Spicy Cucumber Salad

We are big fans of spicy foods in my house. So whenever I am given the opportunity to try a new hot sauce or paste, I always jump at the chance.

Since the moment this little bottle of Chabé® Sambal Chili entered my home, my husband has basically put it on everything. Sambal is a hot sauce or paste made with chili peppers found in Southeast Asian cooking. Chabé® Sambal Chili’s secret formula uses fresh chilies, garlic and a unique artisan technique that adds an explosion of heat and flavor to just about anything you add it to. It’s fairly thick and is incredibly flavorful, so a little bit goes a long way. What I really like about this sambal is that it has a balanced heat — you get the hit of spiciness up front, but it has a hint of sweetness toward the end.

The story of Chabé® Sambal Chili begins in the late 1900’s in the lush islands of Indonesia. This Spicy Cucumber Salad really shows off the flavors of Chabé® Sambal Chili, and would be awesome as a side at a barbecue. It’s also great as a snack!

Ingredients (makes 4 servings, multiply as needed):

  • 8 mini seedless cucumbers
  • 1/2 cup chopped scallions, plus more for garnish
  • 2 tablespoons chopped cilantro, plus more for garnish
  • 1/2 cup chopped peanuts, plus more for garnish
  • 2 tablespoons Chabé® Sambal Chili
  • 2 tablespoons toasted sesame oil
  • 2 teaspoons white vinegar
  • 1/2 teaspoon salt
  • 4 garlic cloves, finely chopped or grated
  • pinch red pepper flakes, for garnish

To make, cut the cucumbers in half lengthwise and then chop crosswise into bite-sized pieces.

Add to a medium-sized mixing bowl along with the scallions, cilantro, and chopped peanuts. Toss to combine.

In a separate bowl, mix together the Sambal Chili, toasted sesame oil, white wine vinegar, salt, and garlic cloves.

Pour the mixture over the cucumber mixture, tossing to combine.

Cover and let stand for 30 minutes. Add to a serving bowl and top with more chopped scallions, cilantro and peanuts. Add a pinch of red pepper flakes on top, and serve.

I really love spicy cucumbers. The crunch of the cucumbers with the spicy dressing is just so satisfying!

The Sambal Chili is the start of this dish. It complements the freshness of the cucumbers nicely. The peanuts add another layer of crunch and flavor as well.

You can make this ahead of time, just keep in mind the longer it sits the more time the sauce has to soak into the cucumbers.

Spicy Cucumber Salad

Total Time: 45 minutes

Yield: 4 servings

Ingredients

  • 8 mini seedless cucumbers

Colcannon

I realized this weekend as I was making some of my favorite St. Patrick’s Day foods that I have not written a post on Colcannon!

Colcannon is mashed potatoes with sautéed greens mixed in, typically either cabbage or kale.

 

It’s pretty awesome Irish comfort food in my opinion. It’s so engrained in Irish cooking that it even has it’s own song!

Did you ever eat Colcannon, made from lovely pickled cream?
With the greens and scallions mingled like a picture in a dream.
Did you ever make a hole on top to hold the melting flake
Of the creamy, flavoured butter that your mother used to make?

This version uses shallots, leeks, and kale, but this recipe can easily be adapted to incorporate any green you prefer.

Ingredients:

  • 2-3 lbs russet potatoes (4-5 potatoes)
  • 2 tablespoons salt, plus more to taste
  • 1 stick (8 tablespoons) butter, divided
  • 1 leek, chopped
  • 2 shallots, chopped
  • 4 cups chopped lacinato kale
  • 1 cup heavy cream
  • thinly sliced scallions, for garnish

Pomegranate Mustard Roasted Brussels Sprouts

I absolutely love roasted vegetables, and Roasted Brussels Sprouts are a favorite of mine. Something magical happens in the oven!

I’ve had a hankering for Brussels sprouts for a while now, but was in the mood for a vegetarian version (a.k.a. not cooked in bacon).

This recipe for Pomegranate Mustard Roasted Brussels Sprouts balances the heat from stone ground mustard with tangy pomegranate molasses, a syrup made from cooked down pomegranate juice. Typically used in Middle Eastern recipes, pomegranate molasses can be found in most supermarkets today. Or, you can make your own at home; I have a recipe for it here. You could also substitute in honey, but use half as much; pomegranate molasses isn’t very sweet. To make a paleo-friendly version, look for unsweetened pomegranate molasses, or omit the sugar all together when making it at home.

The roasted Brussels sprouts are then topped with toasted walnuts and fresh pomegranate seeds to finish it off. Yum!

Ingredients:

  • 2 pounds Brussels sprouts
  • 3 tablespoons olive oil
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons stoneground mustard
  • 3/4 teaspoon salt, plus more to taste
  • 1/2 teaspoon ground pepper
  • 1 tablespoon unsalted butter (or olive oil to make vegan/dairy free)
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup pomegranate seeds

Grilled New York Strip Steak with Honey-Tarragon Blue Cheese Butter and Grilled Tarragon Potatoes

First up, I decided to make a grilled meal using Moyer Beef’s Angus New York Strip Steaks. New York Strip Steak is also known as Kansas City Strip Steak or Ambassador Steak in the US and Sirloin Steak or Porterhouse Steak in Europe.  This cut is particularly tender and flavorful. Angus New York Strip Steak, known for their marbling, are even more flavorful (marbling = flavor). This cut of steak comes from the short loin, along the back of the cow. (Fun fact = a T-bone steak is a New York Strip Steak with the bone and tenderloin still attached.)

So, in my opinion, the flavor of a New York Strip Steak should be allowed to mostly shine on its own. Adding a bit of fancy butter on top won’t hurt though, right?

Playing off the flavors of the Honey-Tarragon Blue Cheese Butter, I also made Grilled Tarragon Potatoes to go with the steak. The result is these crave worthy recipes for Grilled New York Strip Steak with Honey-Tarragon Blue Cheese Butter & Grilled Tarragon Potatoes!

 

Ingredients:

Steak: (serves 2, multiply as needed)

Honey-Tarragon Blue Cheese Butter: (serves up to 8)

  • 1 stick (1/2 cup) salted butter, softened to room temperature
  • 1/4 cup crumbled Blue Cheese (I used a Smokey Blue Cheese to highlight the grilling flavor)
  • 1 teaspoon honey
  • 1 teaspoon fresh tarragon, finely chopped
  • 1/8 tsp black pepper

Grilled Tarragon Potatoes: (serves 2, multiply as needed)

  • 12 oz baby potatoes, halved (I used tri-color potatoes)
  • 1/2 shallot, finely chopped
  • 2 teaspoons fresh tarragon, finely chopped
  • 1 tablespoon salted butter
  • zest from 1 lemon
  • salt and pepper, to taste

Warm Buttered Radish and Edamame Salad

I have been thinking about this Warm Buttered Radish and Edamame Salad since I made it.

This recipe for Warm Buttered Radish and Edamame Salad is so unbelievably good!

This recipe pairs perfectly with Dijon-Herb Crusted Salmon with Creamy Dill Sauce, and only takes a few minutes to make. I already have this back on the menu for this week!

Pesto Chicken, Blistered Tomatoes and Orzo & Herb Pilaf

You can never have too many weeknight meals, especially chicken recipes! For this dinner, I combined two Cooking Light recipes  (Pesto Chicken with Blistered Tomatoes and Orzo and Herb Pilaf) to make one dinner, and served it with a simple salad on the side.

Any recipe that uses pesto is a winner in my book. This particular pesto uses spinach, basil, and parsley to deliver a more complex flavor.

Ingredients:

Pesto:

  • 2 cups packed fresh baby spinach
  • 1 cup packed fresh basil leaves
  • 1/2 cup loosely packed fresh flat-leaf parsley
  • 6 tablespoons chopped toasted walnuts
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 ounces Parmesan cheese, grated (about 1/3 cup)
  • 1 garlic clove, chopped
  • 2 tablespoons extra-virgin olive oil

Chicken:

  • 2 1/2 tablespoons olive oil, divided
  • 4 (6-oz.) skinless, boneless chicken breasts
  • 1/2 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1/4 cup panko (Japanese breadcrumbs)
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon unsalted butter, melted
  • 6 tablespoons spinach pesto (recipe below)

Tomatoes:

  • 3 cups multicolored cherry tomatoes
  • 1 garlic clove, thinly sliced
  • 1 teaspoon red wine vinegar

Orzo and Herb Pilaf:

  • 1 1/2 tablespoons unsalted butter
  • 1/2 cup chopped yellow onion
  • 3/4 cup uncooked orzo
  • 1 1/2 cups unsalted chicken stock
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • blistered tomatoes (recipe below)
  • 3 tablespoons chopped fresh flat-leaf parsley
  • 1 tablespoon chopped fresh dill

Cranberry Pomegranate Sauce

 

My house is filled with pomegranates and pomegranate arils. Being a food blogger is tough 🙂

Thanksgiving is tomorrow, so I wanted to share a recipe for one of my favorite Thanksgiving dishes: cranberry sauce!

This recipe uses pomegranates two ways: in a pomegranate molasses and as whole arils, or seeds. Pomegranate molasses can be found in well-stocked grocery stores or Middle Eastern food stores. But I also show you how to make it below if you so wish.

Ingredients:

Cranberry Sauce:

  • 1 bag (16 oz.) cranberries, thawed if frozen
  • 2/3 cup packed dark brown sugar (or light brown sugar to make less sweet)
  • 4 tablespoons pomegranate molasses (recipe below)
  • 3 sprigs fresh thyme
  • 2 containers POM POMS Fresh Arils (about ~1.5 cups)
  • the juice and zest of 1/2 lemon

Pomegranate Molasses:

  • 2 cups pomegranate juice
  • 1/4 cup sugar
  • 2 tablespoons lemon juice

Slow Cooker Boston Baked Beans

My slow cooker gets such a workout this time of year. But I’m not willing to fully give up “summer” foods just yet. I had a craving for baked beans recently, so I decided to make a batch in my slow cooker and serve it with a cheeseburger and cornbread. Yum. This recipe is a “Boston Baked Beans” recipe, meaning it uses molasses in the recipe.

This recipe uses bacon that was sent to me by ButcherBox, a company that delivers 100% grass-fed beef and other protein to your door.  The company partners with a collective of small farms to deliver high quality products at an affordable price.

Butcher Box is a subscription service, so the boxes are mailed monthly.

 

The boxes come with 7-10 pounds of meat (20+ servings). There are a bunch of options: All Beef, Beef & Chicken, Beef & Pork, or Mixed (Beef, Chicken & Pork, which is what I received).

The Mixed box includes 100% grass-fed beef, organic chicken, and all-natural pork. Most of the meat comes frozen (the bacon was not), so you can stick it right in your freezer and eat when convenient for you. I’ll have future recipes using the rest of the ingredients in the box, but for now, they are in my freezer.

This recipe also includes the best way to make bacon, in my humble opinion. Making bacon in the oven allows you to make quite a bit at a time, and the bacon doesn’t shrink up as much as it cooks. On to the recipe!

Ingredients:

  • 1 pound dry navy beans, soaked in water overnight
  • 10 oz bacon, cooked and cut into bite sized pieces
  • 1/3 cup molasses
  • 1/2 cup ketchup
  • 1/4 cup Dijon mustard
  • 1/4 cup Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground cloves
  • 1 bay leaf
  • additional water or beef broth, as needed

Orzo with Crispy Pancetta and Chives

You can never have too many quick side dishes to help complete a meal. This one comes highly recommended by my husband; the first time I made it, I didn’t even get a taste because he gobbled up all of it before I could!

I changed the original recipe slightly because I was feeling particularly lazy and found diced pancetta in my supermarket. Everything else I kept the same.

Ingredients:

  • 2 1/2 ounces diced pancetta
  • 3/4 cup uncooked whole-wheat orzo (rice-shaped pasta)
  • 1 3/4 cups unsalted chicken stock
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 2 tablespoons chopped fresh chives, plus more for garnish

Grilled Corn with Chive Butter

Last night, we finally broke in our snazzy new Coyote Outdoor Grill; it’s about time I started the Coyote Challenge! (Granted, I just got back from my honeymoon; it’s difficult to grill when you’re in a different country!) We had friends along for the adventure, so we made a few simple items to try out the grill.

Despite it being July, none of us had eaten corn on the cob yet! So naturally, we decided to make a quick grilled corn with an easy chive butter to test out the vegetable/fish grates. There isn’t much to it, so this recipe for Grilled Corn with Chive Butter was the perfect way to try out the grill for the first time.

We also shared a huge delicious piece of steak that Steve (our grill-master for the evening) had marinated first in an IPA (yum) and then transferred it into a more traditional herbed marinade (double yum). It was so juicy and delicious!

There were some other yummy grilling experiments that took place, but discussion of those are for another post. On to the recipe!

Pistachio Crusted Salmon with Roasted Mustard Potatoes

If I was forced to eat one food for the rest of my life, I wouldn’t be terribly upset if it was salmon. That probably isn’t much of a surprise to those that follow this blog, I have almost 40 Salmon Recipes on here! So, I might as well add another one to the list, this recipe for Pistachio Crusted Salmon with Roasted Mustard Potatoes!

For whatever reason, I had a hankering for pistachios recently, so I figured I might as well crust my favorite protein in a pistachio-panko mixture, how bad could it be? Not bad. Not bad at all. In fact, delicious!

I made this salmon with some baby potatoes roasted in a stone ground mustard, so I added the mustard to the salmon as well to keep the flavors consistent. Since I whipped this up the first time, I’ve already made it twice more!

Ingredients:

For the potatoes:

  • 1.5 lbs baby potatoes (I used a baby potato “medley”), halved
  • cooking spray
  • 2 tablespoons stone ground mustard
  • salt and pepper, to taste

For the salmon:

  • 4 (6 oz) salmon fillets
  • 2 tablespoons stone ground mustard, divided
  • 1/4 cup pistachios, finely chopped
  • 1/4 cup panko breadcrumbs
  • salt and pepper, to taste

Creamy Mashed Potatoes

I come from an Irish family, so mashed potatoes are a very important part of every large family meal. If it was socially acceptable, I’d fill my plate just with mashed potatoes and gravy at holiday meals.

Mashed potatoes are quite a staple in my life, so I now find myself to be a bit of a mashed potato connoisseur. I like mine super creamy, but don’t necessarily want them loaded with butter to achieve that creaminess.

I personally like to add in Chobani® Non-fat Plain Greek Yogurt. Not only does it deliver the creaminess I am looking for, but it is high in protein (44% of your daily value to be exact) and is low in fat. The yogurt contains no artificial flavors or sweeteners and is only made with natural ingredients that are not genetically modified.

Chobani® Non-fat Plain Greek Yogurt is a simple and tasty substitute for any recipes that use sour cream, mayonnaise, or oil, making it a super versatile product. I almost always have a quart in my fridge for smoothies, baking, and creamy dressings.

This recipe is definitely a favorite of mine. It uses minimal ingredients and is really simple to make! You can also snazz it up however you’d like! I picked up all of my ingredients at Walmart; you can find Chobani with the other yogurts in the Dairy section.

We all have those nights where dinner is the last thing on your mind. On busy days (especially Mondays), I just don’t want to think up something for dinner, and  I don’t want to spend the money on delivery.

 

Having a main dish in the freezer, like Barber Foods Stuffed Chicken Breasts, is a lifesaver for busy days. I picked up a 6-pack of Barber Foods Chicken Cordon Bleu from my local Superfresh (you can find them in the freezer section) so that I’m set for future dinners. The stuffed chicken breasts are individually wrapped so you can make as many or as few as you want at a time. Barber Foods’ Chicken Cordon Bleu is a chicken breast stuffed with savory ham and Swiss and American cheese which is then breaded — they recently updated the recipe to go along with their new packaging, yum! The frozen raw chicken can go right in the oven from the freezer, so no preparation is needed. This allows me to get dinner going as soon as I walk in the door, so helpful!

 

I like to make a quick side dish to serve while the chicken is cooking, so for the Chicken Cordon Blue I decided to make sauteed green beans with garlic and toasted almond slices.

I used this as an opportunity to bring some of the “farm” into my little city condo. We typically eat dinner on the kitchen island, so I transformed our little space into a picnic! The tomatoes were so gorgeous, the ones not used for the meal became part of the tablescape, along with some of the fresh herbs I used in the recipes as well as a bouquet of flowers.

 

We had plenty of options to choose from, beginning with Gazpacho and then feasting on Zucchini Boats, Mediterranean Chicken Skewers, and Jalapeno Poppers. Our meal was complemented with a Sparkling Blueberry Pomegranate Cocktail, which was 1/2 oz St. Germain with Club Soda and a splash of Pomegranate Juice topped with Blueberries — so simple and really tasty!

I served the food on wooden boards to give it a more outdoorsy feel and we drank out of mason jars (which is actually the norm in my household anyways).

 

I still have plenty of ingredients left from this basket so I can’t wait to see what else I can make later this week! (Update: I made this Mushroom Pasta with Local Organic Cremini (Baby Bella) Mushrooms and Vera Pasta Bucatini Pasta; so good!)
