I have the unnecessary “skill” of setting off my smoke alarm almost every time I use my oven or stovetop. I’m going to blame it on my house having an overly sensitive smoke alarm (which I guess is better than one that doesn’t work at all). So in the summer, I basically turn every recipe into a grilling recipe so I can cook outdoors.
This recipe is adapted from Cooking Light. Making it on the grill means I didn’t get as crispy skin on my red snapper (mainly because it stuck to the aluminum foil), but that’s ok. Feel free to check out the original recipe to make indoors.
A while back, I was given the chance to taste test some of the Cheesecake Factory‘s new menu items, which they do twice a year (who knew?) I was able to sample some cocktails and bites from across the menu. I, naturally, also wanted to try to make one of the recipes at home.
Cocktails included:
Cucumber Mojito – Gin and St. Germain with cucumber, basil and mint
Blood Orange Martini – Vodka, blood orange liqueur and blood orange juice
Irish Coffee Manhattan – Jameson Irish coffee served ice cold and straight up
Espresso Martini – Vodka with cold brew coffee
Other new menu options included:
Korean Fried Cauliflower – crispy cauliflower tossed in a sweet and spice sauce, topped with toasted sesame seeds and green onions
Chicken Taquitos – Crispy corn tortillas with grilled chicken, green chile, corn, onion, cilantro and cheese. served with avocado cream and salda verde
Skinnylicious Chicken Pot Pie – Sauteed chicken breast, potatoes, mushrooms, onions, peas and carrots in a light cream sauce, topped with puff pastry
Chicken Mango and Avocado Salad – Mixed greens, fresh pineapple, tomato, cucumber, red peppers, crispy wontons and almonds
Pasta Napoletana – Italian sausage, pepperoni, housemade meatballs, mushrooms, peppers, bacon, onions and garlic in a tomato sauce served over parmesan cream pasta
Seared Ahi Tuna – Served over white rice with sriracha aioli, stir-fried vegetables and wasabi butter sauce
Truffle-Honey Chicken – Fried chicken breast with truffle-honey, asparagus, and mashed potatoes
Chicken Riesling – Chicken breast, mushrooms, bacon, onions and garlic in a white wine Riesling cream sauce with buttered parmesan pasta
Carne Asada Steak Medallions – Certified Angus beef with sauteed peppers, onions and cilantro, served with a creamy ranchero sauce, fresh corn and white rice
Chicken Parmesan “Pizza Style” – Chicken breast coated with breadcrumbs, covered with marinara sauce and melted cheese. Topped with angel hair pasta in an alfredo cream sauce
Crispy Pineapple Chicken and Shrimp – Crispy chicken and shrimp with snow peas, mushrooms, onions, garlic, peppers and cilantro in a sweet and spice sauce, served with white rice

The Cheesecake Factory has over 250 items on their menu, so there is sure to be something for everyone’s taste buds.
I tried my hand at recreating the salad we were served, with some adjustments to try to make it a bit more “home cook” friendly to make this Chicken Mango and Pineapple Salad.
Ingredients (serves 2):
1 boneless, skinless chicken breast
1 tablespoon teriyaki sauce (store bought, or recipe below)
5 oz baby lettuce mix
1/4 cup fresh pineapple chunks
1/4 cup fresh mango, cut into chunks
2 tablespoons julienned carrots
2 tablespoons tortilla strips, plus more for garnish
2 tablespoons grape tomatoes, halved
1/2 red bell pepper, cut into thin strips
1/4 cucumber, cut in half lengthwise and sliced thin
1 tablespoon almond slivers, toasted
1/2 tsp black sesame seeds
1 teaspoon fresh mint, thinly sliced
Dressing
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon low sodium soy sauce
1 tablespoon honey
1 tablespoon minced ginger
1/2 teaspoon toasted sesame oil
1 teaspoon Dijon mustard
pinch of salt and pepper
juice of 1/2 an orange
Teriyaki Sauce (makes 1/2 cup – you’ll need ~1/4 cup for this recipe):
Chelo Kebab or Chelow Kebab is a Persian dish made with steamed saffron rice and kebabs. This version parboils the rice which then browns in a large pan, covered with a cloth, and steams with a little bit of butter to deliver a crispy, golden crust.
The lamb kebobs are marinated for hours to lock in flavor. The result is probably one of my favorite dishes I’ve made recently; it’s well worth the morning prep to have an amazing dinner!
Ingredients:
Kebab:
2 onions, very finely chopped (or pureed)
2 garlic cloves, minced (or pureed)
3 tablespoons fresh lemon juice
3 tablespoons olive oil
1/4 teaspoon salt

This is the time of year for parties and of course party appetizers. This party appetizer for Pomegranate Glazed Lamb Meatballs is so simple to make, but it is fancy enough to serve at a dinner party.
I found this recipe in New York Times’ cooking section and just had to try it out. Lamb meatballs with a pomegranate molasses glaze? Sign me up!
I served the Pomegranate Glazed Lamb Meatballs with some plain Greek yogurt with mint leaves mixed in, simple but a great complement!
I’ve been in a bit of a cooking rut recently; I’ve had a difficult time figuring out what new recipes I want to try. Luckily, Cooking Light always has some inspiration for me. This time, it came in the form of a lamb burger.
This lamb burger recipe is actually half lamb/half beef and is really simple to make. I also made sweet potato fries as a side, super delicious!
Ingredients:
Burgers:
1/2 cup finely chopped onion
1/4 cup chopped fresh flat-leaf parsley
1 teaspoon minced garlic
1 teaspoon grated lemon rind
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8 teaspoon ground cumin
8 ounces lean ground lamb
8 ounces 90% lean ground sirloin
Cooking spray
4 hamburger buns
1/4 cup plain fat-free Greek yogurt
2 tablespoons reduced-fat feta cheese, crumbled

Over the past year, quite a few of my good friends have gotten engaged. Four of us are getting married this summer (!), so we have plenty to celebrate and discuss when we meet up.
We all love a good cocktail to make our time together festive and have made a few fun ones in the past. This time around, I decided to make us a gin-based drink that just screams spring.
Gimlets are traditionally made with gin (or vodka) and lime juice, but I wanted to create a new, fun cocktail with a few choice ingredients. This Sparkling Blackberry Gimlet is made with Blackberry Ginger Ale. To further enhance the blackberry flavor, I made a quick blackberry-mint simple syrup to go with it. You can substitute in traditional simple syrup if you’d prefer.
Today (February 19) is National Chocolate Mint Day! With the cold temperatures across most of the U.S., I think we can all use a nice warm beverage to keep us toasty, and this is the perfect food holiday for such a beverage! So, I present: Spiked Mint Coconut Milk Hot Chocolate!

I have never been one to shy away from sharing all of the awesomeness that the Philadelphia area has to offer. I am pretty darn proud of my city, especially when it comes to our rocking food and beverage scene. So it should come as no surprise that my gin of choice is always Bluecoat Gin.
Why yes, Bluecoat IS made in Philadelphia! What sets Bluecoat’s flavor apart from others is their use of organic juniper berries, which give off a more spicy, earthy tone versus pine-tree flavors found in regular juniper berries. Bluecoat is finished off with a premium blend of organic American citrus peels and spices which adds a nice citrusy finish to the spirit.
Bluecoat must have known my affinity for them, because I was asked to develop a Valentine’s Day themed cocktail using this yummy gin. Because Valentine’s Day is all about the love, I threw in a bunch of my favorite cocktail ingredients to make the “perfect” cocktail for me! (Here’s hoping you agree)
This recipe for a Blue Rose Cocktail starts with a strawberry mint simple syrup, adds in some sparking wine, and finishes off with some pomegranate juice.
My fiance (and considerably more creative half) dubbed this a “Blue Rose Cocktail” — Bluecoat Gin + rose coloring from the simple syrup and pomegranate juice.
When I first spotted this recipe in the August issue of Cooking Light, I knew I wanted to make it. I have never used watermelon in a savory recipe before and it sounded like a perfect summer dinner! This recipe comes together in no time (and is really simple to make), making it a great weeknight meal option.
The rub on the steak is only four ingredients: salt, black pepper, white pepper, and red (cayenne) pepper. If you don’t have white pepper you can just substitute in more black pepper. But each pepper does bring it’s own taste to the rub.
Black and white pepper comes from the same pepper plant but white peppercorns have the outer layer removed, leaving the seed inside. White pepper has a more subtle flavor than black pepper. Red pepper, or cayenne pepper, is ground from hot peppers so it has a nice level of heat to it. The three together add a nice spiciness to the steak without being overwhelming.

I am on a bit of a peach kick at the moment. They have looked oh so amazing at the store recently, and my boyfriend is a huge fan, so why not? Expect a couple more peach recipes to show up on here in the coming weeks. (I’ll try to space them out a bit.)
A friend of mine made this absolutely delicious Honey-Ginger Sparkling Bourbon Lemonade a few months back that I haven’t stopped thinking about. It was SO good! So when I spotted Cooking Light’s recipe for a Peachy Bourbon Lemonade, I had to make it immediately, hoping it would be similarly delicious.
This lemonade is such a treat during this uncomfortably hot weather we are having. It would be just as yummy and refreshing without the bourbon (either as a non-alcoholic drink or with another spirit of choice).
Ingredients (Serves 4):
1/3 cup fresh lemon juice
3 cups water
2 cups chopped, peeled peaches (I used white peaches)
¼ cup lightly packed mint leaves
6 tablespoons sugar
¾ cup bourbon
Ice
Note: Bourbon does include grains that contain gluten. However, distilled alcohol is considered gluten-free because the process of distillation removes the harmful gluten protein, which is why I have this recipe listed as gluten free. If you are highly sensitive to gluten, bourbon may be off limits for you.
A few weeks ago, I had some watermelon I couldn’t finish. So I decided to blend the watermelon, drained it through a sieve, and froze it for future use. I knew I wanted to make a Watermelon Mojito and having the frozen watermelon puree would make the process much easier.
So when I was contacted by Polar Seltzer to try some of their summer seltzers, I knew the time had arrived. Even better, one of the flavors sent my way was Mint Mojito!
So I broke out the Watermelon puree and let it thaw in the refrigerator. You can also blend fresh watermelon right before making the mojitos.
I continue to struggle with looking at a bunch of ingredients and imagining a meal. In general, I follow recipes and make a few changes to account for ingredients available or to suit my tastes. But yesterday, a friend and I came across fresh ricotta and the most beautiful fresh cherries. The cherries were slightly tart so I thought they would make an amazing “dessert alternative” or a somewhat sweet appetizer.
We topped toasted baguette pieces (also from the market) with some of the ricotta, pitted cherries, mint, and a touch of honey to make this Cherry Ricotta Bruschetta.
I am excited to announce that I will be a Perfect Protein Blogger for the summer, to help promote a book called The Perfect Protein: The Fish Lovers Guide to Saving the Oceans and Feeding the World. Written by Andy Sharpless, the CEO of Oceana, and Suzannah Evans, the book discusses how protecting, maintaining, and consuming wild seafood can help to fight both famine and obesity globally.
I am only a few chapters in to the book and already find it fascinating. The general idea behind the book is to try to eat seafood, but to try to eat WLLS: Wild, Local, Little, and Shellfish. Many supermarkets, such as Whole Foods, label their seafood which makes sticking to these more sustainable choices a cinch. But even without the labels, you can still find sustainable options at your local grocer.
As a food blogger, I immediately went to the back of the book, where there are 21 sustainable seafood recipes from some of the nation’s top chefs. They all sounded delicious, but I decided to start off my Perfect Protein posts with a recipe that is simple but packs a ton of flavor into the dish: Sam Talbot’s Thai Coconut Mussels. I love making mussels because they cook up so quickly. This recipe takes about 30 minutes from start to finish. (For another take on mussels, check out my recipe for Mussels in White Wine Garlic Sauce)
I altered the recipe a bit to make it into a meal for 2 instead of an appetizer. I also subbed in some ingredients for what I could find. All of these ingredients can be found in Whole Foods.
Ingredients:
3 tablespoons extra-virgin olive oil
3 tablespoons peeled and grated fresh ginger
4 large garlic cloves, minced
1 shallot, finely chopped
2 tablespoons lemongrass
2 tablespoons unsweetened coconut
1 pound mussels, debearded, scrubbed well, and washed clean
1/3 cup dry white wine
1 tablespoon soy sauce
1 teaspoon fish sauce
1 teaspoon sambal (chile-garlic paste)
1 (13.6 oz) can coconut milk, divided
2 tablespoons torn cilantro leaves, stems discarded
I mentioned in my previous post (Prosciutto, Fig, and Arugula Flatbread with Balsamic Reduction) that I have quite a few fresh figs at the moment. No complaints here, but I do want to use them all and not waste any, figs are delicious, and grilled mission figs are the best!
Not only are grilled mission figs super tasty, but they are good for you too. (I love when that happens!) According to California Figs, one serving of fresh figs (1/2 cup or 3-4 medium figs) delivers 5 grams of fiber (20% of your suggested daily value), 354mg potassium (10% DV), and 53mg calcium (6% DV) with just 120 calories. Figs are also fat, sodium, and cholesterol free.
Dried figs are available all year round, but fresh figs have a shorter availability period. Mission Figs, which I am using in this recipe, are available longer than most figs and can be found fresh from late May through as late as November. Because they are mostly a summer produce, I just have to add them to the grill!
I also received a bunch of really awesome kitchen gadgets while at the conference. As I’ve mentioned in the past, I’m a huge fan of OXO and already had my own set of graters, so I actually have an extra set to give away! (Update: I actually have TWO sets to give away so there will be two lucky winners!) I use my set of graters all the time. The zester is my favorite, mainly because every time I work with any form of citrus, I make sure to zest it before juicing to add extra flavor to the dish. The coarse grater comes in handy with soft and semi-soft cheese, but can be used for anything that needs a larger grate. The medium grater is perfect for carrots, chocolate, and the like. This recipe for Grilled Mission Figs with Mascarpone and Spiced Honey is based off a recipe on Whole Living. The only large difference is that I grilled the figs beforehand.

Salmon and salad are a great healthy go-to on a weeknight. You can have your meal on the table in under 20 minutes! This salad is a nice alternative to your traditional salads. Made with four different herbs and spicy arugula, the salad adds a ton of flavor to the crispy salmon. The lemon dressing is fantastic as well! This recipe is from Cooking Light’s cookbook: The New Way to Cook Light.
