Last weekend, friends of mine invited us to an awesome Scotch tasting. They had recently visited Islay and brought back some for us to try as well! Each Scotch was paired with a bite of food to bring out some of the flavors, including oysters, lamb kofta, pheasant sausage and so much more.
I naturally didn’t want to come empty handed so I brought this simple olive tapenade along with me.
Tapenade is a pureed mixture of olives, anchovies, capers and olive oil. Salty foods always pair nicely with spirits, so this recipe was an easy choice to bring to the party.
In the past, I’ve made Arugula Pizza with Poached Eggs, so I went a bit more traditional this time with a Mexican inspired Cheesy Skillet Eggs and Hash.
This recipe is easy to make but has a ton going on: potatoes, chorizo, eggs, cheese, salsa, and avocado all together to make a truly delicious breakfast (or breakfast for dinner)!
Ingredients:
3 russet potatoes
1 tablespoon olive oil
~10 oz uncooked chorizo, cut into bite sized pieces (I used 3 chorizo)
This weekend, I cooked my little heart out. I realized Labor Day is only a couple of weeks away, so it’s time to stock my freezer with ready-made meals for busy nights in the fall, like this freezable Jambalaya!
One of my favorite things to throw on the grill are vegetables, something magical and delicious happens when vegetables are grilled. One night, we were doing a bit of a fridge cleaning meal and ended up with ingredients for chicken cacciatore — mushrooms, peppers, chicken, etc. But, we wanted to use my Coyote OutdoorGrill, so Grilled Chicken Cacciatore was born. I didn’t have 2 big enough grill-safe pots, so this entire recipe isn’t made on the grill, but it can be if you’d like!

I threw in some summer squash and zucchini too, because it’s summer and we had some in the fridge. Feel free to omit.
Ingredients:
For the grill:
2 bell peppers, any colors, chopped into bite-sized pieces
1 yellow onion, chopped
1 (8 oz) container sliced baby bella mushrooms
1 zucchini, thinly sliced
1 summer squash, thinly sliced
2 garlic cloves, smashed
4 chicken breasts (or chicken tenders like I used)
4 chicken drumsticks
olive oil, to taste
salt and pepper, to taste

It may be relatively apparent on my blog that I really don’t eat much pork; I tend to gravitate towards other proteins. So, I also rarely eat sausage, and if I’m being perfectly honest, I’m not the biggest fan of them anyways.
So when First Fresh Foods contacted me about trying their chicken sausages, I figured why not! I decided to keep it pretty traditional and try their mild Italian sausages in Sausage and Peppers to make this recipe for Chicken Sausage and Peppers.
The Italian sausages resemble traditional sausages but are made from ground white breast meat, which delivers similar taste with 78% less fat. They are gluten-free, with no MSG and no hormones.

I wanted to show off how great both types of recipes found in the book are, so I made a blackberry syrup to can, and used it in a watermelon blackberry granita.
The blue wide mouth pint jars are SO PRETTY. I have been using a set of the regular mouth blue pint jars as my drinking glasses for years so I was excited to use the wide mouth for their actual intended use!

My fiance is obsessed with leftovers. For whatever reason, he seems to think that most food tastes better the second time around. So I typically make a few more servings than we need so that he has his beloved leftovers the next day.

I made this recipe for Chicken Chilaquiles Casserole recently for dinner using OXO’s 3 quart baking dish (9×13). Chilaquiles are actually typically a breakfast recipe, using lightly fried tortillas and salsa. This version is a casserole take on the traditional, and uses grilled corn tortillas baked with a quick homemade tomatillo salsa, rotisserie chicken, and cheese.

So. This is kind of an autumnal meal. But it’s been raining and chilly for about a week now, so I’ve been making more “comfort food” kind of meals. And this one is a definite go-to of mine, it’s so tasty!

Like much of the east coast, Philadelphia got hit with a blizzard last weekend. Which meant I had a whole weekend to make a bunch of meals, like this Carrot Ginger Soup!
This Carrot Ginger Soup from Cooking Light is comforting and creamy without any cream! The hint of curry powder brings such a nice warmth to the dish.
It makes 12 servings, so it’s a great recipe to stock your freezer. I love it as a side to my sandwich or salad for lunch!

Happy New Year! Our unseasonably warm weather seems to have left with 2015, and colder temperatures are here to stay for a while. This recipe for Chicken Agrodolce with Creamy Polenta from Cooking Light’s December 2015 issue is great for cold nights — it’s comforting without being too heavy.
Agrodolce means “sweet and sour” in Italian. In this recipe, the golden raisins provide the sweetness while the red wine vinegar adds a touch of sour flavor to the sauce. The chicken thighs are simmered in the sauce and served with a creamy polenta to soak up the flavors.
I absolutely love scallops. My fiance on the other hand does not. So I rarely make them. But when I found myself with a fiance-free dinner recently, it was clear what I was going to make!
This recipe for Seared Scallops with Chestnut Puree from Cooking Light makes use of winter-y ingredients such as chestnuts and blood oranges to make a simple but seemingly fancy dinner.
The scallops are seared and placed on a chestnut puree, then drizzled with a blood orange vinaigrette. I added some dandelion greens, which have a subtle bitterness to them that is a nice contrast to the sweet chestnut puree.

I come from an Irish family, so mashed potatoes are a very important part of every large family meal. If it was socially acceptable, I’d fill my plate just with mashed potatoes and gravy at holiday meals.
Mashed potatoes are quite a staple in my life, so I now find myself to be a bit of a mashed potato connoisseur. I like mine super creamy, but don’t necessarily want them loaded with butter to achieve that creaminess.
