Vegan Cranberry Goat Cheese Pistachio Truffles

It’s the time of year where having a few party appetizer recipes on hand can be very helpful, especially ones that you can create quickly and travels well, if needed.

I prefer to have some recipes that can fit different dietary needs, including an appetizer or two for dairy-free or vegan friends and family.

This recipe for Vegan Cranberry Goat Cheese Pistachio Truffles is made with Spero Alternative Goat Cheese. Spero, a plant-based company that offers sustainable and affordable cheese and egg alternatives, such as Spero’s Sunflower Cheese products. Spero has a bunch of yummy flavors of their cheese spreads, including The Goat, which is a smooth and tangy taste very similar to goat cheese.

Plus, this recipe is super simple and has just four ingredients!

Ingredients (makes 12 servings):

  • 1/2 cup roasted sea salt pistachios
  • about 2 tablespoons dried cranberries
  • 1 (6.5 oz) container Spero The Goat
  • 1 baguette, sliced

French Onion Soup

When I first received a box of Vidalia onions, I knew I had to make French Onion Soup. The sweetness of the onions, especially after caramelizing, is perfect for this recipe.

French Onion Soup is a favorite of mine. Who doesn’t love comforting soup with a bunch of bread and cheese goodness on top?

My version below is adapted from a recipe I found on Food Network.

Brandade (Whipped Salt Fish Spread)

One of my favorite parts of this blog is challenging myself to use new and different ingredients and/or new and different techniques. So when I was contacted to participate in CFE’s International Saltfish Blogger Recipe Challenge, I jumped at the chance.

So what exactly is saltfish? It is fish, typically cod, pollock, or other white fish cured with dry salt to preserve it. This method of preservation dates back centuries, as it helped preserve fish without refrigeration.

CFE International offers a number of brands of salt fish: Buena Ventura, Cristobal, BacalaRico, and Isla Brisa. For this challenge, I was sent some Isla Brisa Salted Alaska Pollock Fillets to use in a recipe. (You can find these brands of saltfish in your local Cousins, H-Mart, Jetro, Price Chopper, and Price Rite supermarkets.)

I decided to do a spin on Brandade (Whipped Salt Fish Spread), a salt fish spread popular in Mediterranean countries. It’s also known as Brandada in Spain, and Baccala Mantecato in Italy.

The spread is whipped salt fish, potatoes, olive oil, and cream with seasoning and is served with crusty bread. My version below adds in some roasted garlic, caramelized onions, and horseradish to add new layers of flavor.

Ingredients:

Roasted Garlic:

  • 6-8 peeled garlic cloves
  • 1 tablespoon olive oil
  • salt and pepper, to taste

Caramelized Onions:

  • 1 yellow onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • salt, to taste

Brandade:

  • 12 oz Isla Brisa saltfish
  • 2 medium potatoes
  • roasted garlic, recipe below
  • 1 bay leaf
  • 1 1/4 cups extra-virgin olive oil
  • 1/2 cup half-and-half
  • 1 tablespoon horseradish
  • 2 tablespoons parsley, plus more for garnish
  • 2 tablespoons dill, plus more for garnish
  • salt and pepper, to taste
  • sliced baguette,

Flank Steak with Tomato Bruschetta

One of the best parts of Steak is how simple it is to prepare. You really don’t have to do much to a steak to make a delicious meal. But sometimes you want something a little different. This recipe for Flank Steak with Tomato Bruschetta is still super simple but ups the flavor of the steak with smoked paprika and a creole seasoning. The original recipe uses a pre-made creole seasoning, but I just substituted in some spices I had on hand to make my own version.

This quick Bruschetta is really tasty on bread, but be sure to use any leftover to put on top of the steak as well!

Ingredients:

  • 2 teaspoons canola oil
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon dried thyme
  • a pinch of salt and pepper
  • 1 (1-pound) flank steak, trimmed
  • Cooking spray
  • 2 cups cherry tomatoes
  • 4 teaspoons olive oil, divided
  • 2 tablespoons chopped fresh basil
  • 1 small shallot, chopped
  • 8 (1-ounce) slices whole-wheat French bread baguette
  • 1 garlic clove, halved

Chicken with 40 Cloves of Garlic

Somehow I have never had the classic French dish Chicken with 40 Cloves of Garlic. With my love of garlic, this seems like a huge oversight! I adapted this recipe from a Cooking Light recipe.

The garlic cloves are simmered in a broth until tender and work to lightly perfume the chicken. If you’re a garlic lover like me though, I suggest spreading the softened cloves on to crusty pieces of bread — they turn into a wonderful paste that is oh so tasty!

Because of the large number of cloves you need for this recipe, I suggest just buying pre-peeled cloves – it will save you a ton of time, making this an easy weeknight meal.

Ingredients:

  • 2 lbs boneless skinless chicken breasts and thighs
  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 40 garlic cloves, peeled
  • 1 1/4 cups fat-free, less-sodium chicken broth
  • 1 cup dry white wine
  • 24 (1/4-inch-thick) slices diagonally cut French bread baguette
  • Chopped fresh flat-leaf parsley (optional)

Smoky Portuguese-Style Mussels

Mussels are one of my favorite quick meal options — they take just 5 minutes to cook! This recipe for Smoky Portuguese-Style Mussels infuses the broth with turkey kielbasa and smoked paprika before steaming the mussels in the broth, resulting in a really flavorful dish. The broth is really spectacular, so be sure to serve this dish with a sliced baguette. (Note: the whole dish takes about 30 minutes to cook.)

Ingredients:

  • 2 teaspoons canola oil
  • 4 ounces chopped turkey kielbasa
  • 1 1/4 cups chopped onion
  • 8 garlic cloves, minced
  • 1 tablespoon smoked paprika
  • 1 pound red potatoes (I used assorted baby potatoes)
  • 2 cups unsalted chicken stock
  • 1/2 cup white wine
  • 40 mussels, scrubbed and debearded
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon kosher salt
  • 4 lemon wedges
  • parsley, for garnish
  • 1/2 baguette, sliced

Cherry Ricotta Bruschetta

I continue to struggle with looking at a bunch of ingredients and imagining a meal. In general, I follow recipes and make a few changes to account for ingredients available or to suit my tastes. But yesterday, a friend and I came across fresh ricotta and the most beautiful fresh cherries. The cherries were slightly tart so I thought they would make an amazing “dessert alternative” or a somewhat sweet appetizer.

We topped toasted baguette pieces (also from the market) with some of the ricotta, pitted cherries, mint, and a touch of honey to make this Cherry Ricotta Bruschetta.

Ingredients (serves 4, multiply as needed):

  • 1/2 a baguette (or 8 pieces)
  • 1 teaspoon olive oil
  • 2 oz fresh ricotta
  • 1/4 teaspoon salt
  • 1 teaspoon mint, chopped
  • 24 cherries, pitted
  • 1 teaspoon local honey

Radish and Arugula Crostini with Brie

Supposedly Spring started this past Wednesday. And yet, meteorologists in the Philadelphia area do not expect the temperature to go above 50 degrees for the foreseeable future. AND it’s supposed to snow on Sunday/Monday. What the heck?! Well, I’m sick of waiting for spring to arrive so I’ve decided to make it spring in my kitchen. Cooking Light seems to agree with me, and the April issue has a ton of recipes using the best of spring’s produce. This Radish and Arugula Crostini recipe immediately caught my eye; not only is it beautiful, but the ingredients give me hope that warmer weather is on it’s way.

This recipe is also really simple. I made this as a quick appetizer to bring to a friends house and was able to make the entire recipe in 20 minutes!

Ingredients:

  • 16 (1/2-inch-thick) slices diagonally cut French bread baguette (6 ounces)
  • Cooking spray
  • 1 1/2 cups sliced radishes
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice, plus the zest of 1 lemon
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 4 ounces Brie cheese (about 1/2 cup)
  • 1 cup baby arugula leaves
