Slow Cooker Coconut Rice Pudding

This past Sunday was crum-my. It rained ALL day. So I was in comfort food mode. Along with making another batch of Lemony Red Lentil Soup, I decided to make a rice pudding recipe in my slow cooker, heavily inspired by Phyllis Good’s Stock the Crock recipe for Coconut Rice Pudding.

My version for Slow Cooker Coconut Rice Pudding uses a different flavor profile, so be sure to check out the original in the cookbook as well as the below. (I made another recipe from this awesome cookbook as well. Go check my post on Slow Cooker Chicken Tikka Masala here.)

Rice Pudding is found in different forms around the world. It is eaten as a breakfast, dessert, or sometimes even dinner. Many countries have a version of rice pudding that is traditionally served for Christmas.

My version adds some of my favorite flavors to one yummy dish: coconut, rose water, cranberries, and pistachios.

Ingredients:

  • 1 cup white rice
  • 2 cups water
  • 2 (13.5 oz cans) coconut milk, well shaken
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1/4 teaspoon rose water
  • 1/2 cup light brown sugar, lightly packed
  • 1/2 teaspoon salt
  • 2/3 cup dried cranberries
  • unsweetened coconut flakes, toasted
  • pistachios, chopped
  • additional coconut milk, if desired

Blackberry Peaches and Cream Cake

Note: I was sent some coupons for Eagle Brand Sweetened Condensed Milk in order to make this Blackberry Peaches and Cream Cake. Opinions are mine alone.

Last weekend, I had friends over for dinner. Planning what to eat dinner was pretty easy, until I realized I hadn’t thought of a dessert!

Luckily, I had picked up some Eagle Brand Sweetened Condensed Milk the last time I was at the supermarket and had the remaining ingredients on hand as well so that I could make this Blackberry Peaches and Cream Cake.

Not only is this Blackberry Peaches and Cream Cake super tasty, it can be made with pantry items without needing to make another trip to the supermarket. So it’s the perfect “just in case” recipe to make when needed!

This recipe is adapted from a recipe on Eagle Brand‘s website for Peaches and Cream Cake.

Ingredients:

  • 1 package angel food cake mix (or frozen angel food cake, thinly sliced)
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 1 cup cold water
  • 1 teaspoon almond extract
  • 1 (4-serving size) package instant vanilla pudding mix
  • 1 pint heavy cream (or frozen whipped topping)
  • 1 tablespoon sugar
  • 1 teaspoon orange extract
  • ~1.5 pounds frozen peaches, thawed
  • ~1 pint fresh blackberries (or frozen fruit of your choice, thawed)

Blueberry Almond Flour Muffins

NOTE: I was sent some products from Bob’s Red Mill to make this post. All opinions are my own.

I have a busy week ahead of me, so I wanted to do some food prep this weekend.

Weekday breakfasts for me are typically on-the-go, if I have breakfast at all.

So when I have the chance to make breakfast ahead for the week, I try to make it a healthier option.

Bob’s Red Mill sent me a few of their products recently, including Almond Flour. I love the  subtle flavor almond flour adds to baked goods.

Blueberries are a tasty complement to almonds so I decided to make Gluten-Free Blueberry Almond Flour Muffins for the week. They are topped with Bob’s Red Mill’s Gluten-Free Rolled Oats to add some texture.

Cocoa Almond Pretzel Crust Brownies

Salty-sweet combinations are just. The best. My favorite involve chocolate; the saltiness really enhances the chocolate flavor!

These Brownies are an absolutely delicious salty-sweet combo. The super chocolately, fudgy brownie is made with Endangered Species Chocolate Almond Spread with Cocoa (and 3 other different kinds of chocolate!)  while the crust is make of a deliciously salty pretzel/graham cracker combination.

 

The Almond Spread adds a different lay of flavor to the brownies. To keep the almond flavor noticeable in the brownies, I also used some almond extract. If you don’t have almond extract, or don’t want as much almond flavor, you can use vanilla extract.

What makes these brownies even more tasty is that the chocolate spread used in the brownies also helps give back: Endangered Species Chocolate donates 10% of net profits annually to 10% GiveBack Partners. In the past three years, Endangered Species Chocolate’s (ESC) 10% GiveBack program has donated more than $1.2 million for its carefully chosen beneficiaries!

 

ESC recently announced its 2016-2018 partners: Rainforest Trust and Wildlife Conservation Network (WCN). The organizations will receive 10% of ESC’s annual net profits (or a minimum annual donation of $10,000, whichever is greater) to fund projects they deem most important to achieving their conservation goals.

Rainforest Trust has saved more than 11 million acres of tropical forests to-date, but ESC’s 10% GiveBack program will be vital in expediting the organization’s goal of preserving 20 million acres by the year 2020. WCN funds projects in 24 different countries where the 10% GiveBack program will contribute to helping a myriad of at-risk species.

Past 10% GiveBack partners include SEE Turtles, SEEtheWild, Chimp Haven and, most recently, the Xerces Society and African Wildlife Foundation (AWF).

Ingredients:
For crust:

  • 1 stick (8 tablespoons) unsalted butter, melted
  • 1.5 cups crushed pretzels (about 2 cups mini pretzels before crushed)
  • 1/2 cup ground graham crackers
  • 1/2 cup brown sugar

For brownies:

  • 2 sticks (16 tablespoons) unsalted butter
  • 1.5 cups (~9 oz) semisweet chocolate chips
  • 4 ounces (1 baking bar) unsweetened chocolate, chopped
  • 1 (9.7 oz) jar Endangered Species Chocolate Almond Spread with Cocoa
  • 2 cups sugar
  • 4 large eggs
  • 1/2 tablespoon almond extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder

Spritz Cookies

September is Childhood Cancer Awareness Month. Annually, OXO highlights this month with a program benefiting Cookies for Kids’ Cancer, founded by two OXO employees who’s son battled pediatric cancer. Cookies for Kids’ Cancer provides inspiration and support to allow anyone to easily get involved in fundraising to find a cure for pediatric cancer.

 

To show support, OXO will donate up to $100,000* to support Cookies for Kids’ Cancer through the sales of specially marked items, bake sale matches, and other fundraising efforts.   And that’s where this post comes in! OXO sent me a set of cookie-baking tools including specially marked OXO baking products with this Cookies for Kids’ Cancer sticker:

 

OXO is donating $100 to Cookies for Kids’ Cancer for each blog post dedicated to this cause in September. (I made these Vegan Chocolate Chip Walnut Cookies and these Gluten Free Boston Cream Pie Cupcakes last year in support of Cookies for Kids’ Cancer as well.)

But they aren’t stopping there. For every stickered item sold, OXO will donate 25 cents in support of pediatric cancer research as part of its $100,000* pledge to Cookies for Kids’ Cancer. So my cookie-baking set came with a Cookie Press with Disk Storage Case, as well as a Cookie Spatula and a 3 Piece Spatula Set. OXO was even kind enough to send over their newest Measuring Cups and Measuring Spoons! I have never made Spritz cookies before so I was really excited to try the Cookie Press out. Although Spritz cookies are typically thought of as a holiday cookie, OXO’s Cookie Press comes with plenty of other non-winter shapes, including a Leaf, Daisy, Sunflower, Buttercup, Fleur-de-lis, Butterfly, Shell, and Heart! (More winter-y shapes include a Bear, Snowflake, Tree, and Wreath)

For my first attempt, I stayed traditional and made a traditional Butter Spritz Cookie Dough using a recipe adapted from the Food Network to make these Spritz Cookies!

Ingredients:

  • 2 sticks (8 ounces) unsalted butter, cut into tablespoon sized pieces
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • Sprinkles or colored sugar, for garnish
  • Food dye (optional)

Mini Preserves Tarts

This month, Walkers Shortbread sent us a little surprise with our monthly shipment for the Walkers Ambassador Program: Fig and Golden Plum Mirabelle preserves from Bonne Maman! I was so excited to use them in a recipe and immediately wanted to make mini preserves tarts. I incorporated some of the shortbread into the crust for a boost of flavor. (I used Martha Stewart’s recipe as a base and made some changes)

These mini preserves tarts would be great to set out as little bites for guests while waiting for Thanksgiving dinner to be prepared, or would be a wonderful addition to the dessert table! You could make it with any type of preserves or jams you wanted: Bonne Maman has almost 20 different options that would all make for a yummy dessert.

In addition to these yummy tarts, I have two other recipes that would be great Thanksgiving desserts that use Walkers Shortbread:

Ingredients:

  • 1 cup all-purpose flour
  • 3/4 cup Walker Shortbread Rounds crumbs (~7 cookies)
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces
  • 1 large egg yolk
  • 1 teaspoon almond extract
  • 2 tablespoons Bonne Maman  preserves (I used 1 tablespoon fig and 1 tablespoon golden plum)
  • 1 tablespoon heavy cream

To make the mini preserves tarts, preheat your oven to 350 degrees. Using a food processor, blend the shortbreads until they resemble a fine crumb.

Add the flour, sugar, salt and cinnamon and process for 10 seconds.

Add butter and process until mixture resembles coarse meal, 15 to 20 seconds.

Combine 1 egg yolk with 3 tablespoons ice water and 1 teaspoon almond extract.

Add to flour mixture and process until the dough comes together, about 10 seconds. Wrap in plastic wrap and chill for 30 minutes.

Lightly dust a work surface with flour; roll out dough to just thinner than 1/4 inch (6 mm). Using a round cookie cutter, cut out shapes and press into a mini cupcake tin. (I used a 2 1/2″ round biscuit cutter)

Use a fork to press down the dough around the edges of each mini cupcake tin. Fill each with 1 teaspoon preserves.

Lightly brush exposed dough with heavy cream. Bake until golden brown, 20 to 25 minutes. Transfer tarts from tins to a wire rack to cool. Let cool completely before serving.

These are perfect little bites! The crust is light and fluffy and help highlight the delicious sweetness of the preserves.

You get a hint of the almond extract which is a great complement to fig and plum. If you don’t have almond extract you can sub in some vanilla extract.

Rainbow Cookies (a.k.a Seven-Layer Cookies)

If you’ve never heard of these lovelies, you are not alone. Rainbow cookies are made of almond cake dyed fun bright colors with apricot preserves all sandwiched in between two thin layers of chocolate.

They really aren’t cookies at all, more like thinly packed cake. But whatever the heck they are, they are delicious!

 

 

I don’t really recall these cookies growing up, but my boyfriend (who is from Long Island) absolutely loves them. In fact, he was kind of taken aback when I mentioned I didn’t really know what they were. One of his friends was absolutely horrified; he basically forced me to eat one right then and there which I didn’t complain about. I love them now!

 

So I wanted to try to make these little guys… I’m not sure why. They are awfully difficult (well, more time consuming than difficult). But I was so darn proud of myself when they were done, I don’t even care about the effort I had to put in! The cookies go by a ton of names… Rainbow, Seven Layer, Neapolitan, Tricolor… but I’m pretty sure they tend to be a Christmas staple in Italian households. I found this recipe on Epicurious.

 

Ingredients:

  • 1 (12 oz) jar apricot preserves, heated and strained
  • 4 large eggs, separated
  • 1 cup sugar, divided
  • 2 1/2 sticks (1 1/4 cups) unsalted butter, softened
  • 1 teaspoon almond extract
  • 1 (8 oz) can almond paste
  • 2 cups all purpose flour (or cake flour)
  • 1/2 teaspoon salt
  • 25 drops red food coloring
  • 25 drops green food coloring
  • 7 oz fine-quality bittersweet chocolate (not unsweetened), chopped
