 1 cup cherry tomatoes, diced
  • 1 tablespoon minced jalapeno
  • 1 tablespoon minced shallot
  • 1 tablespoon cilantro chopped, plus more for garnish
  • the juice and zest of 1 lime
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 large fillet rockfish (striped bass), skin removed (~1.5 lb)
  • 1 tablespoon Mexican seasoning or taco seasoning
  • 8 corn tortillas, 6 inch
  • 1 avocado, sliced
  • 1/2 cup thinly sliced red cabbage
  • 1 lime cut into wedges, for serving

Fish Tacos and How to Use a Fillet Knife

This month, Zwilling sent me a fun challenge: use a fillet knife.  June’s knives of the month are boning and fillet knives, so Zwilling sent me their ZWILLING Pro 7″ Fillet Knife to try out. I have never used one before so I was so excited to learn how to use one; gotta love learning a new technique!

 

 

Fillet and boning knives are exactly what they sound like: knives used to cut meat off of the bone (to fillet something is to remove it from the bone). The knife is long, thin, and super flexible to allow it to get as close to the bone as possible.

 

You can fillet anything with a bone — chicken, beef, etc. but most people immediately think of fish, so I decided to revisit an old recipe on my blog to try out this lovely new knife!

 

This recipe for fish tacos with lime cilantro crema is a Cooking Light recipe and a favorite of mine. I switched it up a touch this time, just to try something a bit new.

 

Ingredients:

Crema:

  • 1/4 cup thinly sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons fat-free mayonnaise
  • 3 tablespoons reduced-fat sour cream
  • the zest of one lime
  • the juice of one lime
  • 1/4 teaspoon salt
  • 1 garlic clove, minced

Tacos:

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon  paprika
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1 1/2 pounds white fish (I used 3 branzino)
  • 1 teaspoon olive oil
  • 8 (6-inch) corn tortillas
  • 2 cups shredded cabbage (or romaine lettuce)
  • 1/2 cup chopped red onion

Thai Basil Chicken Stir Fry

I have been having a crazy couple of weeks, so despite cooking a bunch of weeknight-friendly meals, I haven’t had much of a chance to write any posts to share those recipes! This one is too tasty to not share right away though.

 

This Thai Basil Chicken Stir Fry from Cooking Light’s latest issue is super simple and really flavorful. I served it with Cashew and Green Onion Rice (because I didn’t have any bulgar on hand) and it was an awesome complement!

 

The whole recipe took about 20 minutes to make (including the rice) so it’s a nice option for busy weeknights. I made a couple of substitutes to the original recipe, so be sure to check out the original to see if it’s more your style.

 

Ingredients:

  • 1/4 cup hoisin sauce
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 2 tablespoons fish sauce
  • 2 tablespoons canola oil
  • 3 garlic cloves, minced
  • 1 poblano chile, thinly sliced
  • 1 lb skinless, boneless chicken breast halves, cut into bite sized pieces
  • 2 red bell peppers, sliced
  • 1 onion, vertically sliced into thin slices
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1 tablespoon fresh lime juice

Tortilla Crusted Fish with Strawberry Avocado Salsa #strawberrymonth

May is National Strawberry Month! I have many a strawberry-filled recipe on my blog (like this recipe for Strawberry Shortcake Cupcakes) but most are desserts. Strawberries are considerably more versatile than I give them credit for and can be used in all sorts of recipes from breakfast, to drinks, to dinner. Driscoll’s recently contacted me to highlight National Strawberry Month so I decided to make a more savory recipe this time around!

 

 

The sweet strawberries in this recipe help offset the spiciness of the jalapeno and work really well with the creaminess of the avocado to bring a super balanced salsa.

 

 

This recipe for Tortilla Crusted Fish with Strawberry Avocado Salsa is adapted from two separate recipes; a blue tortilla crusted fish recipe from Food Network, and a Strawberry Avocado Salsa recipe from Cooking Light.

 

Ingredients:
Fish:
  • the juice of 1 lime
  • 2 large eggs, lightly beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground pepper
  • 12 ounces corn tortilla chips
  • 4 mahi mahi fillets (about 6 ounces each), or any other white fish you prefer
  • 2 tablespoons olive oil

Salsa:

  • 1 cup finely chopped strawberries
  • 1/2 an avocado, finely chopped (1/4 cup)
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • zest of one lime
  • juice of 2 limes
  • 2 teaspoons finely chopped seeded jalapeño pepper

Swordfish with Macadamia Nut Crust and Papaya Salsa

I can’t say that I know much about Hawaiian food, past that I assume is it fish-heavy and influenced by tropical and Asian/Polynesian flavors (with their favorite canned meat, Spam, sprinkled in, of course). So when I was given the opportunity to review Tommy Bahama‘s FLAVORS of ALOHA: Cooking with Tommy Bahama (paid link), I was really curious to see what the cookbook had in store.

 

 

The cookbook is filled with quite the range of dishes, from appetizers to dessert. Written by Rick Rodgers, the cookbook transports you to Hawaii through 100+ island-inspired recipes including:

  • Tuna Poke with Guacamole and Flatbread
  • Flavorful Ono Oxtail Soup
  • Saimin with Asian Chicken Broth (arguably Hawaii’s state dish)
  • Steamed Sea Bass with Ginger Dipping Sauce
  • Huli Huli Pork Tenderloin and Pineapple with Old-School Teriyaki Marinade
  • Pineapple Crème Brulee
  • Hibiscus Lime Cooler

 

 

The cookbook also contains little facts about Hawaiian culture and history as well as tips for eating, drinking, and “living the life,” FLAVORS OF ALOHA invites aspiring cooks of all abilities to embrace the Tommy Bahama spirit by taking an “island time” approach to cooking for family and friends. Plus the photos are gorgeous!

 

 

I wanted to use this opportunity to work with a seafood I rarely make (although I am absolutely going to have to make the Kona Flan in the near future!) and adapted the cookbook’s recipe for Mahi Mahi with Macadamia Nut Crust and Papaya Salsa to use swordfish instead.

Ingredients:

Papaya Salsa:

  • 2 tablespoons fresh lime juice
  • 1 tablespoon light brown sugar
  • 1 tablespoon minced shallots
  • 1 tablespoon minced fresh cilantro
  • 1 tablespoon finely chopped crystallized ginger
  • 1 teaspoon Sriracha
  • 1 garlic clove, minced
  • 1 cup diced papaya

Swordfish:

  • 1/2 cup unsalted macadamia nuts
  • 1/2 cup panko breadcrumbs
  • 4 swordfish steaks, about 6 oz each
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large egg white
  • 1 tablespoon unsalted butter
  • 2 tablespoons vegetable oil

Seven Layer Dip Nachos

With the big tournament upon us, having yummy snacks to share with a crowd is a must! I love party appetizers that can be set on the coffee table in front of the TV and enjoyed as a group.

This recipe for Seven Layer Dip Nachos adds the ingredients of a seven-layer dip right on top of tortilla chips to make a convenient and super yummy loaded nachos recipe.

I went to my local Walmart to pick up the ingredients and was really excited to find a can of RO*TEL Mexican Lime & Cilantro Diced Tomatoes in the canned aisle.

I was planning on using Original or Mild RO*TEL Diced Tomatoes to make a quick and easy guacamole and pico de gallo (no dicing of tomatoes, woo hoo!), so having the flavors of lime and cilantro already combined in the diced tomatoes was an awesome find!

The Mexican Lime and Cilantro Diced Tomatoes mix vine-ripened tomatoes, with jalapeno peppers, garlic, cilantro, and lime juice, making it the perfect ingredient for this recipe!

These nachos are topped with seven layers of deliciousness: cheese, refried beans, guacamole, pico de gallo, lettuce, sour cream, and sliced olives. You may need to double the recipe though, they are super tasty!

 

Ingredients:

  • 1 (10 oz) bag corn tortilla chips
  • 6 oz shredded Mexican blend cheese (or a mixture of Monterey Jack and cheddar cheeses)
  • 1 (10 oz) can RO*TEL Mexican Lime and Cilantro Diced Tomatoes, drained, divided
  • 1/2 medium sized red onion, diced, divided (about 4 tablespoons)
  • 1 large ripe avocado, diced
  • the juice of 1 lime, divided
  • 1 tablespoon finely chopped jalapeno
  • 2 teaspoons cilantro, chopped, divided
  • 1 (16 oz) can refried beans
  • 1 cup thinly sliced lettuce (I used green leaf)
  • 1/4 cup sour cream
  • 1 (2.25 oz) can sliced olives

Lime-Teriyaki Salmon Rice Bowls

I posted a recipe for a Salmon Teriyaki Stir Fry a while back and was craving something similar but not the exact same recipe. I found this recipe for an Asian Salmon Bowl with Lime Drizzle on Epicurious and doctored it up to suit my tastes.

This rice bowl is super satisfying and comes together really quickly. Feel free to experiment with different mix ins and toppings!

Ingredients:

  • 1 cup cooked rice, white or brown
  • 2 teaspoons olive oil, divided
  • 1 package (8 ounces) sliced baby bella mushrooms
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 2 large garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup pure maple syrup
  • 1/3 cup fresh lime juice
  • 1/3 cup reduced-sodium soy sauce (or coconut aminos to make gluten free)
  • 2 teaspoons cornstarch
  • 4 salmon fillets (4 ounces each)
  • 1 teaspoon olive oil
  • 1 package (5 ounces) baby spinach
  • 1 red bell pepper, chopped
  • 2 teaspoons black sesame seeds
