Baked Cranberry Almond Brie Bites

I know that most of us are probably partied out. But it can never hurt to have some really great (and easy) party appetizer recipes on hand, like these Baked Cranberry Almond Brie Bites, right?

This recipe for Baked Cranberry Almond Brie Bites is a bite-sized version of baked brie wrapped in puff pastry; some versions of baked brie are stuffed with jam and nuts. This mini version uses mini phyllo cups stuffed with brie and cranberry sauce, then is topped with toasted almonds and fresh thyme. Mini phyllo cups (paid link) are typically available in the dessert frozen section of the supermarket.

Ingredients:

  • 1 teaspoon unsalted butter
  • 1 tablespoon sliced almonds
  • salt, to taste
  • 1 box mini phyllo shells (15 shells in each box)
  • 4-5 ounces brie
  • 1 tablespoon plus 1 teaspoon cranberry sauce
  • 1 tablespoon thyme leaves

Wild Mushroom Truffled Pizza Topped with Runny Eggs

.Pizzas are a great weeknight meal option; it’s easy to make it out of products in your pantry and can be customized for whatever you’re in the mood to eat that night (or what you need to clean out of the fridge!) There is a pizza place near me in Philly called Nomad Pizza that has one of my favorite pizzas: their Truffle Pecorino pizza. The pizza is topped with cheese, garlic, shiitake mushrooms, truffle oil, and a runny egg.

I wanted to try out a version of this pizza for myself. I used a mixture of baby bella, maitake, and shiitake mushroom caps and made a quick garlic truffle oil to drizzle on for extra flavor to make this recipe for Wild Mushroom Truffled Pizza Topped with Runny Eggs.

Ingredients:

  • 1 store bought pizza dough
  • 1/4 cup olive oil, plus 1 tablespoon, divided
  • 2 garlic cloves crushed
  • a drizzle of white truffle oil
  • 1 package of sliced shiitake mushroom caps
  • 1 package of sliced baby bella mushrooms
  • 1/4 cup maitake mushrooms (or any wild mushroom you prefer)
  • salt and pepper, to taste
  • 4 oz ricotta
  • 2 tablespoons grated Parmesan cheese
  • 4 oz shredded mozzarella cheese
  • 4-6 oz brie (I used Champignon German Brie with mushrooms)
  • 2-4 oz Boschetto al Tartufo (Boschetto with Truffles) – you can also just use any mild cow cheese you’d like
  • 2 eggs

Radish and Arugula Crostini with Brie

Supposedly Spring started this past Wednesday. And yet, meteorologists in the Philadelphia area do not expect the temperature to go above 50 degrees for the foreseeable future. AND it’s supposed to snow on Sunday/Monday. What the heck?! Well, I’m sick of waiting for spring to arrive so I’ve decided to make it spring in my kitchen. Cooking Light seems to agree with me, and the April issue has a ton of recipes using the best of spring’s produce. This Radish and Arugula Crostini recipe immediately caught my eye; not only is it beautiful, but the ingredients give me hope that warmer weather is on it’s way.

This recipe is also really simple. I made this as a quick appetizer to bring to a friends house and was able to make the entire recipe in 20 minutes!

Ingredients:

  • 16 (1/2-inch-thick) slices diagonally cut French bread baguette (6 ounces)
  • Cooking spray
  • 1 1/2 cups sliced radishes
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice, plus the zest of 1 lemon
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 4 ounces Brie cheese (about 1/2 cup)
  • 1 cup baby arugula leaves

Baked Brie

There is a Moroccan restaurant in the Fairmount section of Philadelphia called Figs that has the most fantastic Baked Brie dish. It comes in a clay pot and is topped with honey, lavender and almonds.
I randomly had a craving for this appetizer this weekend and decided to try to make my own.

Ingredients:

  • 1 wheel of brie
  • 2 tablespoons butter
  • 1/4 cup sliced almonds
  • 2 tablespoons honey
  • 2 tablespoons dried cranberries
  • Day Old Bread, or Toasted Pita
