Spanish Rice with Saffron Cream

Have you ever started a recipe only to find that you are missing an ingredient? And not just any ingredient, but a key ingredient? This happens to me more than I’d like to admit. Recently, I wanted to make Cooking Light’s Spanish Chicken and Rice with Saffron Cream, went and bought the ingredients, and came home to realize the person who checked me out never put the chicken in my bag! Blargh. so. Here’s a recipe for Chicken-less Spanish Rice with Saffron Cream

I was pretty annoyed, but we still had to eat. So this rice became more of a paella without the crispy bottom. And because of the chorizo, it still felt like it could be a complete meal. Anyways, this Spanish Rice with Saffron Cream was still tasty despite my grumbling for wanting some chicken.

 

Ingredients:

  • 1 tablespoon extra-virgin olive oil, divided
  • 1 cup chopped white onion
  • 2 ounces cured Spanish chorizo sausage, diced
  • 4 garlic cloves, minced
  • 1 large red bell pepper, chopped
  • 3 cups hot cooked long-grain white rice
  • 16 pimiento-stuffed green olives
  • 1 1/2 cups 2% reduced-fat milk
  • 1/4 cup tomato paste
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon saffron threads, lightly crushed
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup sour cream
  • Cooking spray

Plum Swirled Cheesecake Bars

This recipe for Plum Swirled Cheesecake Bars is a result of me going a little off the grocery list last time I went food shopping. Have you ever seen an ingredient in the supermarket and decided you just have to make something with it? This happens to me quite a bit.

Unfortunately, I normally do not have a recipe lined up to take advantage of my new purchase. I wanted to take a break from some peach recipes I’ve been making recently (Brown Sugar Cinnamon Peach Pie, Peach Cobbler, and Bourbon-Peach Lemonade to name a few) and focus on a relative of peaches: the plum. I haven’t worked with plums much in the past (I actually only have once recipe: Plum Sweet and Spicy Chicken) but I just could not resist how great they looked!

I decided to take a Martha Stewart recipe for Apricot Cheesecake Bars and instead make my own Plum Compote as a substitute for the Apricots, resulting in these Plum Swirled Cheesecake Bars.

Ingredients:

Plum Compote:

  • ½ cup port wine
  • ½ cup sugar
  • 1 cinnamon stick
  • 1 vanilla bean, cut lengthwise
  • The zest of one orange
  • 6 plums, stones removed and sliced

Cheesecake:

  • 18 graham crackers (I used cinnamon graham crackers)
  • ¾ cup plus 1 tablespoon sugar, divided
  • 2 teaspoons vanilla powder (I used Nielsen Massey)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, room temperature
  • 1/2 cup sour cream, room temperature
  • 1/2 teaspoon vanilla bean paste or pure vanilla extract (I used Nielsen Massey)
  • Coarse salt, to taste
  • 2 large eggs, room temperature

Chicken Fricassee With Tarragon

Cold weather always makes me crave comfort food. I tend to really want pasta (and would be perfectly happy eating it every day that drops below 40 degrees) but am always open to healthier comfort food options. BetterEats.com had a lighter recipe for Chicken Fricassee, which is a French stew with chicken, vegetables, white wine, and cream that when paired with some day old bread makes a fantastic comfort food option.

Ingredients:

  • 2 1/2 pounds chicken pieces (breast halves, thighs, and drumsticks) – bone-in, skin removed (I used 1 chicken breast, 1 thigh, 1 leg, and 1 drumstick)
  • 1/4 teaspoon salt
  • pepper, black – to taste
  • 2 tablespoons flour, all-purpose
  • 1 tablespoon oil, olive, extra virgin
  • 1 cup shallots (about 4 large ones)
  • 1 cup wine, dry white
  • 1 1/2 cups broth, chicken, less sodium
  • 1 medium carrot – peeled and thinly sliced (about 1/3 cup)
  • 1 pound mushrooms, I used 1/2 lb baby bellas, 1/2 lb button – wiped clean and halved or quartered
  • 4 sprigs tarragon, fresh
  • 4 teaspoons tarragon, fresh – chopped
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/4 cup sour cream, reduced-fat
  • 2 teaspoons mustard, Dijon

Fish Tacos with Lime-Cilantro Crema

It’s funny how you can go years, even decades, thinking that you don’t like a certain food only to find you can’t get enough of it when you’re older. Fish tacos is one of those foods for me. They pack a ton of flavor but are a healthier option than other proteins (as long as the fish isn’t fried, that is). I also love how quickly you can cook them up, perfect for a weeknight dinner! Cooking Light always has the best taco recipes so I naturally went in search of a fish taco recipe there. I found this recipe in the myrecipes.com new cookbook: Myrecipes’ America’s Favorite Food Cookbook, which you can win by entering below!

 

 

Ingredients

Crema:

  • 1/4 cup thinly sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons fat-free mayonnaise
  • 3 tablespoons reduced-fat sour cream
  • 1 teaspoon grated lime rind  (I just used the zest of one lime)
  • 1 1/2 teaspoons fresh lime juice (I used the juice of one lime)
  • 1/4 teaspoon salt
  • 1 garlic clove, minced

Tacos:

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground red pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1 1/2 pounds red snapper fillets
  • Cooking spray
  • 8 (6-inch) corn tortillas
  • 2 cups shredded cabbage (or romaine lettuce)

Almond Lavender Cupcakes with Honey Cream Cheese Frosting

I have been looking for dried lavender for the longest time. I understand that a lavender treat is probably more appropriate for a spring day, but I just came across dried lavender this week at the Head Nut in Reading Terminal and couldn’t wait another 6 months! I adapted this recipe from a Taste of Home recipe. The icing comes from a Martha Stewart recipe. Together, it makes this yummy recipe for Almond Lavender Cupcakes with Honey Cream Cheese Frosting.

Ingredients:

  • 1/2 cup slivered almonds
  • 2 cups sugar, divided
  • 1 cup butter, softened
  • 1 tablespoon dried lavender flowers
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1/4 cup evaporated milk
  • 1 cup (8 ounces) sour cream
  • 1/2 teaspoon baking soda
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 20-25 drops each of blue and red food dye
  • 1/2 cup (1 stick) unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1/3 cup honey
  • Additional dried lavender flowers, optional

Quinoa Chicken Curry

I’m excited to share with you this recipe for Quinoa Chicken Curry, but before I do, I wanted to share a bit about quinoa.
Although quinoa seems to be a bit of a “new” super food, it has actually been around for thousands of years and was considered one of the most important crops of the Incas. This grain-like seed is really easy to cook (you cook it like rice) but is chock full of nutritional benefits. Quinoa’s high protein content makes it a great choice for vegans and vegetarians. It is also a complete protein which means it contains all the essential amino acids. Quinoa is also rich in vitamins and minerals, including magnesium, phosphorous, zinc, iron, potassium, calcium, vitamin B, folate, and riboflavin. Quinoa is also naturally gluten free, and can be ground into a flour that allows for gluten free baking. Whew.
I really didn’t know much about quinoa, or how to use it. So I was excited to be given the chance to review The Complete Idiot’s Guide Quinoa Cookbook to learn more about it.  The book is full of quinoa recipes, including breakfast, dinner, and even dessert recipes. I wanted to try one of the more traditional preparations of quinoa, but can’t wait to delve into the more interesting uses for it in future posts (Lemon Poppy Seed Quinoa Cupcakes, anyone?) The book had a recipe for Quinoa Indian Chicken Curry that sounded absolutely fantastic!
Ingredients:
  • 1 cup uncooked quinoa, rinsed and drained
  • 4 cups chicken broth, divided
  • 2 boneless skinless chicken breasts, cut into 1 inch pieces
  • 4 tablespoons olive oil, divided
  • 6 teaspoons curry powder, divided
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 1 medium head cauliflower, chopped into 1 inch pieces
  • 1/2 tsp ground cumin
  • 1 tsp celery seed
  • 1/2 tsp fennel seed
  • 1/2 tsp turmeric
  • 1/3 cup plain low-fat yogurt
  • 1/3 cup nonfat sour cream
  • 1/2 cup cashews
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp salt
  • 1/2 tsp pepper
Yields 5 cups, or about 4 servings.

Chilean Sea Bass Tacos with Chipotle Cream

I have never made a taco recipe from Cooking Light that I didn’t love. Honestly, how do they manage to deliver fantastic recipe after fantastic recipe? This one for Chilean Sea Bass Tacos with Chipotle Cream is no different, although the original recipe was made with red snapper. I’ve been having really bad luck recently coming across the fish I want when I go to the market, so I had to sub in Chilean sea bass instead.
Ingredients:
  • 1/2 cup fat-free sour cream
  • 1/8 teaspoon salt
  • 1 canned chipotle chile in adobo sauce, seeded and minced
  • 1 1/2 cups chopped onion, divided
  • 1 1/2 cups chopped tomato, divided
  • 2 tablespoons butter
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 garlic cloves, minced
  • 3 tablespoons chopped fresh cilantro
  • 1 pound Chilean sea bass
  • 1 teaspoon grated lime rind
  • 2 tablespoons fresh lime juice
  • 4 (8-inch) fat-free flour tortillas

Cumin Spiced Fish Tacos with Avocado Mango Salsa

With Cinco de Mayo this past weekend, I couldn’t stop thinking about making some kind of Mexican-themed meal this weekend. So I was pretty excited when my boyfriend suggested Fish Tacos on Sunday. My trusty Cooking Light obviously had the perfect recipe to fulfill our craving. These Cumin Spiced Fish Tacos with Avocado Mango Salsa get an extra boost of flavor from toasting the cumin seeds before grinding. If you can’t find cumin seeds, ground cumin will work for the recipe as well, just skip the toasting part.
Ingredients:
  • 1 tablespoon cumin seeds
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 pound tilapia fillets
  • 1 tablespoon coconut oil
  • 1 cup sliced peeled avocado
  • 2/3 cup finely chopped peeled ripe mango

Slow Cooker Corned Beef and Cabbage

St. Patrick’s Day is right around the corner, which means Americans nationwide are gearing up for a corned beef and cabbage feast. Despite being Irish-American myself, I’ve never eaten this St. Patrick’s Day staple before. My boyfriend, a huge corned beef fan, was really looking forward to having some, so I finally decided it was time to try to make it. I choose to adapt this recipe from Food Network for Slow Cooker Corned Beef and Cabbage so that I could use my slow cooker and not have to watch over it for hours.

Ingredients:
  • 4 pounds raw corned beef brisket
  • Pickling Spice (included with brisket)
  • 1 medium rutabaga, halved, peeled and cut into wedges
  • 5 large carrots, cut into 4-inch pieces
  • 1 bag red potatoes
  • 1 yellow onion, chopped
  • 1 leek, white and light-green parts only, sliced
  • 1/2 head cabbage, roughly chopped
  • 1/3 cup Dijon mustard with horseradish
  • 1/3 cup crème fraiche or sour cream

Chocolate Cupcakes with Peanut Butter Frosting

There are some people who are in your life that just make your days a little bit better. I’m talking about the people you see for maybe just one minute a day: a person at a coffee shop, someone you pass in the hall, or in my case, one of the guys who works at my SEPTA station. I always look forward to a smile and a wave from him. So I was pretty bummed when he told me he was moving to another station. Sigh.
I wanted to find a way to thank him for making my day a little bit better, and I honestly don’t know any other way to thank someone besides with food (this is something I may need to work on…) So I decided to make him cupcakes! And who doesn’t like chocolate peanut butter cupcakes?
I found this recipe on Food Network and thought it was perfect. It even incorporated coffee into the recipe (one of my favorite tricks) to heighten the chocolately flavor. I decided to try to make my own peanut butter icing though, to make it more my own.
Ingredients:
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
2/3 cup granulated sugar
2/3 cup light brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
1 cup buttermilk, shaken, at room temperature
1/2 cup sour cream, at room temperature
2 tablespoons brewed coffee
1 3/4 cups all-purpose flour
1 cup cocoa powder
1 1/2 teaspoons baking soda
Icing:
1/2 teaspoon vanilla extract
1/8 teaspoon kosher salt
1 package (8 oz) low fat cream cheese
4 tablespoons butter, softened
1 cup (or 1/2 a container) of smooth peanut butter
2 cups powdered sugar
1/2 cup heavy cream

Preheat the oven to 350 degrees. Add the butter, granulated and brown sugars to a large bowl and beat on high for 2 minutes. Add the eggs one at a time followed by the vanilla, mixing well each time.
In a small bowl, whisk together the buttermilk, sour cream, and coffee.
In a third bowl, whisk together the flour, cocoa powder, and baking soda.
Add the buttermilk mixture and the flour mixture alternately to the large bowl, mixing with a hand mixer in between the addition of each mixture, beginning with the buttermilk mixture and ending with the flour mixture. (I poured half of the buttermilk mixture in, beat the mixture on medium, adding half the flour mixture, and beating on medium. I then repeated this until just combined).
Add the mixture to a cupcake pan lined with paper liners.  The recipe randomly made 18 cupcakes.
Bake at 350 degrees for 20 minutes or until a toothpick comes out clean. Cool for 10 minutes, then remove from the pans.
To make the icing, combine all the ingredients in a medium sized bowl using a hand mixer.
Add the frosting to the cupcakes once completely cooled.
If desired, top with crushed peanuts.
Was there even a chance that these would be so-so?
Peanut butter and chocolate are two of the most fantastic, decadent paired ingredients.
I hope he likes them!

Double Chocolate Cupcakes with Buttercream Frosting

We recently had a baby shower for one of my co-workers. She’s a big chocolate fan, so I went in search of  a super chocolately cupcake that I could make for the shower. Lauren’s Latest had a great recipe that incorporated dark chocolate and cocoa powder, perfect! I used an altered buttercream recipe from my Guinness Cupcakes so that I could have a white icing that I could dye blue. She is having a boy so I went with a duck theme!
Cupcake ingredients:
3/4 cup butter
12 oz dark chocolate
3/4 cup packed brown sugar (I used light)
3/4 cup granulated sugar
3/4 cup unsweetened cocoa powder
3/4 teaspoon salt
3/4 teaspoon baking soda
1 1/2 cup flour
3 eggs
3/4 cup milk
3/4 cup low fat sour cream
1 1/2 teaspoon vanilla extract
Buttercream ingredients:
1 stick of butter, softened
3 cups powdered (confectioner’s) sugar
2 teaspoons vanilla extract
Milk, as needed to get to desired consistency
4-5 drops blue food dye

So I did something that is typically a big no-no in baking. I took Lauren’s recipe and multiplied it by three to make 24 cupcakes. And (thankfully) it turned out a-ok! So feel free to use my multiplied version. Be sure to check out Lauren’s page though to see how beautiful hers came out, especially with that chocolate icing, yum!
Begin by preheating your oven to 350 degrees. Line a cupcake pan with paper liners.
In a small pot, melt the butter and chocolate over medium low heat, stirring until smooth. When combined, remove from heat and allow to cool.
While the butter and chocolate are melting / cooling, add the brown sugar, granulated sugar, cocoa powder, salt, baking soda and flour in a large bowl.
Mix to combine.
In a small bowl, combine the eggs, milk, sour cream and vanilla.
Make a well in the dry mixture.
Pour the wet ingredients into the well.

Incorporate the dry ingredients into the wet ingredients as well as the cooled butter-chocolate mixture until just combined.
Add half of the mixture to the cupcake tins (the recipe makes 24 so you will have enough batter for 24 cupcakes). I use an ice cream scoop to at least attempt to divide the batter evenly.
Bake at 350 degrees for 20 minutes or until a toothpick inserted into a middle cupcake comes out clean.
Allow to completely cool before decorating.
To make the icing, use a hand mixer to beat butter until smooth. Add half of the sugar and beat until smooth. Add other half of the sugar and repeat. If the mixture is too thick, add a bit of milk to thin and beat until smooth. (Note: be careful to not add too much, a little bit of milk goes a very long way!)
I added 4-5 drops of blue food coloring to get a light blue color. The icing became water for my ducks.
How cute are these?
I used a pastry bag to add the icing, but you can also put the icing into a plastic zip lock bag and cut off one of the bottom corners to squeeze the icing out. It doesn’t have to be perfect (mine definitely aren’t!), the ducks splashing makes ripples in the water 🙂
I ordered the ducks and the sprinkles from The Bakers Confections, which you can buy on Etsy.
You’re probably thinking, super, they are adorable. But are they tasty?
They sure are! The double chocolate makes it a really nice dense cupcake, fully of chocolately flavor. The sour cream keeps them nice and moist.
My cupcakes were snatched up in minutes, so I think they were a hit!

Black Bean Tostadas

Tostada normally refers to any meal in which a tortilla is deep fried or toasted. They were originally in response to tortillas that had started to get stale but could still be eaten. The toasted or fried tortilla is topped with beans, cheese, sour cream, lettuce, onions, salsa and then topped off with chicken or pork. Today, you can find all types of tostadas: seafood, vegetarian, vegan, etc.I found a recipe for a quick tostada in the Cooking Light Fresh Foods Superfast  cookbook and altered it a bit to remove most pre-made products (I don’t usually get to supermarkets). The result was still a quick and really delicious weeknight meal.

Ingredients:
1 can of black beans
5 tablespoons fresh salsa
3 tablespoons chopped cilantro
1/8 cup reduced-fat sour cream
1/8 cup chopped cilantro
2 tablespoons water
1/4 teaspoon black pepper
2 8-inch flour tortillas
Cooking spray
3/4 cup shredded Romaine lettuce
1/2 an avocado, sliced

Preheat the broiler.
Drain and rinse the black beans. Add to a saute pan coated in cooking spray. Heat on medium heat, pressing on the black beans so they mush a bit.
Add the salsa. If you do not have time to make your own salsa, you can pick up fresh salsa at the supermarket or specialty grocery stores. Add the chopped cilantro and stir.
Cook for 2 minutes until heated through. Remove from heat. Combine the sour cream, cilantro, water and pepper in a separate bowl.
Shred the lettuce and slice the avocado.
When the broiler is preheated. Spray the tortillas on each side with cooking spray and add two tortillas to a cookie sheet. Broil for two minutes or until charred. Mine puffed up a bit in the oven, so I just pushed down the center to make room for the beans.
Add the beans evenly to each tortilla.
Top with lettuce.
Drizzle with the sour cream mixture.
Top with avocado.
This was so satisfying! I loved the crunch of the tortilla to contrast the creaminess of the filling.

If the salsa is pre-made or store bought, this is a really quick meal, about 15-20 minutes from start to finish.

I loved the flavor, but this could certainly handle a little bit of heat, maybe some chopped jalapeno mixed in with the salsa.

After a bite or two, I went back to the salsa and added another tablespoon to my tostada to give it a bit more flavor. If you like salsa, I suggest doing this.

This could easily be altered to use chopped beef or sauteed chicken if you’d like. However, it was absolutely delicious with the black beans.

Black Bean and Cheese Enchiladas with Ranchero Sauce

I have had quite the hankering for Mexican recently, so I was so happy that the October issue of Cooking Light included a bunch of delicious sounding Mexican inspired vegetarian meals. I decided to go for the Black Bean & Cheese Enchiladas, because they can easily be frozen for future lunches and dinners. I substituted a few of the ingredients for what I already had, but you can find the original recipe here.
Ingredients:
2 Cajun peppers, stemmed, seeded and chopped
2 teaspoons olive oil
1 cup chopped yellow onion
5 garlic cloves, minced
1/4 teaspoon kosher salt
3 cups chicken broth, divided
2 tablespoons chopped fresh parsley
2 tablespoons no-salt-added tomato paste
1/2 teaspoon ground cumin
The juice of 1 lime
1/8 teaspoon cayenne
1 (15-ounce) can black beans, rinsed and drained
2 cups pre-shredded Mexican-blend cheese, divided
3 thinly sliced green onions, divided
Cooking spray
10 (6-inch) corn tortillas
5 tablespoons light sour cream
Preheat oven to 400°.  Prepare the peppers, onion and garlic cloves. Heat the olive oil in a medium saute pan over high heat. Add onion and cook for 1 minute.
Reduce heat to medium and add the garlic and salt. Cook for 5 minutes, stirring occasionally.
Add 2 cups broth, parsley, tomato paste, and cumin.
Cook for 10 minutes, or until it thickens slightly, stirring occasionally.
While this is cooking, add the extra cup water and the chopped peppers to a food processor. Pour the onion mixture into the food processor when finished cooking. Blend until smooth. Stir in lime juice and cayenne.
Combine the beans, 1 cup of cheese, and half the green onions in a bowl.
Add 1/2 of the sauce to the bottom of a cookie pan coated with cooking spray. Add 3 tablespoons of the bean mixture to to each tortilla.
Roll up, placing the seam side down.
Add to the cookie pan.
Pour the remaining sauce over the tortillas.
Top with the remaining cheese.
Bake for 15 minutes.
Sprinkle with remaining green onions and serve with sour cream.

This recipe has so much flavor! I was really pleasantly surprised with how this turned out. I am pretty sure I didn’t allow the sauce to reduce enough, but it thickened up in the oven and still tasted wonderful.

A serving is two enchiladas, so I actually have 4 meals left over after making this. As I mentioned before, enchiladas freeze really well, so 3 are going into the freezer and one will be my lunch tomorrow, win!

To make this recipe more effective for a weeknight, you can make the ranchero sauce ahead of time an refrigerate it until ready to use. The recipe took about an hour from start to finish.

Guinness Cupcakes with Baileys Frosting

With St. Patrick’s Day right around the corner, I wanted to test out my recipe for Guinness Cupcakes with Baileys Frosting before the big day to make sure it didn’t need any tweaking.

Guinness cupcakes are chocolate cupcakes that use a dark stout to enhance the flavor.

To keep with the theme, I decided to also make Bailey’s frosting.

Ingredients (makes 24 cupcakes)

Guinness Cupcakes:

  • 3/4 cup unsweetened cocoa
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 12 oz bottle of Guinness (or any other dark stout) – if your bottle is more than this, just measure out 12 oz
  • 1 (4 oz) stick of butter, melted and cooled to room temperature
  • 1 tablespoon vanilla extract
  • 3 large eggs
  • 3/4 cup sour cream

Baileys Frosting:

  • 2 (4 oz) sticks of butter, softened
  • 1 tablespoon vanilla extract
  • 1/2 cup Bailey’s Irish Cream
  • 1/4 tsp salt
  • 8 cups powdered (confectioners) sugar
