Blueberry Chia Seed Jam

I’m so excited to do a bit of canning this year, starting with this Blueberry Chia Seed Jam! I’m not terribly experienced at canning, but I’m getting the hang of it — it’s surprisingly easy, assuming you can follow directions.

This Blueberry Chia Seed Jam is an awesome “beginners” canning recipe, because it doesn’t use any pectin; the chia seeds add as the thickener.

In fact, you just might have all of the ingredients you need for this recipe already in your house!

Ingredients:

  • 6 cups fresh blueberries
  • the juice and zest of 4 lemons
  • 1/2 cup pure maple syrup
  • 1/2 cup chia seeds

Feta Dip

I’m on a bit of a feta kick at the moment. I absolutely love French feta, which is a bit more mild and creamier than the more tangy, crumbly version most people associate with feta cheese.

When I came across a recipe for Feta Dip, I loved the concept, and knew French Feta would be perfect for it.

This dip is a nice alternative to the normal dips found at parties. The flavors are similar to tzatziki; serve with toasted pita or pita chips.

Ingredients:

  • 12 oz French feta
  • 1 cup non-fat plain Greek yogurt
  • 8 oz  cream cheese, softened to room temperature
  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • the juice and zest of 1 lemon
  • 2 tablespoons chopped dill, plus more for serving
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 3/4 cup chopped deseeded cucumber
  • 1/2 cup multi-colored cherry tomatoes, quartered

Creamy Snap Peas with Feta

Some nights, you just want to sauté or grill up a protein and have a quick go-to side to make a nice meal without much effort.

So it’s always nice to have a few awesome sides in the rotation, like this recipe for Creamy Snap Peas with Feta.

Spinach Lemon Ricotta Pasta

Well. The weather refuses to act like spring.

But I’m sick of waiting for spring to arrive to make delicious spring food!

So this recipe for Spinach Lemon Ricotta Pasta has spring ingredients that are still comforting in chilly weather – spinach with a lemony ricotta sauce over fettuccine.

Ingredients:

  • 1 pound fettuccine
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 2 (5 oz bags) baby spinach
  • 1 cup whole milk ricotta cheese
  • 1/2 cup milk
  • 1/4 cup grated parmesan cheese

Sheet Pan Chicken with Cauliflower and Carrots

It probably comes as no surprise that I go through a lot of dishes when I cook in my kitchen. But the last thing I want to do after making a delicious dinner is to do a bunch of dishes!

Which is why I love finding one pot or sheet pan meals.

This recipe, adapted from Cooking Light, uses one sheet pan, two bowls, a cutting board, a whisk, a spoon, and a knife. That’s it!

Ingredients:

  • 6 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1 1/4 teaspoons salt, divided
  • 1 teaspoon light brown sugar
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper
  • 2 lemons, divided
  • 1 head of cauliflower, cut into florets
  • 1 (10 oz) package sliced rainbow carrots (or baby carrots, sliced

Linguine and Clams

I’m sure this happens to everyone: you go out and buy ingredients for a specific recipe, but then are left with “extras” from that recipe. Normally, it’s not a big deal and you can just incorporate it easily into another recipe. But when I went to make Sheet Pan Paella recently, my supermarket was only selling 50 packs of clams. That’s a lot of clams!

To use them up, I decided to make Linguine and Clams, but used what I had on hand to make it work. So, technically, I made spaghetti and clams. And it tasted just as good. 🙂

I love the relative simplicity of this dish. It also reminds me of my grandpa; linguine and clams were his favorite. So I was surprised that I hadn’t posted a recipe for Linguine and Clams on my blog yet. Time to fix that!

I adapted this version of Linguine and Clams from Bon Appetit.

Ingredients:

  • 1 heaping tablespoon salt
  • 12 garlic cloves, divided
  • 4 oz day old bread, cut into smaller pieces (I used half of a sandwich roll)
  • 2 tablespoons plus 1/4 cup olive oil
  • the zest of one lemon
  • 2 teaspoons anchovy paste
  • 1/2 teaspoon crushed red pepper flakes
  • 1/3 cup dry white wine
  • 2 dozen clams, scrubbed
  • 1 (16 oz) box linguine (or spaghetti)
  • 1/2 cup chopped parsley (I randomly had curly parsley on hand. Flat works too)
  • 2 tablespoons unsalted butter

Dark Chocolate Dipped Lemon Almond Sugar Cookies

Seven years ago today, I started this blog. How crazy is that? It started as a way to archive recipes I tried and what I liked about them, and eventually morphed into a way for me to learn how to cook and experiment along the way. 780 posts later, I’m still at it!

White Bean-Tahini Dip with Toasted Pitas

Cutting boards are a staple of any kitchen. They (of course) are used to cut, chop, mince, and dice vegetables, fruits, and protein for meals, but I love to also use them for presentation. There are some cutting boards, like this one from Planches Labell, that need to be shown off!

Labell boards are made from premium Canadian recovered/recycled hardwoods and are produced with the highest production standards. With the new abilities in wood manufacturing Planches Labell has the capacity to take this raw material, otherwise disposed of, and turn it into culinary works of art. Offerings include Rustic Tree-Cut Serving Platters, Paddle Boards, Utility Boards and Butcher Blocks.

To show off this beauty, I decided to make a White Bean-Tahini Dip inspired by a recipe I found on Food Network. This dip is very similar to hummus but uses cannellini beans instead of chickpeas. The added spices of cumin, za’atar, chile powder and garlic powder really amp up the flavor! (Za’atar, specifically the blend I used, is a combination of sumac, thyme, sesame, and salt.)

Ingredients:

Toasted Pita Chips:

  • 2 teaspoons ground cumin
  • 2 teaspoons za’atar
  • 1 teaspoon chile powder
  • 1 teaspoon garlic powder
  • 4 pitas
  • 2 tablespoons olive oil

White-Bean Tahini Dip:

  • 1 (15 oz) can cannellini beans, drained with liquid reserved
  • 1/2 cup tahini paste
  • 1/2 teaspoon anchovy paste
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon of reserved spices
  • 1/4 teaspoon ground pepper
  • 1 lemon, zested and juiced
  • 1/4 cup olive oil
  • minced chives, for garnish

Other:

  • Baby carrots
  • Broccoli florets
  • Cut celery
  • Grape Tomatoes

Lemony Red Lentil Soup

Note: I was sent a box of various Bob’s Red Mill products to make the below recipe. Opinions are mine alone. 

Lentils are one of those foods that I wish I had experimented with earlier in my cooking. They are easy to cook, really tasty, and packed with nutritional goodness. Just one serving (1/4 cup) of red lentils has 14g of fiber and 13g of protein. Red lentils in particular are great for soups and stews because they cook really quickly and break down when heated, making for a nice thickened base.

This Lemony Red Lentil Soup is adapted from a New York Times Cooking recipe. I mostly kept to the original recipe, but increased the spice and lemon and added in another carrot.

The half chunky half smooth soup is super comforting and makes for a really satisfying lunch or dinner.

My friend and I made this during our cooking day and froze it for future meals.

Ingredients:

  • 3 tablespoons olive oil, plus more for drizzling
  • 1 large onion, chopped
  • garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon kosher salt, more to taste
  • 1/2 teaspoon ground black pepper
  •  1/4 teaspoon ground chile powder, plus more for garnish
  • 1 quart chicken broth (or vegetable broth to make vegetarian)
  • 2 cups water
  • 1 cup Bob’s Red Mill Red Lentils
  • large carrots, peeled and diced
  •  The juice and zest of 2 lemons
  • 3 tablespoons chopped fresh cilantro, plus more for garnish

Old Fashioned Cupcakes

September is Pediatric Cancer Awareness Month, so I’m sharing this recipe a bit ahead of time. Every year, OXO donates up to $100,000 to support an organization called Cookies for Kids’ Cancer. The organization was founded by two OXOnians (OXO employees) who were inspired by their son Liam’s battle with pediatric cancer, a disease which claims the lives of more children in the US than any other disease. Cookies for Kids’ Cancer provides inspiration and support to allow anyone to easily get involved in fundraising to find a cure for pediatric cancer.

To help reach their goal, OXO donates $100 to Cookies for Kids’ Cancer for each blogger who posts a recipe to bring awareness, up to their $100,000 commitment. I’ve posted twice a year for the last few years to help bring awareness to Cookies for Kids’ Cancer. Click here to see some of my past posts.

I wanted to make a new, fun, and different cupcake to try out all of these cool tools. My husband and I are huge fans of Old Fashioned Cocktails, so I decided to turn those flavors into Old Fashioned Cupcakes! Note: the frosting contains alcohol so this is not a kid-friendly recipe.

To bring in the flavors of an Old Fashioned, I made a Vanilla-Orange Cupcake and topped it with Bourbon-Orange Cream Cheese Frosting. To finish it off, I added a maraschino cherry and some orange peel.

Ingredients:

Vanilla-Orange Cupcakes: (adapted from a Martha Stewart Recipe)

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup sugar
  • vanilla bean, split and scraped out
  • the zest of 1 navel orange
  • 2 large eggs, at room temperature
  • 3/4 cup heavy cream
  • 1/4 cup freshly squeeze orange juice
  • 1 tablespoon pure vanilla extract
  • 2 cups all purpose flour (I used Bob’s Red Mill Unbleached All Purpose White Flour)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Bourbon-Orange Cream Cheese Frosting:

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 (8 oz) package cream cheese, softened
  • 4 cups powdered sugar
  • 1/4 cup bourbon
  • the zest of 1 navel orange

Other ingredients:

  • peels from 1 navel orange
  • 12 maraschino cherries

Beef Kofta Kebabs

This past weekend, we had my parents over for dinner. I had a hankering for Lamb Kofta, which is a dish of ground lamb with spices formed into meatballs and grilled.

My dad isn’t exactly the most adventurous eater, and doesn’t like lamb, so I instead decided to adapt the spices added to kofta into a marinade for beef kebabs. Kofta can be made with any ground meat, but I had some beautiful  Moyer Beef’s Rib Kebab meat on hand, so kebabs it is!

Kofta can be made with quite a range of spices, so this recipe is very adaptable. This version uses fresh parsley as well as dried spices to add a different dimension of flavor. I also served it with some tzatziki for dipping.

Ingredients:

Tzatziki (omit to make dairy free):

  • 1 cup plain low-fat Greek yogurt
  • 1/2 cucumber, seeded, finely diced
  • 1 garlic clove, minced
  • the zest of one lemon
  • the juice of one lemon
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill, chopped
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Kebab:

  • 4 cloves of garlic, roughly chopped
  • 1/4 cup chopped yellow onion
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 cup olive oil
  • 2 lbs kebab meat (I used Moyer Beef’s Rib Kebab meat)

Grilled T Bone Steak with Gremolata

One of my favorite parts of working with Moyer Beef this summer is that I am trying cuts of beef I’ve never had before, like a T-bone steak. T-bone steak is a bone-in steak and includes the strip loin and tenderloin; it’s named a T-bone, because, well, the bone looks like a T.

T-bones are considered pretty high-quality steaks, and as such, don’t need much effort to make them taste amazing. They are also huge (in my opinion), usually 16-24+ ounces. So I invited over some friends to help my husband and me enjoy our bounty (they didn’t seem to mind too much).

For these steaks, I decided to add a simple dry rub and top with gremolata to add some freshness. Because it was absolutely beautiful this weekend, there was no way I wasn’t grilling them outdoors! The result was this Grilled T Bone Steak with Gremolata.

Ingredients:

  • 2 t-bone steaks (I used Moyer Beef’s T-Bone Steaks)

rub:

  • 2 tablespoons smoked paprika
  • 1 tablespoon chile powder
  • 1 tablespoon salt
  • 1 tablespoon black pepper

gremolata:

  • 1/4 cup fresh parsley, finely chopped
  • 1 tablespoon fresh tarragon, finely chopped
  • the zest of 1 lemon
  • 3 garlic cloves, finely minced

Grilled New York Strip Steak with Honey-Tarragon Blue Cheese Butter and Grilled Tarragon Potatoes

First up, I decided to make a grilled meal using Moyer Beef’s Angus New York Strip Steaks. New York Strip Steak is also known as Kansas City Strip Steak or Ambassador Steak in the US and Sirloin Steak or Porterhouse Steak in Europe.  This cut is particularly tender and flavorful. Angus New York Strip Steak, known for their marbling, are even more flavorful (marbling = flavor). This cut of steak comes from the short loin, along the back of the cow. (Fun fact = a T-bone steak is a New York Strip Steak with the bone and tenderloin still attached.)

So, in my opinion, the flavor of a New York Strip Steak should be allowed to mostly shine on its own. Adding a bit of fancy butter on top won’t hurt though, right?

Playing off the flavors of the Honey-Tarragon Blue Cheese Butter, I also made Grilled Tarragon Potatoes to go with the steak. The result is these crave worthy recipes for Grilled New York Strip Steak with Honey-Tarragon Blue Cheese Butter & Grilled Tarragon Potatoes!

 

Ingredients:

Steak: (serves 2, multiply as needed)

Honey-Tarragon Blue Cheese Butter: (serves up to 8)

  • 1 stick (1/2 cup) salted butter, softened to room temperature
  • 1/4 cup crumbled Blue Cheese (I used a Smokey Blue Cheese to highlight the grilling flavor)
  • 1 teaspoon honey
  • 1 teaspoon fresh tarragon, finely chopped
  • 1/8 tsp black pepper

Grilled Tarragon Potatoes: (serves 2, multiply as needed)

  • 12 oz baby potatoes, halved (I used tri-color potatoes)
  • 1/2 shallot, finely chopped
  • 2 teaspoons fresh tarragon, finely chopped
  • 1 tablespoon salted butter
  • zest from 1 lemon
  • salt and pepper, to taste

Pomegranate Glazed Lamb Meatballs

My goodness the holidays are approaching quickly. What happened to 2016?!

This is the time of year for parties and of course party appetizers. This party appetizer for Pomegranate Glazed Lamb Meatballs is so simple to make, but it is fancy enough to serve at a dinner party.

I found this recipe in New York Times’ cooking section and just had to try it out. Lamb meatballs with a pomegranate molasses glaze? Sign me up!

I served the Pomegranate Glazed Lamb Meatballs with some plain Greek yogurt with mint leaves mixed in, simple but a great complement!

Ingredients:

Lamb Meatballs:

  • 1 tablespoon olive oil
  • 1 pound ground lamb
  • 1 garlic clove, minced
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • the zest of 1 orange
  • 3 tablespoons pomegranate molasses (recipe below)
  • 1/2 cup 2% plain Greek yogurt
  • 1 tablespoon fresh mint leaves, chopped
  • 2 tablespoons pomegranate seeds, for garnish
  • Chopped fresh mint, for garnish

Pomegranate Molasses:

  • 2 cups pomegranate juice
  • 1/4 cup sugar
  • 2 tablespoons lemon juice

Cranberry Pomegranate Sauce

 

My house is filled with pomegranates and pomegranate arils. Being a food blogger is tough 🙂

Thanksgiving is tomorrow, so I wanted to share a recipe for one of my favorite Thanksgiving dishes: cranberry sauce!

This recipe uses pomegranates two ways: in a pomegranate molasses and as whole arils, or seeds. Pomegranate molasses can be found in well-stocked grocery stores or Middle Eastern food stores. But I also show you how to make it below if you so wish.

Ingredients:

Cranberry Sauce:

  • 1 bag (16 oz.) cranberries, thawed if frozen
  • 2/3 cup packed dark brown sugar (or light brown sugar to make less sweet)
  • 4 tablespoons pomegranate molasses (recipe below)
  • 3 sprigs fresh thyme
  • 2 containers POM POMS Fresh Arils (about ~1.5 cups)
  • the juice and zest of 1/2 lemon

Pomegranate Molasses:

  • 2 cups pomegranate juice
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
