Watermelon Mojito

A few weeks ago, I had some watermelon I couldn’t finish. So I decided to blend the watermelon, drained it through a sieve, and froze it for future use. I knew I wanted to make a Watermelon Mojito and having the frozen watermelon puree would make the process much easier.

So when I was contacted by Polar Seltzer to try some of their summer seltzers, I knew the time had arrived. Even better, one of the flavors sent my way was Mint Mojito!

So I broke out the Watermelon puree and let it thaw in the refrigerator. You can also blend fresh watermelon right before making the mojitos.

Ingredients (Makes 1, multiply as needed):

  • 4-5 mint leaves, plus more for garnish
  • the juice of 1 lime
  • 1 tablespoon agave (I used Agave in the Raw)
  • 2 oz white rum
  • 3 oz watermelon puree
  • Polar Mint Mojito Seltzer

If you are pureeing the watermelon, cut the meat of the watermelon from the rind. Roughly chop and throw into a blender. Blend until pureed. You might need to add a bit of water to the blender to get everything going. Pour the puree through a fine mesh sieve using a spoon to push it through.

To make the mojitos, add the mint leaves and lime juice to a mixing glass. To make juicing the lime easier, I used the IMUSA lime squeezer (affiliate link). Muddle the mint and lime juice together (if you don’t have a muddler, you can use a spoon).

Add the agave and rum and stir to combine.

Add ice and the watermelon puree and shake to combine.

Strain the mixture into a glass filled with ice. Top with the Polar Mint Mojito Seltzer.

The seltzer is so fantastic in this drink. The carbonation adds freshness to the already refreshing watermelon and the mint flavor helps bring out the fresh mint as well. I also love the color!
