Cowboy Caviar

Note: I was sent some products from Bob’s Red Mill, including Orca Beans. All opinions are my own.

There are some ingredients that catch your eye, and you just know you have to use them in a recipe. Orca beans are definitely one of those ingredients. Luckily, Bob’s Red Mill sent me a bag of their orca beans, which are grown in Moses Lake, Washington exclusively for the company.

Orca beans, also known as calypso beans, are black and white splattered, and keep their cool coloring even after cooking. This heirloom bean is high in fiber and iron, and work great in any recipe where you would normally use beans.

But. They are so darn pretty I wanted to let them stand out by using them in a very colorful dish.

Cowboy Caviar seemed like the perfect way to show the orca beans off. Typically made with black eyed peas, cowboy caviar is a bean salad / salsa that is great as a party app, on top of  grilled chicken, or just on it’s own!

Ingredients:

  • 1/2 cup dried orca beans
  • 4 cups water, plus more if needed
  • 1 cup black beans, rinsed and drained
  • 1 cup tomatoes, finely diced
  • 1 cup frozen corn kernels, defrosted
  • 1/2 cup red onion, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1 jalapeno pepper, finely diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup scallions, thinly sliced

Dressing:

  • 2 tablespoons olive oil
  • the juice of 1 lime
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 teaspoon garlic powder

Cranberry Pomegranate Sauce

 

My house is filled with pomegranates and pomegranate arils. Being a food blogger is tough 🙂

Thanksgiving is tomorrow, so I wanted to share a recipe for one of my favorite Thanksgiving dishes: cranberry sauce!

This recipe uses pomegranates two ways: in a pomegranate molasses and as whole arils, or seeds. Pomegranate molasses can be found in well-stocked grocery stores or Middle Eastern food stores. But I also show you how to make it below if you so wish.

Ingredients:

Cranberry Sauce:

  • 1 bag (16 oz.) cranberries, thawed if frozen
  • 2/3 cup packed dark brown sugar (or light brown sugar to make less sweet)
  • 4 tablespoons pomegranate molasses (recipe below)
  • 3 sprigs fresh thyme
  • 2 containers POM POMS Fresh Arils (about ~1.5 cups)
  • the juice and zest of 1/2 lemon

Pomegranate Molasses:

  • 2 cups pomegranate juice
  • 1/4 cup sugar
  • 2 tablespoons lemon juice

Orange Mulled Whiskey Cider

cThis has been quite a dreary and rainy fall so far. One of my favorite remedies for blah weather is a warm beverage. In the fall, you really can’t go wrong with a mulled apple cider, like this Orange Mulled Whiskey Cider!

 

Nielsen-Massey sent me a sample of their Pure Orange Extract to use in this citrusy spiced cider. Nielsen-Massey has offered high quality vanilla and other flavors since 1907. They are my go to for extracts, vanilla beans, and vanilla powder. Their Pure Orange Extract is a great pantry way to always have citrus flavor on hand. Just 1/2 teaspoons of the orange extract equals two tablespoons fresh orange juice.

They must have known Philadelphia has been basically sitting under a cloud and that I needed a warm pick me up! The addition of the pure orange extract to this cider brings some brightness to the mulled cider.

 

This cider uses some of my favorite spices to really bring the fall flavor. I picked up my spices at the Head Nut in Reading Terminal, but you can also find them at Penzey’s.

Recipe (serves 6):

  • 2 quarts apple cider
  • 1/2 cup 100% pure pomegranate juice
  • 1/3 cup 100% pure maple syrup
  • 1 Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean
  • 1 teaspoon Nielsen-Massey Pure Orange Extract
  • 3 large cinnamon sticks
  • 12 whole cloves
  • 5 whole allspice berries
  • 1/4 teaspoon cardamom seeds
  • 3/4 cup whiskey

Add the apple cider, pomegranate juice and maple syrup to a large saucepan; heat over medium-high heat.

Split vanilla bean in half lengthwise with the tip of a small knife.

Scrape both sides of the bean with the knife’s dull side and add the seeds and bean to the saucepan. (The seeds are the black flecks in the cider.)

Add the orange extract, cinnamon sticks, cloves, allspice berries and cardamom seeds to the saucepan; stir to combine. Bring to a boil.

Reduce heat to medium-low and simmer for about 30 minutes. Strain mulled cider through a fine mesh sieve.

Add whiskey; stir to combine. Serve with a fresh apple or orange slice.

 

This cider tastes just like fall! What a comforting beverage as the weather turns colder.

The spices in the cider add a nice warmth to the drink, complementing the apple and whiskey flavors nicely.

The orange flavor from Nielsen-Massey’s Pure Orange Extract comes through as well, adding a burst of bright citrus and making for a super tasty drink!

Orange Mulled Whiskey Cider

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 6 servings

Ingredients

  • 2 quarts apple cider
  • 1/2 cup 100% pure pomegranate juice

Pumpkin Curry Chicken with Potatoes and Peas

As someone who works full-time, my biggest requirement for a dinner option is that it can be made in under 40 minutes. By the time I get home, I’m ready to eat! Carrot Ginger Soup

Like much of the east coast, Philadelphia got hit with a blizzard last weekend. Which meant I had a whole weekend to make a bunch of meals, like this Carrot Ginger Soup!

This Carrot Ginger Soup from Cooking Light is comforting and creamy without any cream! The hint of curry powder brings such a nice warmth to the dish.

It makes 12 servings, so it’s a great recipe to stock your freezer. I love it as a side to my sandwich or salad for lunch!

Ingredients:

  • 3 tablespoons unsalted butter (or margarine to make dairy-free)
  • 3 tablespoons olive oil
  • 1 cup chopped onion
  • 2 tablespoons finely chopped peeled fresh ginger
  • 2 garlic cloves, minced
  • 7 cups fat-free, lower-sodium chicken broth (or vegetable broth to make vegetarian)
  • 4 cups diced carrots (~1.5 lbs)
  • 1 cup dry white wine
  • the juice from 1/2 lime
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon freshly ground black pepper

Homemade Marinara Sauce

I had a sad surprise this weekend. I opened my freezer to grab a quart of tomato sauce only to find I was all out!

Time to make another batch of sauce, so I decided to make Homemade Marinara Sauce!

This time around, I have a nifty new tool to help make my marinara sauce: OXO’s new Illuminating Digital Immersion Blender.

The immersion blender has six digital controls so you can pick the perfect speed for whatever it is you need blended. Just turn the dial at the top of the immersion blender to adjust the speed; a backlit LED indicator clearly shows your speed selection.

To start blending, you just press down on the wide, soft-touch power button located on the top half of the blender. The handle is nonslip, even when hands are wet.

The head is made of nylon, which won’t scratch your bowls or cookware while it blends.

A really nifty spec is the soft-glow LED headlight that illuminates the pot while you blend, which is super helpful when making a large batch of soup or sauce in a tall pot. A softer version of the light remains on the entire time the blender is plugged in for safety.

The immersion blender comes with a measuring beaker with a silicone lid that holds up to 3 cups. You can blend right in the beaker, then top with the lid to store whatever you don’t use immediately.

When finished using the blender, the cord wraps securely around the blender body for tidy, compact storage, great for my small kitchen!

The blender is a super helpful tool when making soups, dips, smoothies, and sauces. I used it to make a smooth marinara sauce made with canned whole plum tomatoes and sauteed carrots, celery and onions.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 tablespoon tomato paste
  • 1/3 cup red wine
  • 2 (28 oz) cans whole plum tomatoes
  • 1 (28 oz) can crushed tomatoes
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 bay leaf
  • fresh basil, sliced

Vanilla Almond Cupcakes with Plum Frosting

Everyone loves a nice, fluffy cupcake. I love when a cupcake is light and airy, with smooth and creamy frosting on top! One of the easiest ways to keep a cupcake moist and fluffy is to use yogurt in the batter. But that doesn’t mean your cupcakes can’t be dairy-free or vegan-friendly!

I really enjoy making vegan cupcakes; they are surprisingly simple to make and taste just as delicious as normal cupcakes (or, dare I say it, even better!) I became interested in vegan baking when I made cupcakes for my sister-in-law a couple of years ago. Since then, I’ve noticed how easy it is to make delicious baked goods that are dairy and egg free!

Silk dairy-free products are perfect for cupcakes, because they add additional flavor to the batter through their Vanilla and other flavored yogurts and milks.

To make these Vanilla Almond Cupcakes with Plum Frosting, I went to Walmart to pick up a Silk Half Gallon Vanilla Almond Milk and a couple of Silk Vanilla Yogurts. You can find them in the dairy aisle, with the normal milk and yogurts.

Silk Almond Milk has 50% more calcium that dairy milk, with no cholesterol and no saturated fat. Silk offers seven almond milk options, all 100 calories or less. I love Vanilla Almond Milk in my cereal, its so tasty!  Silk yogurt, made from soy, has 6 grams of soy protein per serving with no cholesterol and no artificial flavors or colors. The yogurt is dairy-free, gluten-free, and vegetarian.

Plums are in season at the moment and I absolutely love their flavor, so I decided to make a plum frosting. The delicious flavor of plums is enhanced with almonds and vanilla, so Silk products are perfect with plum!

 

Cupcakes:

  • 1 stick margarine (8 tablespoons), at room temperature
  • 1 1/3 cup sugar
  • 2 (5.3 oz) containers Silk Vanilla Yogurt (~1 cup)
  • 1 1/2 teaspoons almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup Silk Vanilla Almond Milk

 

Frosting:

  • 3 plums, diced
  • 1 tablespoon honey
  • 1 stick margarine  (8 tablespoons), at room temperature
  • 2 cups powdered sugar
  • a pinch of salt
  • a couple drops blue food coloring, if desired
  • cinnamon, for garnish

Heirloom Gazpacho

I was sent some beautiful Local Organic Heirloom Tomatoes from Door-to-Door Organics for my Farm-to-Table post. I love the colors of heirloom tomatoes, especially the lighter ones, so I wanted to use them in a way that highlighted their coloring. What better way to make heirloom tomatoes the star but in a Gazpacho recipe?

 

Now, the one typical setback of making gazpacho is going through the whole process of peeling and seeding tomatoes. So, for this recipe, I just eliminated it. I have a pretty awesome blender (a Blendtec) which blended the tomatoes well enough to basically eliminate the skins and seeds, so yours may come out a bit more chunky. But removing the skin of a tomato is just such a pain!

 

I served my silky smooth gazpacho topped with finely chopped cherry tomatoes and a Wild Flour Bakery Hearth Baked Mini Baguette that was also in my box from Door-to-Door Organics. The recipe also includes a green bell pepper and a jalapeno which were also a part of my box.

 

Ingredients:

  • 3 cups heirloom tomatoes, chopped (I used some yellow and red)
  • 1 green bell pepper, chopped
  • 1 peeled cucumber, chopped
  • 1/2 cup onion, chopped
  • 1 jalapeno, seeded and chopped

Salsa Recipe & Beginners Guide to Canning #CanItForward

My future sister-in-law is big into canning, and I’ve “helped” (a.k.a kept her company in the kitchen) once before, but the process of canning is really intimidating to me. I was told that if I can boil water, I can can, so I was both wary and excited to try this out!

I need to give a little shout out to my city, because the Mason jar was, in fact, invented and patented in Philadelphia in 1858 by local tinsmith John Landis Mason. So, this should be in my blood, right?

 

 

  • The Ball Canning Discovery Kit  is a great beginners kit; it comes with a canning rack that fits into most pasta pots, a recipe guide, and three jars. The kit is really affordable ($11.99) and allows you to assess if canning is for you before investing fully into the process.
  • My sister-in-law assured me that if I had a Ball Blue Book Guide to Preserving, I’d be just fine canning. So. WHEW. This book lays out each step of the process (and even tells you why you are doing it this way) to ensure a successful canning process. The step-by-step guides are particularly helpful as a beginner.
  • The Red Design Series Lids are normal lids and bands, just prettier.  🙂 The lids can only be used once during canning, so it’s helpful to have extras on hand. (You can reuse the jars and bands as many times as you want)
  • The Ball Fiesta Salsa Mix makes the process of seasoning salsa super easy. You just need fresh or canned tomatoes, a splash of vinegar, and the mix to make a yummy salsa!

 

I decided to make a salsa from the Ball Blue Book, but adapted it slightly to include the Ball Fiesta Salsa Mix. The recipe is simple, and is basically just cutting up the ingredients, so this post is more about the canning process than the actual recipe.

I am absolutely a beginner with this, but luckily was able to glean some tips from my sister-in-law and the Ball Blue Book, which I will share as well.

Zesty Salsa (adapted from Ball Blue Book Guide to Preserving)

Yields ~3 pint jars

Ingredients:

  • 5 cups chopped cored peeled tomatoes (fresh or canned)
  • 4 green bell peppers, seeded and chopped (~2.5 cups)
  • 1 large onion, chopped (~2.5 cups)
  • 1 large jalapeno, seeded and finely chopped (~3 tablespoons)
  • 2 garlic cloves minced
  • 2/3 cup cider vinegar
  • 1 tablespoon fresh cilantro, finely chopped
  • 1/4 cup Ball Fiesta Salsa Mix

Gear:

  • Ball canning rack with lifter
  • 3 Ball Pint Jars with lids and bands (I used the Red design series lids and bands)
  • Large stockpot (at least 7.5 inches tall and 9.5 inches in diameter)
  • a non-metallic spatula (I ended up using chopsticks. They worked just fine)
  • A clean, damp towel to wipe rims of jars

Honey Mustard Roasted Rainbow Carrots

Hooray for spring weather! As the days get warmer, the produce offerings also get better. It’s the perfect time of year to experiment with more veggies!

Vegan Chocolate Peanut Butter Nests

Every Easter, my fiance’s mom makes peanut butter nests for her sons to take home. They are made with chow mein noodles, mixed in a melted peanut butter sauce, shaped into little nests and topped with egg-shaped chocolate candies. And I absolutely love them! I look forward to eating more than my share of them each year, but this year I just couldn’t wait.

 

I had a craving for something chocolatey and peanut buttery so, I decided to make mine with semi-sweet chocolate as well as peanut butter. We were visiting my fiance’s brother and his wife last weekend, so I used them as an excuse to make the recipe!

 

They try to eat vegan as much as possible, so when I began assembling the ingredients for this recipe and realized how simple this recipe would be to make vegan, I did so! You can easily make these Vegan Chocolate Peanut Butter Nests non-vegan if you so choose.

 

Ingredients:
1 (12 oz) package chow mein noodles
1 cup roasted unsalted peanuts
12 oz vegan semi-sweet chocolate morsels
1 cup creamy peanut butter
~12 oz Jordan almonds or dark chocolate covered almond “eggs” (or any other candy that is egg-shaped if not making vegan) — you’ll need roughly 85 egg shaped pieces

Sourdough Bread

I have made a couple of breads in the past, but never one that yielded a typical bread you’d use for sandwiches. For whatever reason, I’ve always been very intimidated by the whole bread making process. I recently visited a friend that loves to bake bread and she assured me it wasn’t nearly as difficult as I was imagining. So, after putting it off for a couple of months, I finally decided to try!

 

I decided to make a sourdough bread, because it is a relatively simple recipe. The hardest part is the whole waiting aspect of it. I found this recipe on King Arthur Flour’s website and used their sourdough starter to make the bread (rather than making my own starter which can take a week). My interest in baking bread was well timed, ZWILLING‘s Knife of the Month for March is the ZWILLING Pro 8″ Bread Knife, and they were kind enough to offer to not only let me try one of the knives out, but are also offering one to give away!  Details after the recipe.

Winter Risotto with Farro and Arborio Rice

A couple of weeks ago, I was invited on a Chevy Farm-to-Table Road Trip, which was SO much fun! Chauffeured in snazzy Chevrolets, the group first went to Terrain in Glen Mills for lunch at their cafe and then went wine tasting down the road at Chaddsford Winery. All of the food was fantastic at Terrain, but I cannot stop thinking about their fabulous Farro and Arborio Risotto with sweet potato puree and autumn vegetables. So, naturally, I decided to try to make my own version! This recipe is pretty involved but it sure is worth it!

This recipe can be easily made vegan (noted below) and is vegetarian if vegetable stock is used instead of chicken stock. This recipe, however, is not gluten free because farro does contain some gluten. 

 

Ingredients:

Veggies:

  • 2 cups peeled and cubed butternut squash
  • 1 cup halved Brussels sprouts
  • 3 Sweet potatoes, divided
  • 2 Shallots, halved
  • 2 tablespoons olive oil
  • 1/2 tsp fresh thyme leaves
  • 1/4 teaspoon fresh chopped rosemary
  • Salt and pepper, to taste
  • 2 tablespoons unsalted butter (or margarine to make vegan)

Risotto

  • 3 cups water
  • 1 cup uncooked farro
  • 6 cups chicken stock (or vegetable stock to keep vegetarian)
  • 2 tablespoons olive oil
  • 1 large shallot, minced
  • 2 garlic cloves, minced
  • 2/3 cup Arborio rice
  • ½ cup white wine
  • 2 tablespoons Parmesan cheese (omit for vegan version)
  • Salt and pepper, to taste
  • Rosemary and thyme for garnish

Cherry Port Cranberry Sauce

I absolutely love cranberry sauce. This not-too-tart and not-too-sweet Thanksgiving staple is always a favorite of mine.

Now I don’t turn my nose up at the canned stuff, but this homemade version for Cherry Port Cranberry Sauce is a really simple alternative. It’s also a bit of a chunky sauce instead of the smooth canned version, so it has a really nice texture to it. Plus, it can be made in 20 minutes!

If you don’t want to use port in the recipe, you can substitute in pomegranate juice.

 

Ingredients:

  • 2 cups fresh cranberries (about 8 ounces)
  • 3/4 cup dried sweetened cherries
  • 3/4 cup port wine
  • 1/3 cup brown sugar
  • 1 tablespoon red wine vinegar
  • 1 tablespoon orange juice
  • 1/4 teaspoon freshly ground black pepper

Black Bean Brownies

So, I’ve avoided making this recipe for months. Seriously, MONTHS. Black bean brownies always sounded really um… not tasty… to me.

This recipe is from a cookbook I received ages ago called Vegan Beans from Around the World: Adventurous Recipes for the Most Delicious, Nutritious and Flavorful Bean Dishes Ever. There are some seriously awesome recipes in here, from African Peanut Soup to Curried Dal with Cauliflower. But I was really curious about the Black Bean Brownies and wanted to make them. So after months of putting it off I finally tried it. And this recipe really changed my mind about black bean brownies! The consistency is spot on, and the chocolate flavor comes through really well. Who knew?

I adapted this recipe slightly from the original: I doubled the recipe to make a thicker brownie and used a different baking dish so the cooking time is different as well. I also limited the cinnamon because when I originally made these, I felt like the cinnamon flavor was too strong.

 

Ingredients:

  • 2 (15.5 ounce) cans of black beans, rinsed and drained
  • 1/4 cup plus 2 tablespoons vegetable oil
  • 1/4 cup plus 1 tablespoon freshly ground flax seeds
  • 1/4 cup plus 2 tablespoons warm water
  • 1/2 cup brown sugar
  • 1/2 cup plus 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1/4 tsp salt
  • 2 teaspoons vanilla extract
  • 2 teaspoons lukewarm coffee (I just used what was left from my morning coffee)
  • 1 teaspoon cinnamon
  • 1/4 cup – 1/2 cup walnuts
