Chelo Kebab

Chelo Kebab or Chelow Kebab is a Persian dish made with steamed saffron rice and kebabs. This version parboils the rice which then browns in a large pan, covered with a cloth, and steams with a little bit of butter to deliver a crispy, golden crust.

The lamb kebobs are marinated for hours to lock in flavor. The result is probably one of my favorite dishes I’ve made recently; it’s well worth the morning prep to have an amazing dinner!

Ingredients:

Kebab:

  • 2 onions, very finely chopped (or pureed)
  • 2 garlic cloves, minced (or pureed)
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 pounds boneless leg of lamb, trimmed and cut into 1-inch cubes
  • 18 grape tomatoes
  • Cooking spray

Chelo:

  • 1 1/2 cups uncooked basmati rice
  • 6 cups water
  • 2 teaspoons salt
  • 3 tablespoons unsalted butter, melted and divided
  • 1 tablespoon olive oil
  • 1/4 teaspoon saffron threads, crushed
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh cilantro
  • 1 lemon, cut into 6 wedges

Cowboy Caviar

There are some ingredients that catch your eye, and you just know you have to use them in a recipe. Orca beans are definitely one of those ingredients. Luckily, Bob’s Red Mill sent me a bag of their orca beans, which are grown in Moses Lake, Washington exclusively for the company.

Orca beans, also known as calypso beans, are black and white splattered, and keep their cool coloring even after cooking. This heirloom bean is high in fiber and iron, and work great in any recipe where you would normally use beans.

But. They are so darn pretty I wanted to let them stand out by using them in a very colorful dish.

Cowboy Caviar seemed like the perfect way to show the orca beans off. Typically made with black eyed peas, cowboy caviar is a bean salad / salsa that is great as a party app, on top of  grilled chicken, or just on it’s own!

Ingredients:

  • 1/2 cup dried orca beans
  • 4 cups water, plus more if needed
  • 1 cup black beans, rinsed and drained
  • 1 cup tomatoes, finely diced
  • 1 cup frozen corn kernels, defrosted
  • 1/2 cup red onion, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1 jalapeno pepper, finely diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup scallions, thinly sliced

Dressing:

  • 2 tablespoons olive oil
  • the juice of 1 lime
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 teaspoon garlic powder

Pasta Alla Norma

Pasta night at my house is a very important night. Every Sunday, we have a pasta dish, but like to switch up what exactly the dish is. It’s always fun to experiment with new ingredients, with pasta always being the constant.

So it is pretty important for me to use premium pasta, like De Cecco Authentic Italian Dry Pasta. Since 1886, De Cecco has made its pasta in the Abruzzo region of central Italy. The 130-year-old company still uses its original family recipe and high-quality ingredients to create a variety of pasta types.

De Cecco pasta is made with only the best coarse durum semolina, whereas flour is used in most other ordinary pasta brands. This translates into De Cecco being a firmer pasta that doesn’t get mushy or fall apart, even if you overcook it by a minute or two.

This week, I had a hankering for eggplant, so I decided to make Pasta Alla Norma. Pasta Alla Norma is a pasta dish with fried eggplant slices tossed in a chunky tomato sauce. The dish is topped with grated ricotta salata and basil.

Note: Ricotta Salata in America doesn’t pack as much punch as its Italian counterpart. If you can find it, go for an Aged Ricotta Salata. If not, use a bit of grated pecorino Romano along with your Ricotta Salata.

Ingredients:

  • 4 medium sized eggplants (look for ones that feel heavy for their size)
  • ½ cup olive oil, plus more if needed
  • 4 garlic cloves, minced
  • ½ teaspoon crushed red pepper
  • 1 (28 oz) can of San Marzano whole tomatoes, undrained
  • 1 tablespoon fresh oregano, chopped
  • 1 (16 oz) box De Cecco spaghetti
  • ¼ cup thinly sliced basil
  • ¼ cup grated ricotta salata
  • ¼ cup grated pecorino Romano
  • Salt and pepper to taste

Grilled Caesar Salad

If you’ve never had Grilled Caesar Salad before, you’re in for a treat! This variation on the classic adds a bit of smokiness from the grill. I added in some grilled tomatoes as well, because who doesn’t love tomatoes?

The dressing for this recipe is Greek-yogurt based, so its slightly tangy and perfect with the charred bits of romaine lettuce. I found the dressing recipe on myrecipes.com.

Ingredients:

For the dressing:

  • 3 tablespoons plain 2% reduced-fat Greek yogurt
  • 2 tablespoons grated Parmesan cheese
  • 4 teaspoons fresh lemon juice
  • 1 tablespoon water
  • 2 teaspoons extra-virgin olive oil
  • 1 1/4 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 anchovy fillet, finely chopped (can omit to make vegetarian)
  • 1 small garlic clove, minced
  • 1/4 teaspoon ground pepper

For the salad:

  • 2 romaine hearts, halved lengthwise
  • salt and pepper, to taste
  • the juice of 1/2 lemon
  • cooking spray
  • ~20 cherry tomatoes
  • 4 slices of a French baguette
  • shaved Parmesan cheese, if desired

Lemon Salmon Caesar Salad

This recipe is a staple in my house, I make it almost every week! This salad is a great way to get dinner on the table quickly while still delivering a healthy meal.

I found this recipe in the Cooking Light Real Family Food cookbook, but adapted it slightly.

The real star of this dish is the lemony Caesar dressing, which is so simple to make!

Ingredients:

  • the juice and zest of 1 lemon
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 5/8 teaspoon kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 5 1/2 tablespoons olive oil, divided
  • 1 1/3 cups (3/4-inch) cubed French bread
  • 4 (6 oz) salmon fillets
  • 7 cups coarsely chopped hearts of romaine lettuce (about 2 hearts)
  • 1/2 pint cherry tomatoes, halved
  • 1/3 cup shaved fresh Parmesan cheese

Pineapple Fried Rice with Chicken #ChineseNYeats

Next Monday begins the Year of the Monkey, according to the Chinese Lunar New Year calendar. Celebrations are held around the world, particularly in places with large Chinese populations, including Mainland China, Hong Kong, Taiwan, Singapore, Thailand, Cambodia, Indonesia, Malaysia, and the Philippines. Locally, Philadelphia’s Chinatown holds a bunch of different events to celebrate, including a parade and a midnight dance performance on the 8th.

My favorite place in the city, Reading Terminal Market, along with the Philadelphia Chinatown Development Corporation, is featuring demonstrations of the cuisine and cultures of Asia next weekend. To get in the spirit, I decided to make one of my favorite Thai dishes: Pineapple Fried Rice with Chicken.

 

This recipe comes together really quickly with the help of Minute Rice, Dole and Kikkoman.

For this recipe, I used White Minute Rice, Dole Pineapple Chunks, and Kikkoman Less Sodium Soy Sauce and Sriracha Sauce, which I picked up at my local Wegmans, which were found in the rice aisle, canned fruit aisle, and Asian foods aisle, respectively.

Mexican Spaghetti Squash Egg Boats

Every Sunday night is pasta night in my house. Most of the time, that means taking out a batch of tomato sauce from the freezer and cooking whatever dry pasta we have one hand, but it’s nice to switch it up every now and then, like making this recipe for Mexican Spaghetti Squash Egg Boats.

I have never worked with spaghetti squash before, so I thought Sunday night would be a great time to try it.

This recipe for Mexican Spaghetti Squash Egg Boats tops the spaghetti squash with a flavorful chunky salsa, plus an egg that is cooked to over-easy (slightly runny), and then (if you are in the mood) topped with cheese and avocado slices.

These Mexican Spaghetti Squash Egg Boatss are very hearty without being too heavy. They take some time to prepare, so these are good for a weekend meal rather than trying to make these on a busy weeknight.

Ingredients:

  • 2 spaghetti squash, halved
  • 1 small yellow onion
  • 2 plum tomatoes, diced
  • 1 green bell pepper, diced
  • 1 jalapeno, minced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 2 teaspoons oregano
  • 1 teaspoon chili powder

I was sent some beautiful Local Organic Heirloom Tomatoes from Door-to-Door Organics for my Farm-to-Table post. I love the colors of heirloom tomatoes, especially the lighter ones, so I wanted to use them in a way that highlighted their coloring. What better way to make heirloom tomatoes the star but in a Gazpacho recipe?

 

Now, the one typical setback of making gazpacho is going through the whole process of peeling and seeding tomatoes. So, for this recipe, I just eliminated it. I have a pretty awesome blender (a Blendtec) which blended the tomatoes well enough to basically eliminate the skins and seeds, so yours may come out a bit more chunky. But removing the skin of a tomato is just such a pain!

 

I served my silky smooth gazpacho topped with finely chopped cherry tomatoes and a Wild Flour Bakery Hearth Baked Mini Baguette that was also in my box from Door-to-Door Organics. The recipe also includes a green bell pepper and a jalapeno which were also a part of my box.

 

Ingredients:

  • 3 cups heirloom tomatoes, chopped (I used some yellow and red)
  • 1 green bell pepper, chopped
  • 1 peeled cucumber, chopped
  • 1/2 cup onion, chopped
  • 1 jalapeno, seeded and chopped
  • 1 garlic clove, chopped

Rockfish Tacos

This weekend, my fiancé went fishing with a friend and his friend’s father. They had quite a successful trip, and came home with a ton of Rockfish! Rockfish, also known as striped bass, is a mild whitefish that can be prepared many different ways, so I was jazzed!

We had some that night on the grill (yum!), but there was plenty left over, and my fiance’s friend was nice enough to send us home with more fish. I had a hankering for fish tacos, so these Rockfish Tacos are the end result! Rockfish, or striped bass, is the perfect balance of flaky and meaty, so it works wonderfully in tacos.

Ingredients:

  • 1 cup cherry tomatoes, diced
  • 1 tablespoon minced jalapeno
  • 1 tablespoon minced shallot
  • 1 tablespoon cilantro chopped, plus more for garnish
  • the juice and zest of 1 lime
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 large fillet rockfish (striped bass), skin removed (~1.5 lb)
  • 1 tablespoon Mexican seasoning or taco seasoning
  • 8 corn tortillas, 6 inch
  • 1 avocado, sliced
  • 1/2 cup thinly sliced red cabbage
  • 1 lime cut into wedges, for serving

Salsa Recipe & Beginners Guide to Canning #CanItForward

To celebrate, I was sent a Ball Canning Discovery Kit (paid link), Ball Blue Book Guide to Preserving (paid link), Red Design Series Lids, and Ball Fiesta Salsa Mix (paid link).

 

My future sister-in-law is big into canning, and I’ve “helped” (a.k.a kept her company in the kitchen) once before, but the process of canning is really intimidating to me. I was told that if I can boil water, I can can, so I was both wary and excited to try this out!

I need to give a little shout out to my city, because the Mason jar was, in fact, invented and patented in Philadelphia in 1858 by local tinsmith John Landis Mason. So, this should be in my blood, right?

 

 

  • The Ball Canning Discovery Kit  is a great beginners kit; it comes with a canning rack that fits into most pasta pots, a recipe guide, and three jars. The kit is really affordable ($11.99) and allows you to assess if canning is for you before investing fully into the process.
  • My sister-in-law assured me that if I had a Ball Blue Book Guide to Preserving, I’d be just fine canning. So. WHEW. This book lays out each step of the process (and even tells you why you are doing it this way) to ensure a successful canning process. The step-by-step guides are particularly helpful as a beginner.
  • The Red Design Series Lids are normal lids and bands, just prettier.  🙂 The lids can only be used once during canning, so it’s helpful to have extras on hand. (You can reuse the jars and bands as many times as you want)
  • The Ball Fiesta Salsa Mix makes the process of seasoning salsa super easy. You just need fresh or canned tomatoes, a splash of vinegar, and the mix to make a yummy salsa!

 

I decided to make a salsa from the Ball Blue Book, but adapted it slightly to include the Ball Fiesta Salsa Mix. The recipe is simple, and is basically just cutting up the ingredients, so this post is more about the canning process than the actual recipe.

I am absolutely a beginner with this, but luckily was able to glean some tips from my sister-in-law and the Ball Blue Book, which I will share as well.

Zesty Salsa (adapted from Ball Blue Book Guide to Preserving)

Yields ~3 pint jars

Ingredients:

  • 5 cups chopped cored peeled tomatoes (fresh or canned)
  • 4 green bell peppers, seeded and chopped (~2.5 cups)
  • 1 large onion, chopped (~2.5 cups)
  • 1 large jalapeno, seeded and finely chopped (~3 tablespoons)
  • 2 garlic cloves minced
  • 2/3 cup cider vinegar
  • 1 tablespoon fresh cilantro, finely chopped
  • 1/4 cup Ball Fiesta Salsa Mix

Gear:

  • Ball canning rack with lifter
  • 3 Ball Pint Jars with lids and bands (I used the Red design series lids and bands)
  • Large stockpot (at least 7.5 inches tall and 9.5 inches in diameter)
  • a non-metallic spatula (I ended up using chopsticks. They worked just fine)
  • A clean, damp towel to wipe rims of jars

Having a blog means that I tend to do a lot of cooking for larger groups. I usually show up to any gathering with at least one appetizer or snack for a crowd. I wanted to make two different salsas for a friend’s party, a traditional fresh salsa, and a fruit salsa. The traditional salsa is made of fresh tomatoes, red onion, and jalapeno, while the fruit salsa is filled with berries, pineapple, oranges and kiwifruit.  Obviously, mixing the flavors of these two would ruin them both, so it was important that I was able to quickly clean both my knife and my cutting board!

Ingredients:

Fresh Salsa:

  • 3 plum tomatoes, chopped and seeded
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 jalapeno, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt

Fruit Salsa:

  •  1/2 cup strawberries, finely chopped
  • 1/4 cup blueberries, halved
  • 1/4 cup raspberries, quartered
  • 1 medium orange, peeled and chopped
  • 3 medium kiwifruit, peeled and chopped
  • 1  (8 oz) can unsweetened crushed pineapple, drained
  • the juice of 1 lemon
  • 1 teaspoon sugar

Curry Shrimp in Coconut Milk

Next week, many Philadelphia restaurants will be participating in Caribbean Cuisine Week.

The week, held from April 8th – April 10th this year, helps raise funds to send over 700 high school athletes from Trinidad, Jamaica, St. Vincent and Grenada to attend the 2015 Penn Relays.


 

The Penn Relays is the largest track and field meet in the United States and draws over 110,000 people to Philadelphia each Spring.

 

 

CCW partners with restaurants throughout Center City by encouraging the Chefs to prepare Caribbean inspired dishes and offer as specials. The restaurants will donate 5% of food proceeds from the three day period to help bring the students to Philadelphia.

 

The list of participating restaurants can be found here. One of the restaurants participating, 48th Street Grille in West Philly, invited some local bloggers to check out their offerings. 48th Street Grille is a Caribbean-American restaurant led by Executive Chef Carl Lewis Sr. who is originally from Jamaica and brings the flavors and spirit of his home to his food.

 

 

Appetizers included garlic roasted shrimp, jerk chicken quesadillas, 5 island wings, and my personal favorite, conch fritters.

We were also treated to quite a few of their entrees, including sweet chili glazed salmon, jerk chicken, and savory curried chicken, which were all amazing. I am fairly certain I had dreams about the curried chicken sauce that night (I loved it so much, I didn’t even take a photo! boo), while my fiance was wowed by the flavors and tenderness of the jerk chicken.

I wanted to share with you a Caribbean-inspired recipe given to me by CCW, in case you don’t live in the area and can’t participate next week.

I turned this recipe for Curry Shrimp in Coconut Milk into a main dish by serving it over coconut rice, but it also would work well as an appetizer.

Ingredients:

  • 2 (14 oz) cans lite coconut milk, divided
  • 1.5 cups uncooked rice (or about 1 can full)
  • 2 tablespoons margarine
  • 1 cup onion, chopped
  • 1 1⁄2 tablespoons curry
  • 1/2 cup bell peppers, diced (I used an assortment of green, red, and orange peppers)
  • 1/2 cup plum tomatoes, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme, chopped
  • 1 1⁄2 tablespoons of sugar
  • 1 pound medium shrimp, peeled and deveined

Baked Chicken Parmesan

Happy Carnevale! Carnevale is celebrated in Italy 40 days before Easter. It is the last hurrah before Lent begins. (It’s similar to Mardi Gras). The word “carnevale” actually means “no meat” in Latin, so the best way to celebrate this holiday is with some protein before fasting begins for Lent.

Redpack Tomatoes sent me a package of assorted canned tomatoes to get me in the spirit of Carnevale, and included some tasty recipes to go along with it. I decided to make Chicken Parmesan, one of my favorite comfort foods. I adapted the recipe from Redpack, but decided to bake the chicken rather than pan fry it, so here is my recipe for Baked Chicken Parmesan.

Halibut with Balsamic Cherry Tomatoes

I spent the last two weeks in total holiday mode. With my birthday, Christmas, and getting engaged all in the past couple of weeks, it’s been one big celebratory meal! I’ve done very little cooking and a whole lot of eating, so it’s time to get back into a normal cooking/eating schedule again.

This recipe for Halibut with Balsamic Cherry Tomatoes from Cooking Light is a really simple weeknight meal option. I served it with a simple salad; green beans or asparagus would also work great with this recipe.

I changed the recipe slightly because my supermarket was out of basil; this version uses some oregano leaves to give a pop of flavor.

 

Ingredients:

  • 1 1/2 tablespoons olive oil, divided (I used basil infused olive oil)
  • 2 (6-ounce) halibut fillets, skinned
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 12 oz cherry tomatoes
  • 3 garlic cloves, minced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh oregano leaves
