Cheese Plate

NOTE: I was sent a pack of Sourdough Crackers and Szechuan Candied Pecans from Aida for this post. All opinions are my own.

I love a good cheese plate, they are great as an appetizer or as an end to a meal.

I was contacted by Aida, a specialty food brand created by the owners of the East Village wine-on-tap bar, Lois. Aida, recently launched, features handcrafted cookies, nuts, and crackers inspired by the products they created for their wine bar. I was sent their Sourdough Crackers and Szechuan Candied Pecans, which I thought would make for the beginnings of an awesome cheese plate!

Aida is a New York City-based, women-owned business that makes a curated line of pantry staples and entertaining essentials. Founded in 2016 by Nora O’Malley and Phoebe Connell, Aida products are inspired by the recipes and customer relationships that they developed in their tiny East Village all-tap wine bar, Lois on Loisaida Avenue. Today, Aida’s mission is to make eating well and entertaining easily simple by offering inspired and reliable go-to products.

In my opinion, you can’t really do a cheese plate wrong, whatever sounds good to you will work just fine. I wanted to play off of the spicy-sweet flavors of the pecans, so I went to my local cheese shop and asked for help choosing cheese that would work well with spicy and sweet flavors. Here is what I ended up with:

1605 Manchego: A sheep milk cheese from Spain, this Manchego is earthy and sweet. I added a drizzle of honey on top to bring out more of its sweetnes.

Von Trapp Oma: Made by the famous Von Trapp family, this cow’s milk cheese from Vermont is very creamy, buttery, and slightly funky. I added a bit of spicy whole grain mustard to balance out the funkiness of this cheese.

Delice de Bourgogne:  A cow’s milk cheese from France, this cheese is creamy and slightly salty with a buttercream flavor. I served this with a spiced peach jam that my sister-in-law gave us.

I also added dried apricots, hot sopressata, and the Szechuan candied pecans to the plate, and served the sourdough crackers alongside the cheese plate.

 

Each of these cheeses worked well with either something sweet or something spicy on the plate.

The sourdough crackers were the perfect accompaniment, because the flavor is relatively neutral so it lets the rest of the ingredients shine.

I had to keep adding more and more Szechuan Candied Pecans to the plate because my husband kept eating them all! The spicy-sweet flavors are addicting!

 

Aida has a bunch of other offerings as well, including:

  • Currant Crisps: a spiced interpretation of the shortbread cookie.

  • Lemon Candied Pepitas: salty pepitas with a healthy dose of sweet citrus and a subtle peppery kick.

  • Rye Crackers: Old World flavors, both complex and comforting.

Chicken Mango and Pineapple Salad

A while back, I was given the chance to taste test some of the Cheesecake Factory‘s new menu items, which they do twice a year (who knew?) I was able to sample some cocktails and bites from across the menu. I, naturally, also wanted to try to make one of the recipes at home.

Cocktails included:

  • Cucumber Mojito – Gin and St. Germain with cucumber, basil and mint
  • Blood Orange Martini – Vodka, blood orange liqueur and blood orange juice
  • Irish Coffee Manhattan – Jameson Irish coffee served ice cold and straight up
  • Espresso Martini – Vodka with cold brew coffee

Other new menu options included:

  • Korean Fried Cauliflower – crispy cauliflower tossed in a sweet and spice sauce, topped with toasted sesame seeds and green onions
  • Chicken Taquitos – Crispy corn tortillas with grilled chicken, green chile, corn, onion, cilantro and cheese. served with avocado cream and salda verde
  • Skinnylicious Chicken Pot Pie – Sauteed chicken breast, potatoes, mushrooms, onions, peas and carrots in a light cream sauce, topped with puff pastry
  • Chicken Mango and Avocado Salad – Mixed greens, fresh pineapple, tomato, cucumber, red peppers, crispy wontons and almonds
  • Pasta Napoletana – Italian sausage, pepperoni, housemade meatballs, mushrooms, peppers, bacon, onions and garlic in a tomato sauce served over parmesan cream pasta
  • Seared Ahi Tuna – Served over white rice with sriracha aioli, stir-fried vegetables and wasabi butter sauce
  • Truffle-Honey Chicken – Fried chicken breast with truffle-honey, asparagus, and mashed potatoes
  • Chicken Riesling – Chicken breast, mushrooms, bacon, onions and garlic in a white wine Riesling cream sauce with buttered parmesan pasta
  • Carne Asada Steak Medallions – Certified Angus beef with sauteed peppers, onions and cilantro, served with a creamy ranchero sauce, fresh corn and white rice
  • Chicken Parmesan “Pizza Style” – Chicken breast coated with breadcrumbs, covered with marinara sauce and melted cheese. Topped with angel hair pasta in an alfredo cream sauce
  • Crispy Pineapple Chicken and Shrimp – Crispy chicken and shrimp with snow peas, mushrooms, onions, garlic, peppers and cilantro in a sweet and spice sauce, served with white rice

The Cheesecake Factory has over 250 items on their menu, so there is sure to be something for everyone’s taste buds.

I tried my hand at recreating the salad we were served, with some adjustments to try to make it a bit more “home cook” friendly to make this Chicken Mango and Pineapple Salad.

Ingredients (serves 2):

  • 1 boneless, skinless chicken breast
  • 1 tablespoon teriyaki sauce (store bought, or recipe below)
  • 5 oz baby lettuce mix
  • 1/4 cup fresh pineapple chunks
  • 1/4 cup fresh mango, cut into chunks
  • 2 tablespoons julienned carrots
  • 2 tablespoons tortilla strips, plus more for garnish
  • 2 tablespoons grape tomatoes, halved
  • 1/2 red bell pepper, cut into thin strips
  • 1/4 cucumber, cut in half lengthwise and sliced thin
  • 1 tablespoon almond slivers, toasted
  • 1/2 tsp black sesame seeds
  • 1 teaspoon fresh mint, thinly sliced

Dressing

  •  1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon minced ginger
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon Dijon mustard
  • pinch of salt and pepper
  • juice of 1/2 an orange

Teriyaki Sauce (makes 1/2 cup – you’ll need ~1/4 cup for this recipe):

  • 1/4 cup low sodium soy sauce
  • 1/2 cup water
  • 1/4 tsp ground ginger
  • 1/8 tsp garlic powder
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon cornstarch

Blueberry Almond Flour Muffins

NOTE: I was sent some products from Bob’s Red Mill to make this post. All opinions are my own.

I have a busy week ahead of me, so I wanted to do some food prep this weekend.

Weekday breakfasts for me are typically on-the-go, if I have breakfast at all.

So when I have the chance to make breakfast ahead for the week, I try to make it a healthier option.

Bob’s Red Mill sent me a few of their products recently, including Almond Flour. I love the  subtle flavor almond flour adds to baked goods.

Blueberries are a tasty complement to almonds so I decided to make Gluten-Free Blueberry Almond Flour Muffins for the week. They are topped with Bob’s Red Mill’s Gluten-Free Rolled Oats to add some texture.

Grilled Camembert Cheese Plate

I’m kind of obsessed with my new Coyote Outdoor Grill. I’ve basically made a game out of finding things I can grill that are a bit outside of the box. (To see some of my other recipes I’ve made using my beloved grill, check them out here.) So, today, I bring you a grilled cheese plate, specifically a Grilled Camembert Cheese Plate.

Cheese with a thick outer rind, like a Camembert or Brie, are perfect for grilling. The inside becomes this beautiful gooey dip that I just cannot get enough of.

Just sticking a round of cheese on a grill honestly wouldn’t make for much of a recipe, so I decided to grill the whole cheese plate! I paired my lovely cheese with Grilled Rosemary Cashews and Brandied Rosemary Cherries. To finish off the plate, I included honey for drizzling as well as Maille’s Rosemary Honey Mustard that comes in the most beautiful green sandstone jar.

I was sent a jar of the Honey Mustard and I knew it would be the perfect addition to this cheese plate!

Ingredients:

For Grilled Rosemary Cashews:

  • 1/2 cup roasted cashews
  • 1 teaspoon finely chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1 teaspoon butter

For Brandied Rosemary Cherries:

  • 1/2 cup dried cherries
  • 4 tablespoons Brandy
  • 1 tablespoon finely chopped fresh rosemary
  • 1 teaspoon sugar
  • the zest from 1 orange

For Grilled Camembert:

  • 1 Camembert round, at room temperature
  • Olive oil, for brushing

Other Cheese Plate Ingredients:

  • local honey
  • Maille Rosemary Honey Mustard
  • French bread, cut into 1 inch slices and grilled

Blackberry Syrup & Watermelon Blackberry Granita

Today (July 22nd), Ball brand is hosting it’s sixth annual Can-It-Forward Day. (You may recall my last post on Can-It-Forward Day, where I canned on my own for the very first time to make salsa.) I wanted to show off how great both types of recipes found in the book are, so I made a blackberry syrup to can, and used it in a watermelon blackberry granita.

 

The blue wide mouth pint jars are SO PRETTY. I have been using a set of the regular mouth blue pint jars as my drinking glasses for years so I was excited to use the wide mouth for their actual intended use!

Ingredients:

For Blackberry Syrup:

  • 3 lbs blackberries
  • 2 cups water
  • 2 3/4 cups sugar
  • 1/4 cup honey
  • 2 tbsp bottled lemon juice

For Watermelon-Blackberry Granita:

  • 8 cups seeded watermelon cubes
  • 1/2 cup Blackberry Syrup
  • 2 tbsp fresh lime juice

Gear:

  • stainless steel or enameled Dutch oven
  • wire-mesh strainer
  • 3 pint jars, lids, and bands
  • large pot for canning + a rack to keep the jars off the bottom of the pot
  • cheesecloth
  • 13×9 inch baking dish

Glazed Salmon and Rice Bowl

I don’t think I’ll ever have enough 30 minute weekday recipes, especially healthy ones! Here’s another one from Cooking Light, that includes salmon, brown rice, snow peas, and quick pickled radishes for a bunch of flavor, crunch, color, and a little tanginess.

 

This is actually two recipes together: the salmon rice bowl and orange-sesame snow peas.

 

Ingredients:

Salmon and Rice Bowl

  • 3 tablespoons lower-sodium soy sauce (or coconut aminos to make gluten free)
  • 3 tablespoons rice vinegar, divided
  • 2 tablespoons honey
  • 4 (6-ounce) skin-on salmon fillets
  • 1 cup very thinly sliced radishes
  • 2 teaspoons sugar
  • 1 tablespoon olive oil
  • 1 (8.5-ounce) pouch precooked brown basmati rice
  • 1/2 cup (1-inch) pieces green onions
  • 1 tablespoon toasted sesame seeds

Orange-Sesame Snow Peas

  • 2 teaspoons dark sesame oil
  • 12 ounces trimmed snow peas
  • 1 teaspoon lower-sodium soy sauce (or coconut aminos to make gluten free)
  • 1/2 teaspoon grated orange rind

Vanilla Almond Cupcakes with Plum Frosting

Everyone loves a nice, fluffy cupcake. I love when a cupcake is light and airy, with smooth and creamy frosting on top! One of the easiest ways to keep a cupcake moist and fluffy is to use yogurt in the batter. But that doesn’t mean your cupcakes can’t be dairy-free or vegan-friendly!

I really enjoy making vegan cupcakes; they are surprisingly simple to make and taste just as delicious as normal cupcakes (or, dare I say it, even better!) I became interested in vegan baking when I made cupcakes for my sister-in-law a couple of years ago. Since then, I’ve noticed how easy it is to make delicious baked goods that are dairy and egg free!

Silk dairy-free products are perfect for cupcakes, because they add additional flavor to the batter through their Vanilla and other flavored yogurts and milks.

To make these Vanilla Almond Cupcakes with Plum Frosting, I went to Walmart to pick up a Silk Half Gallon Vanilla Almond Milk and a couple of Silk Vanilla Yogurts. You can find them in the dairy aisle, with the normal milk and yogurts.

Silk Almond Milk has 50% more calcium that dairy milk, with no cholesterol and no saturated fat. Silk offers seven almond milk options, all 100 calories or less. I love Vanilla Almond Milk in my cereal, its so tasty!  Silk yogurt, made from soy, has 6 grams of soy protein per serving with no cholesterol and no artificial flavors or colors. The yogurt is dairy-free, gluten-free, and vegetarian.

Plums are in season at the moment and I absolutely love their flavor, so I decided to make a plum frosting. The delicious flavor of plums is enhanced with almonds and vanilla, so Silk products are perfect with plum!

 

Cupcakes:

  • 1 stick margarine (8 tablespoons), at room temperature
  • 1 1/3 cup sugar
  • 2 (5.3 oz) containers Silk Vanilla Yogurt (~1 cup)
  • 1 1/2 teaspoons almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup Silk Vanilla Almond Milk

 

Frosting:

  • 3 plums, diced
  • 1 tablespoon honey
  • 1 stick margarine  (8 tablespoons), at room temperature
  • 2 cups powdered sugar
  • a pinch of salt
  • a couple drops blue food coloring, if desired
  • cinnamon, for garnish

Honey Mustard Roasted Rainbow Carrots

Hooray for spring weather! As the days get warmer, the produce offerings also get better. It’s the perfect time of year to experiment with more veggies!

 

Door-to-Door Organics, a home delivery organic and grocery company,  is a great way to receive seasonal and organic fruits and vegetables. Their produce is USDA Certified Organic and is locally sourced whenever possible. I have been using Door-to-Door Organics for a few weeks now (I get the Little Mixed Box box delivered every other week courtesy of a coupon given to me by Door-to-Door Organics) and was so excited to see that my latest delivery had beautiful rainbow baby carrots in it!

 

I love when my food has vibrant colors, so I couldn’t wait to roast these beauties up. My box also came with a red onion, a head of garlic and some fresh Italian parsley, perfect accompaniments to the carrots.

 

This recipe for Honey Mustard Roasted Rainbow Carrots is really simple and takes about 30 minutes, depending on how soft you like your carrots (I like mine to have some crunch to them!)

Autumn Apple Salad with Cinnamon Honey Dijon Dressing

It’s September which means apples are right in their prime season! Although apples are available year-round, most apples ripen in the August-October time frame. I’ve had a craving for apples ever since September began so I was so excited when I was contacted recently about trying an apple variety called SweeTango that I’ve never had before.

SweeTango apples a variety bred at the University of Minnesota and are a cross between  the Honeycrisp and Zestar! varieties.  The apples are crisp and sweet with a hint of citrus, honey, and spice and have a nice crunchy and juicy texture that’s perfect to eat raw. They have a beautiful coloring too — SweeTango is a blush apple with deep red coloration over a yellow breaking background. The variety first hit store shelves in limited quantities in 2009, and has since grown to achieve distribution across the U.S. and Canada.

I received two SweeTango apples in the mail and couldn’t wait to try them! One I saved for me to just enjoy on its own and the other went into one of the most delicious salads I’ve ever had, Autumn Apple Salad with Cinnamon Honey Dijon Dressing! This salad is packed with a bunch of different textures and flavors which is what I really love about it. But the true star of the salad is the SweeTango apple!

Ingredients:

Salad:

  • 2 cups red leaf lettuce, torn
  • 2 cups spinach leaves, torn
  • 1/2 cup thinly sliced fennel bulb
  • 1/2 cup walnuts, toasted
  • 2 tablespoons salted pumpkin seeds (pepitas)
  • 2 tablespoons dried cherries
  • 2 tablespoons golden raisins
  • the juice of 1 lemon
  • 1 SweeTango apple, thinly sliced

Dressing:

  • 4 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon red wine vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 tablespoon minced shallot
  • 1/2 teaspoon cinnamon
  • a pinch of salt and pepper

Sparkling Honey-Ginger Bourbon Lemonade

When I have friends coming to visit, I like to  make a batch of cocktails beforehand so that I have a pre-made refreshment to serve. Lemonade-based drinks are a favorite of mine: I’ve made a Rhuby-Lavender Lemonade as well as a Bourbon-Peach Lemonade in the past.

 

So to keep my trend going, I decided to make this Honey, Ginger Sparkling  Lemonade with Rosemary and added in some bourbon. (My friends are big bourbon fans, if yours aren’t, vodka would work as an easy substitute). I changed the recipe a bit to fit my tastes, but you can find the original recipe here.

 

Ingredients:

  • 1/2 cup local honey
  • 1/2 cup water
  • the juice of 5 lemons, plus the zest of 1 lemon
  • the juice of 1 lime
  • 1/4 cup minced ginger
  • 10 full rosemary stalks
  • 2 1-liter bottles of club soda
  • 1 1/2 cups bourbon
  • Ice cubes

 

Note: Bourbon does include grains that contain gluten. However, distilled alcohol is considered gluten-free because the process of distillation removes the harmful gluten protein, which is why I have this recipe listed as gluten free. If you are highly sensitive to gluten, bourbon may be off limits for you.

Farro Berry and Walnut Salad

This recipe from Cooking Light is actually supposed to be a side dish. But I thought this Farro Berry and Walnut Salad would make a great summer lunch! I have been looking for something that can be made the night beforehand and transports easily so this salad seemed perfect. I added in some blueberries because my boyfriend is allergic to cherries and I wanted him to still be able to enjoy a fruit within the salad (he’s fine with cherries being in something, he just has to pick them out).

 

 

Ingredients:

  • 5 cups water
  • 1 1/2 cups uncooked farro
  • 1/2 teaspoon salt, divided
  • 3/4 pound sweet cherries, pitted and halved (about 2 cups)
  • 1/3 cup blueberries
  • 2/3 cup diced celery
  • 1/2 cup coarsely chopped walnuts, toasted
  • 1/4 cup packed fresh flat-leaf parsley leaves
  • the juice of one lemon (about 2-3 tablespoons)
  • 1 tablespoon whole-grain Dijon mustard
  • 1 tablespoon honey (or agave nectar)
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil

Honey Citrus Champagne Cupcakes

Happy New Year!! I hope everyone had a wonderful holiday season! My boyfriend and I had a New Years Eve party this year, complete with a champagne bar, dessert bar, and a DIY photo booth!

Minted sent me the banner and signs as well as paper cups, plates, and napkins to really snazz up our party. Aren’t those signs so cute? The theme shown in the photos is “Sparkle Everywhere”

Their party decor is really great; Minted has decor for any party you can imagine! You can build your own package or choose from three suites: unique party, perfect party, or dream party. Minted has you covered from the napkins to the table confetti to even adorable paper straws and cake plates. You can also order invitations that match your theme!

The Champagne Bar was a huge hit. I included suggested champagne cocktails but creativity was encouraged. My favorite combination was St. Germaine filled with sparkling wine and topped with some cranberry juice.

We had a blast in the photo booth and people had fun with all of the props!

The dessert bar turned out great too! I will be sharing recipes that I made for it over the coming days but I wanted to start with a particularly appropriate New Years Eve cupcake, although these are so good you will want to make them all year round 🙂

This recipe for Champagne Cupcakes was sent to me by Golden Blossom Honey. Golden Blossom’s honey is composed of honey from three flowers — extra-white clover, sage buckwheat, and orange blossom so the flavor profile is unique and really tasty!

These cupcakes highlight the taste of the honey with the addition of orange and dry champagne, making for a really moist and flavorful cupcake.

Ingredients:

  • CUPCAKES
  • 2 1/3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 3 eggs

Chicken with Honey Sofie Beer Sauce

A few weeks back I was invited to go to a super cool event hosted by Goose Island Beer. The last week in September was Goose Island Migration Week in Philadelphia and one of the events was a Painting and Tasting at New Deck Tavern. While sipping on Goose Island’s delicious beer, a painting instructor guided us through painting a Goose Island themed painting!

Creativity is not my strong suit. I can’t sing, dance, act, play an instrument… you get the idea. So I was excited and somewhat intimated by this whole process. But it was awesome. And here’s the end result!

Please ignore that my oranges look like peaches. And that my goose on the glass looks more like Nessie. I’m still pretty jazzed with how it turned out! Ericka’s turned out great! I tried to switch it with mine before she signed it, but alas.

The Process

The feature of our painting was a glass of Goose Island Sofie in its signature glass. Sofie is a Belgian Style farmhouse ale (Saison) that is aged in wine barrels with orange peel.

This beer is SO good. I first heard of it through my sister who just loves Sofie, but this was the first time I had ever had it. After the event, I couldn’t stop thinking about Sofie so I picked up a four pack the next day! I wanted to use Sofie in a recipe and highlight the citrus notes in it, so I used this recipe I found from Cooking Light that makes a honey-beer sauce to serve with chicken. I marinated the chicken in orange juice prior to cooking to emphasize the orange peel flavor of the Sofie beer.

Ingredients:

  • 1 cup fresh orange juice (~2 oranges)
  • 1 tablespoon olive  oil
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 3 tablespoons chopped shallots
  • 1 cup Goose Island Sofie beer
  • 2 tablespoons lower-sodium soy sauce
  • 2 tablespoons whole-grain Dijon mustard
  • 2 tablespoon honey
  • orange zest, optional
  • 2 tablespoons fresh flat-leaf parsley leaves

Honey Buttermilk Biscuits

I’ve used Melt Buttery Spread in a few recipes on here, including delicious Skinny Iced Pumpkin Cookies, Tim Tam Tarts with Raspberries and Rose Water Whipped Cream, and Shrimp Florentine Pasta.

Melt Buttery Spread is made of virgin coconut oil, flax seed oil, palm fruit oil, and canola oil — all healthy cooking oils and “good fats.” The coconut oil doesn’t make Melt taste like coconut butter though, the flavor is more mild. Typical buttery spreads are made of hydrogenated or partially hydrogenated oils, which have been liked to obesity, heart disease, etc. Melt is also organic, gluten free, soy free, kosher, and has 50% of the saturated fat and fewer calories than butter, so it is a healthy butter alternative. The melting point of the buttery spread is also close to butter’s (unlike most buttery spreads) so it is easy to use as a butter substitute in baking.

Melt has recently developed two new spreads: Honey Melt and Chocolate Melt. I was sent coupons so that I could try these new spreads so I picked up some of the Honey Melt. The spread would be great on its own, just on waffles or on a dinner roll, but I wanted to highlight how great Melt is when baking.

I found this Bobby Flay recipe for Buttermilk Biscuits with Butter and Honey on FoodNetwork.com and substituted in the Honey Melt.

 

Ingredients:

  • 2 cups all-purpose flour, plus 1 tablespoon, divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 oz (8 tablespoons) Honey Melt
  • 1/2 cup buttermilk
  • 1/4 cup heavy cream, plus more for brushing tops
  • Freshly ground black pepper, optional
  • Honey, for serving
