Sparkling Blackberry Gimlets

Over the past year, quite a few of my good friends have gotten engaged. Four of us are getting married this summer (!), so we have plenty to celebrate and discuss when we meet up.

We all love a good cocktail to make our time together festive and have made a few fun ones in the past. This time around, I decided to make us a gin-based drink that just screams spring.

Gimlets are traditionally made with gin (or vodka) and lime juice, but I wanted to create a new, fun cocktail with a few choice ingredients. This Sparkling Blackberry Gimlet is made with Blackberry Ginger Ale. To further enhance the blackberry flavor, I made a quick blackberry-mint simple syrup to go with it. You can substitute in traditional simple syrup if you’d prefer.

 

Ingredients: serves 4

Blackberry Mint Simple Syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup fresh mint leaves
  • 1/4 cup blackberries

Sparkling Blackberry Gimlet

  • handful of blackberries for muddling and mint
  • 8 oz Gin
  • 1/2 cup lime juice
  • 1/4 cup blackberry mint simple syrup
  • 1/2 cup Blackberry Ginger Ale
  • blackberries and mint for garnish

Sparkling Honey-Ginger Bourbon Lemonade

When I have friends coming to visit, I like to  make a batch of cocktails beforehand so that I have a pre-made refreshment to serve. Lemonade-based drinks are a favorite of mine: I’ve made a Rhuby-Lavender Lemonade as well as a Bourbon-Peach Lemonade in the past.

 

So to keep my trend going, I decided to make this Honey, Ginger Sparkling  Lemonade with Rosemary and added in some bourbon. (My friends are big bourbon fans, if yours aren’t, vodka would work as an easy substitute). I changed the recipe a bit to fit my tastes, but you can find the original recipe here.

 

Ingredients:

  • 1/2 cup local honey
  • 1/2 cup water
  • the juice of 5 lemons, plus the zest of 1 lemon
  • the juice of 1 lime
  • 1/4 cup minced ginger
  • 10 full rosemary stalks
  • 2 1-liter bottles of club soda
  • 1 1/2 cups bourbon
  • Ice cubes

 

Note: Bourbon does include grains that contain gluten. However, distilled alcohol is considered gluten-free because the process of distillation removes the harmful gluten protein, which is why I have this recipe listed as gluten free. If you are highly sensitive to gluten, bourbon may be off limits for you.

Strawberry-Mint Sparkling Limeade

I have a confession. I honestly don’t get the brunch obsession with mimosas. Every time I order one, I end up drinking maybe half of it. It just doesn’t do it for me. I love the general idea of them though: sparkling wine with fruit juice. So I was really excited to find this drink recipe in Cooking Light. It sounds right up my alley!
Ingredients (makes 6 servings):
1 container of strawberries, sliced
1/2 cup loosely packed fresh mint leaves
the juice of 4 limes
1/4 cup water
1/4 cup agave nectar
1 (750-milliliter) bottle sparkling wine, chilled

To make, place the strawberries, mint leaves, limes, water, and agave nectar in a blender.
Blend until smooth, about 1 minute.
Pour enough of the mixture into a glass to fill the glass half way.
Carefully fill with the sparkling wine and gently mix to combine.
Serve garnished with mint leaves and a whole strawberry, if desired.
So as you can see from my ingredients photo, you do not need to buy an expensive sparkling wine for this. I used a rose to give it a little extra flavor, but a normal white sparkling wine will do just fine.
This is one of the most refreshing drinks I’ve ever had! The lime and agave completely balance each other out, so it’s not to sweet or too sour.
The mint-strawberry-lime flavor can be tasted in every sip, it’s just perfect!
Note: you can substitute in 3 cups club soda for the wine if you’d like an alcohol-free version. I personally would add another maybe teaspoon of agave to account for the lack of sweetness in the club soda.

Strawberry Prosecco Pops

Coming back to the Philadelphia heat after nearly two weeks in Ireland was a bit of a shock to my system. I was in desperate need for a way to cool down, and what better way than through a cool dessert? Cooking Light‘s Sparkling Strawberry Pops seemed to be the perfect choice. (Please excuse the quality of these photos. I managed to lose the battery charger for my new camera, and am waiting for the replacement to be delivered so these were taken on a pretty crummy alternative.)

 

Ingredients:
1 cup sugar
1/4 cup water
3 cups sliced fresh strawberries (1 pound) or a 1 lb mixture of berries
1 tablespoon fresh lemon juice
2/3 cups chilled Sparkling Wine (I used Prosecco)

I had to change the original recipe (linked above) a bit because I realized I didn’t have any corn syrup and was just too darn lazy to go out and buy some. This recipe is also halved from the original. You will need to have a Popsicle mold to make these. If you don’t have one, this might also work just as a “water ice” type treat; try just freezing the mixture in a bowl (if anyone tries this, please let me know how it turns out).

To make, combine the sugar and water in a microwave-safe bowl and microwave for 3 minutes or until it begins to boil. Remove from the microwave and stir until the sugar dissolves. It will have almost a corn syrup-like texture. Let cool.

 

Chop your berries.

 

Combine the berries, lemon juice, and half of the sugar-water mixture in a food processor and process until smooth.

 

Using a fine mesh strainer, strain the mixture over a bowl.

Use a spoon to press down on the strainer to help push all the juices through.

This will remove all seeds and any parts of the strawberries that didn’t fully blend.

Discard the solids left behind.

Add the rest of the sugar syrup and the sparkling wine to the strawberry mixture. Mix to combine.

Divide among 4 ice-pop molds.

 

Cover with tin foil. Using a knife, carefully make a small slit in the tin foil on top of each Popsicle.

Insert a Popsicle stick into each slit (this helps to keep the sticks centered).

 

Freeze for 4 hours or until frozen.
To remove from the molds, run under hot water for a few seconds to loosen the pops.

 

These pops were really refreshing. I was never a fan of Popsicles growing up because of that fake fruit taste that they all seemed to have, so the fresh strawberries really added a nice natural taste that I appreciated. This recipe can be adapted to use any berries you prefer, or even a mixture of a few types of berries. I hope these help beat the heat!
