Homemade Ceviche

Before I go into the Homemade Ceviche recipe, I want to highlight a wine company that I recently tried and love. For this post, I wanted to highlight Ripe Life Wines’ OG. The Clambake Unoaked Chardonnay. Chardonnay is commonly “oaked,” in which the wine is aged in oak barrels, resulting in flavors of butter, vanilla, or caramel. Unoaked Chardonnay, like the Clambake Chardonnay, is instead aged in stainless steel barrels, resulting in a lighter, crisp, clean finish that doesn’t compete with the delicate flavors of seafood. Clambake Chardonnay has a lovely lemon/apple/pear flavor to it, making it the perfect accompaniment to both raw seafood dishes, and richer seafood dishes such as lobster and clams with drawn butter.

As soon as I had my first sip of the Clambake Chardonnay, I knew I wanted to try to pair it with a homemade ceviche.

Ceviche, originating in South America, is a dish consisting of diced raw seafood that has marinated in acid (typically lime juice) to “cook” the seafood. The seafood is then mixed with onions, cilantro, and other ingredients to create a colorful and flavorful dish. Although homemade ceviche can sound a little intimidating, it’s actually really easy to make at home! My knife skills aren’t great, so if yours aren’t as well, the recipe will turn out just fine.

Ingredients (serves 4 as an appetizer):

  • 1 Fresno pepper
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 16 oz halibut, cut into bite sized pieces
  • 1 avocado, chopped
  • 1 peach, chopped
  • 3/2 cup cilantro, minced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup fresh lime juice (2-3 limes)
  • 1/2 cup fresh orange juice (~4 oranges)
  • corn tortilla chips, for serving

Easy Shrimp and Grits with Sarges Shrimp and Grits Sauce

If I see Shrimp and Grits on a Menu, you better believe I am ordering it! Despite this, (and inexplicably despite feeling fine about making shrimp and grits separately), I’ve always been a bit hesitant to make shrimp and grits at home.

Homemade Smoked Salmon Board

You know I love a good appetizer board, especially this time of year. Charcuterie and cheese boards have always been my go-to for guests, largely because I can keep most ingredients on hand, so it makes it easy to throw something together. Back to the board! This Homemade Smoked Salmon Board is inspired by the impressive spread my in-laws tend to lay out for holiday breakfasts. Instead of a breakfast spread to layer on bagels, this version is more appetizer-like, perfect for brunch or as a party app. Also, instead of store-bought smoked salmon, I made my own hot smoked salmon, using Oshen Salmon’s recipe. The best part is you can make it right in your oven, no smoker needed!

Ingredients:

Hot Smoked Salmon:

  • 2 pounds fresh salmon fillets (Oshen Salmon’s Date Night Box is the perfect size for this)
  • 2 teaspoons salt
  • ½ teaspoon ground pepper
  • 2 tablespoons brown sugar
  • 3 tablespoons liquid smoke

Smoked Salmon Board:

  • 1/2 red onion, thinly sliced
  • 1 plum tomato, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup cream cheese
  • 1/4 cup hummus, such as everything bagel hummus (optional)
  • 1 tablespoon capers, drained
  • 1 lemon, cut into wedges, for the salmon
  • 1/2 cup bagel chips
  • 2 slices marble rye, cut into eighths

Seared Tuna with Orange Fennel Salad

About a year and a half ago, I was sent an affiliate box from Sitka Salmon Shares, and I loved the quality of the seafood so much that I have had a Premium Seafood Subscription Box ever since. I love the variety as well, but some of the seafood I am not as familiar with how best to cook it. Luckily, Sitka Salmon Shares has some seriously amazing recipes on their website, including this one for Seared Tuna with Orange Fennel Salad.

To make this recipe easier to come together, I strongly suggest using a mandoline (I love the one that comes in Oxo’s Mini Complete Grate and Slice Set [paid link]) to slice the fennel and red onion. I am quite accident prone, so I also strongly suggest purchasing a cut-resistant glove (paid link) so that you keep all of your fingers cut-free.

Ingredients:

  • 2 (8 to 10 ounce) portions albacore tuna
  • 3 1/2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon ground coriander
  • salt, to taste
  • ground pepper, to taste
  • 1 large navel orange
  • 1 fennel bulb, trimmed and very thinly sliced
  • 1/2 red onion, very thinly sliced
  • 1/2 cup coarsely chopped pitted Castelvetrano olives (I like to keep half of them whole and chop the other half)
  • the juice of 1 lemon
  • 2 tablespoons reserved fennel fronds, plus more for garnish
  • 3 tablespoons freshly chopped parsley, plus more for garnish

Sheet Pan Balsamic Fish with Roasted Tomatoes

Seafood is a favorite weekday dinner of mine because it usually takes under 30 minutes to make a seafood dish. This particular recipe for Sheet Pan Balsamic Fish with Roasted Tomatoes has become a staple in our home because of the relatively easy clean up as well – most of the meal is made right in one sheet pan!

I like to serve this over rice or couscous to soak in all of the juices on the sheet pan. This makes 2 hearty servings, with plenty of the tomato mixture to enjoy!

Ingredients (serves 2, multiply as needed):

  • 16 oz cherry or grape tomatoes, halved
  • 2 large shallots, thinly sliced
  • 5 large garlic cloves, minced
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 1/2 teaspoons salt, plus more to taste
  • 1 teaspoon black pepper, plus more to taste
  • 2 white fish fillets (such as cod or halibut)
  • the zest of 1 lemon
  • fresh basil, chopped, for garnish

Salmon with Lemon Parsley Pesto

I originally started this blog as a way to learn to cook and to catalog recipes I enjoyed. So, recently, I have been revisiting recipes from early in my blogging journey and remaking them, like this recipe for Salmon with Lemon Parsley Pesto, served with orzo.

This recipe is a slight adaptation from a previous recipe I posted for Salmon Skewers with Lemon-Parsley Pesto.

Creamy Pappardelle with Smoked Salmon and Caviar

I’m guessing that I’m not the only one that has been having fewer dinners out at restaurants, but that doesn’t mean I haven’t been making fun meals at home!

 

This recipe for Creamy Pappardelle with Smoked Salmon and Caviar is fancy enough for an at home date night, but is also so simple to make and comes together in just 20 minutes!

Pan Seared Lingcod with Wilted Spinach

I’m back with another post using my Sitka Salmon Share! This recipe for Pan Seared Lingcod with Wilted Spinach uses Lingcod, which is a lean white fish native to the North America west coast. It has a mild flavor similar to halibut or cod so it’s very versatile.

Grilled Salmon and Asparagus Foil Packets

I absolutely love grilling. When given the chance, I’d choose it over cooking on the stovetop or in my oven. So I am thrilled that the weather is turning and I can get back to using my favorite appliance as much as possible. To start the season off, here’s a recipe for Grilled Salmon and Asparagus Foil Packets that tastes awesome and is super easy to clean up!

This recipe is also really adaptable, so I’ve given a couple of suggestions below, but definitely make this your own!

Ingredients (serves 2, multiply as needed):

  • 2 (8 oz) salmon fillets
  • salt and pepper, to taste
  • 1 lb asparagus, woody ends removed
  • 2 tablespoons olive oil
  • one lemon, divided
  • 1 teaspoon hot sauce or your favorite mustard

Classic Shrimp Scampi

A few years ago, I realized that the concept of what I know as Classic Shrimp Scampi is kind of an American one. To Americans, Shrimp Scampi is shrimp cooked in butter and typically served over pasta. But scampi is actually its own type of crustacean. So it appears that when Italian immigrants came to the US, they adapted the recipe to substitute in shrimp and then kept both names.

Now that you’ve had a history lesson on Shrimp Scampi, let me get to the actual making of the dish. This version is relatively classic, where you cook the shrimp in a butter white wine sauce with a little bit of crushed red pepper and then finish it off with fresh parsley and some lemon juice. To soak up the yummy sauce, serve with pasta or crusty bread.

Ingredients:

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 6 garlic cloves, minced or pressed
  • 1 cup dry white wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 2 lbs large or extra large shrimp, cleaned

Pan Fried Salmon with Brown Lentils, Cherry Tomatoes, and Basil

I think we could all use a bit of escape right about now. So what better way to get in a beach-state-of-mind than through easy home cooking? I recently had the opportunity to page through Lei Shishak’s new cookbook: Beach House Dinners: Simple, Summer-Inspired Meals for Entertaining Year-Round, which is filled with over 80 recipes perfect for summer cooking.

Lei Shishak is the founder of Sugar Blossom Bake Shop in San Clemente, CA and the author of Beach House Baking, heralded by USA Today as one of the top 10 cookbooks of summer 2014, Beach House Brunch and Farm-to-Table Desserts. She is an established pastry chef who trained at the CIA in New York and has worked in restaurants in Sun Valley, Los Angeles and Orange County.

I’m not going to lie, quite a few recipes caught my eye — Coconut Shrimp, Creamy Thai Curry Quinoa, Pot Roast Tagine, Israeli Pearl Couscous — this cookbook is filled with awesome sounding recipes! I decided to highlight a beautifully simple but oh so flavorful salmon recipe to show off this cookbook.
I adjusted Lei’s original recipe of Pan Fried Salmon with Green Lentils for what I had on hand, so be sure to pop over to her blog or to pick up this cookbook to try the original version. Green Lentils have a slight peppery flavor to them, so I bet they would make this dish even more amazing!
Ingredients: (serves 4)
Lentils:
  • 3 cups chicken broth
  • 1 bay leaf
  • 1 cup brown lentils
  • 1/2 teaspoon salt
  • 4 tablespoons butter, unsalted (or margarine, to make dairy free)

Salmon:

  • 2 tablespoons olive oil

Lemon Orzo with Crab and Herbs

I am very much on the pressure cooker bandwagon. It’s awesome for tough cuts of meat, cooking beans, and other processes that can take forever, but my favorite use is speeding up recipes just enough to make them weeknight friendly!

Marinated Swordfish

Unsurprisingly, I have quite the affinity for dishware. I especially love plates, bowls, and platters that are matte (they present and photograph beautifully!) No matter how pretty dishware is, I still need it to work for my lifestyle, so I look for options that are microwave and dishwasher safe as well.

I immediately gravitated toward their Dadasi collection, which is even more beautiful in person. I personally love the basalt color, it really make the food served on it pop!

I wanted to show off my snazzy new plate with a recipe that’s really become a staple in my household: Marinated Swordfish, served over rice with sautéed baby bok choy. I’m not going to pretend it’s the prettiest recipe, but it sure looks nice on the Dadasi plate, doesn’t it? It’s amazing what a difference a good looking plate can make to the presentation of a meal!

This recipe requires very little hands-on time, but you do need to allot some time for the swordfish to marinate.

Ingredients:

  • 1/4 cup low sodium soy sauce (or coconut aminos/tamari to make gluten free)
  • 1/4 cup white wine vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  •  1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 swordfish steaks
  • 2 tablespoons sesame oil, divided
  • 1 cup cooked rice
  • 4 baby bok choy
  • salt and pepper, to taste
  • fresh parsley, chopped, for garnish (optional)
