I love fall treats, but I can’t really justify making a whole apple pie for just my boyfriend and I; we would be eating it for days! So I love that this month’s Cooking Light had a recipe for mini spiced apple two bite tarts that I can also share with friends. I adapted the recipe slightly, adding some more fall spices. I also didn’t have any 1% milk on hand so I substituted heavy cream. I also topped mine with mascarpone instead of crème fraîche because I thought it would taste great with these tarts.
These are really easy to make; the most difficult part (a.k.a. most time consuming) is dicing the apples. But you definitely want to cut them nice and small so that they fit in the tarts. You also need a mini cupcake tin for this, but you can adapt it to make normal cupcake sized ones if you wanted, just increase the baking time.
Ingredients:
CRUST
1/3 cup sugar
1/4 cup unsalted butter
2 tablespoons canola oil
1 tablespoon heavy cream
1/2 teaspoon vanilla extract
1/4 teaspoon salt
4.5 ounces all-purpose flour (about 1 cup)
1/3 cup very finely chopped toasted pecans
Baking spray with flour
FILLING
2 cups finely diced peeled Granny Smith apple (~4 apples)
With Thanksgiving fast approaching, I wanted to do a post about Traveling with Food and Drinks for Thanksgiving. My family meets in North Jersey for Thanksgiving, with most of us bringing a side or dessert along with us. My aunt and uncle who host Thanksgiving still get stuck with a lot of the work, but every little bit helps. This year, I am still trying to decide what dessert I will bring. Although my number one job is still to mix up my grandpa’s famous recipe for Bloody Mary’s; priorities! 🙂

My friends and I also met for a “Friendsgiving” last year. It was potluck, with the hosting house making the turkey and the rest of us signing on to do sides, drinks, and desserts. It was so fun to see a spectacular Thanksgiving meal come together as people brought in their creations, dish by dish.
Keeping cold foods cold and warm foods warm while traveling is crucial and can be kind of difficult. Also trying to choose what to bring can be tough too; you don’t want to bring something that requires a lot of assembly when you arrive. I have included some of my favorite past recipes below that would be perfect for Thanksgiving, along with how to pack up the food for travel. As a member of the Target Influencer Network, I thought it would be helpful to include some Target products that help make transporting the food and drinks a lot easier as well!
Drinks:
I brought this Applejack-Spiked Hot Apple Cider to Friendsgiving last year and it was a hit! Just prepare at home and fill a Thermos (like this 40 oz Thermos). If you want, you can bring a carafe to transfer the cider to for serving, or for short distances you could just use the carafe to transport as well.
Pumpkin Eggnog is the perfect way to enjoy the flavors of fall. This is served cold, so be sure to store it in the Thermos already chilled. You can stir in the pumpkin vodka before leaving, or keep it separate so that you also have a non alcoholic version to serve.
Every year around Christmas, my aunt and uncle serve Wassail, a mulled wine that is just so comforting. So why not extend its usage to Thanksgiving as well? This is best warm so keep in the Thermos. You may want to warm it up when you arrive as well. It works great kept in a slow cooker on low; this 2 quart Crock Pot would be great and not take up a lot of room!
Sides:
Every Thanksgiving dinner needs cranberry sauce! And there is nothing wrong with the canned version. But, if you want to add some pizzazz to your cranberry sauce this year, this Slow Cooker recipe is really tasty and makes a bunch.
The best part is that it is really easy to transport. Just spoon the cranberry sauce into a 24 oz. Ball jar, screw on the top tightly, and you’re good to go. Cranberry sauce should be kept refrigerated, so just pop it into a cooler, like this Igloo Roller Cooler, with some ice packs and it will stay cold while traveling.
This Green Bean Casserole with Mushrooms replaces the traditional canned mushroom soup and tops it with homemade onion rings. This can surprisingly travel pretty well! You just might need to reheat it when you arrive. I’d suggest putting it under the broiler for a minute or two before serving to crisp up the onion rings as well. The Anchor Hocking Bake ‘N Take is perfect for transporting this meal and any other casseroles you may have; the 6-piece set has 2 baking dishes with lids, a hot-or-cold pack and an insulated carrying case. You can cook the casserole in the baking dish and then transport it inside the case.
These Horseradish Cheddar Mashed Potatoes with Bacon and Apples are a great spin on traditional potatoes. The sweetness of the apples balances out the flavor from the Horseradish Cheddar cheese making this one people will come back for seconds (or thirds)! To transport, keep the mashed potatoes separate from the topping. Store each in an airtight container, such as containers from Sterilite’s Ultra-Seal line. You can make this a day or so ahead and just reheat when you arrive at your destination. After heating each component separately, top the mashed potatoes with the bacon and apple mixture.
Desserts:
These Mini Preserves Tarts can be made a couple of days ahead of time. My family sets up desserts buffet style, and everyone goes down the line taking a little bit of everything. These mini tarts are great for our set up, allowing us to have a tiny bite without taking up too much precious space on our plates. We can always come back for more if we want!
Because the crust can be a bit delicate on these, the best way to store them would be in a shallow container with a lid so that they can be arranged flat. I love using my Pyrex Storage Set to transport tarts and the like; I usually use the square containers and just line up the tarts inside. This Rubbermaid Food Storage Container would work great as well if you’re making a few batches!
Trifles can be a bit more difficult to transport but this Gingerbread Chocolate Pumpkin Trifle is worth the extra care. Be sure to get a sturdy trifle bowl like this Luigi Bormioli Footed Trifle Bowl and cover tightly with plastic wrap. Be sure to bring some extra crumbs and pecans in case you need to fix the top when you arrive. If you are traveling a relatively long distance and need to keep it cold, put it in your cooler first and fit the ice packs around it. Add in a towel in the empty spaces to keep it from moving around too much.
These Nutella Swirled Pumpkin Cheesecake Bars are one of my favorite desserts I’ve ever made. They are that good! Traveling with them is easier than you’d think. You can either keep them in the container you baked them in, cover with plastic wrap, and cut when you arrive, or you can cut them up and place a layer in a container like the Ziploc Versa Glass Container. To stack additional bars, add a layer of wax or parchment paper on top of the bars, add more bars, and repeat.

Lightly dust a work surface with flour; roll out dough to just thinner than 1/4 inch (6 mm). Using a round cookie cutter, cut out shapes and press into a mini cupcake tin. (I used a 2 1/2″ round biscuit cutter)
Use a fork to press down the dough around the edges of each mini cupcake tin. Fill each with 1 teaspoon preserves.
Lightly brush exposed dough with heavy cream. Bake until golden brown, 20 to 25 minutes. Transfer tarts from tins to a wire rack to cool. Let cool completely before serving.
These are perfect little bites! The crust is light and fluffy and help highlight the delicious sweetness of the preserves.
You get a hint of the almond extract which is a great complement to fig and plum. If you don’t have almond extract you can sub in some vanilla extract.

Because it is September and it hasn’t completely cooled off just yet, I thought I’d go for a chilled dessert. I have wanted to make Pumpkin Cheesecake for a while now and this seemed like the perfect opportunity. But to make it a little more special, I decided to swirl in some Nutella.
Just because Thanksgiving has passed doesn’t mean I can continue to deliver pumpkin-y goodness on this blog. This recipe for Chocolate Pumpkin Pie was featured on The Chew and I just loved the idea of it but wanted to make it a little bit my own, so instead I went with Chocolate Swirled Pumpkin Pies.
I didn’t want the pumpkin flavor to be lost in the chocolate so I decided to swirl a bit in at the end. And, because I’m apparently on a mini kick, I went with mini Chocolate Swirled Pumpkin Pies!
Ingredients:
3 oz Semisweet Chocolate Chips
2 tablespoons Unsalted Butter (cut into small pieces)
I need more sides in my life. Couscous is a great weekday choice because it’s so quick to make, maybe 20 minutes in total. This recipe is from the Fresh & Healthy DASH Diet Cooking Cookbook which I absolutely love. The DASH (Dietary Approaches to Stop Hypertension) diet was developed by the National Heart, Lung, and Blood Institute a encourages increasing whole grains, nuts, fruits, vegetables, low-fat dairy and lean proteins and minimizing processed gains, high-fat meats and dairy, sugars and sodium… which is basically more just eating healthy versus a diet.
This couscous recipe is made with vegetable broth to give it some flavor with bites of pine nuts, dried cranberries, and scallions.
I wanted to make another batch of the Applejack Spiked Hot Cider but *gasp* I couldn’t find any apple cider anywhere! There must have been a Thanksgiving rush, but I wanted some darn Apple Cider. But then I remembered I bought a Babycakes Cake Pop Maker (paid link) and figured I could at least make Apple Cinnamon Donut Holes as a sweet apple-y substitute. (Because I couldn’t find apple cider, I substituted apple juice)
One of the best parts of Thanksgiving doesn’t even take place on Thursday. I (and I’m assuming many others) look forward to the leftovers as much as the original meal. Friday always includes a Thanksgiving sandwich (which you can actually get a version of in Delaware all year long at Capriotti‘s called the “Bobby” mmm). Saturday tends to be my own version of the Wawa Turkey Bowl. By Sunday, I’m starting to run out of creative ways to mush my leftovers into a new meal.
The makers of Clos de los Siete came to my rescue! Clos de los Siete is an Argentine red wine that is made from seven vineyards in the foothills of the Andes. The wine is a mixture of 57% malbec, 15% merlot, 15% cabernet sauvignon, 10% syrah and 3% petit verdot that is a really nice complement to turkey. Azul Argentine Bistro in New York created a recipe that uses Thanksgiving leftovers along with some spices to create Wine Infused Thanksgiving leftover Empanadas, how fantastic does that sound?
Ingredients:
1 green pepper, finely chopped
1 red pepper, finely chopped
1 medium white onion, finely chopped
1 garlic clove, minced
1 sweet potato, peeled and finely diced (about 1 cup)
1 pound turkey breast, shredded (about 1 cup)
1 teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon cumin
1/4 teaspoon smoked paprika
1 tablespoon olive oil
1 cup Clos de los Siete wine
1-2 packages store-bought empanada discs (note: mine have annatto in them which is why they are orange)
I’ve got turkey on the brain with Thanksgiving fast approaching and I wanted to do a post that used turkey. But if you’re like me, you don’t have 15 people around to help me eat an entire roasted turkey. So instead, why not make an Herb Infused Turkey Breast?
This recipe for Herb Infused Turkey Breast is cooked using the Ninja Cooking System, I thought it was a fantastic alternative for a smaller Thanksgiving. If you don’t have a Ninja Cooking System, you can still make this recipe; you’ll just need a saute pan that is also oven safe.
It isn’t Thanksgiving without cranberry sauce. We’ve always had the canned cranberry sauce at my Thankgivings growing up; I honestly believed the ridges from the can were there so I knew where to cut. I am all for the canned version, but I thought I’d attempt to make a homemade version in my slow cooker. I based it slightly off of Cooking Light’s Classic Cranberry Sauce but changed up a few ingredients and the method of cooking.
I love a good mashed potato recipe. They are definitely my favorite part of the Thanksgiving meal. Classic mashed potatoes will always be a favorite of mine, but this recipe from Nigella Lawson that I found on The Chew sounded really fantastic. My aunt and uncle always use horseradish cheddar in their mashed potatoes and I love the tanginess that the horseradish brings. I thought it would be the perfect complement to the sweetness of the apples.
Ingredients:
4 1/2 lbs Yukon Gold potatoes
1 cup whole milk
1 – 1 1/2 cup horseradish cheddar cheese
1/2 cup shallots, chopped
2 fuji apples
4 strips of bacon
Salt and pepper, to taste
2 tablespoons butter
You need a red apple that can stand up to being sauteed and maintain its shape. Look for Liberty, Fuji, Jonagold, or Pink Lady apples.
Bring a salted pot of water to a boil. Peel your potatoes. Cut into smaller pieces and add to the pot.
Boil the potatoes for 30 minutes or until fork tender.
While waiting for the potatoes to cook, add the bacon to a saute pan over medium heat. Heat until cooked through, turning once, about 10 minutes.
Remove the bacon from the pan and add to a plate lined with paper towels. Roughly chop.
Add the shallots and the apples to the saute pan with the bacon drippings.
Saute over medium-low heat until the apples are tender, about 10 minutes. Remove from heat and keep warm. Mix with the chopped bacon.
Once the potatoes are cooked, drain. Take the pot that you used to boil the potatoes and add the 1 cup whole milk over low heat. Using a ricer or potato masher, mash the potatoes back into the pot, stirring to combine with the milk.
The horseradish cheddar I used was really soft so I just broke it into smaller pieces and mixed into the potatoes. If you have a harder version, you can grate the cheese and add it in, mixing to combine. Add the butter and mix to combine. Season with salt and pepper.
Top with the bacon and apples.
I had no idea apples would go so well with mashed potatoes! The slight sweetness with the shallots was such a perfect complement to the subtle tang of the horseradish cheddar. And obviously, everything is better with bacon.
This would be a fantastic spin to traditional mashed potatoes for Thanksgiving without adding too much extra work to your day. You could make the mashed potatoes and the bacon and apple mixture both the day before. The day of, you can heat both separately and then top the potatoes with the mixture.

The only upside to the colder weather, is that it is now appropriate for me to make eggnog. And not just any eggnog, but pumpkin eggnog. Pinnacle Vodka came out with a pumpkin pie vodka this year, and I’ve been waiting and waiting for the right weather to make this drink. I actually used a recipe that came from The Cookbook of Ellen M Emlen, which is a recipe book from from the 1860’s that The Historical Society of Pennsylvania found in their collection. I’ve written about this cookbook before on this blog and I just love it.
One of the issues in the cookbook though, is that it is written before standard measurements were invented so the recipes aren’t easily reproduced. (For example, this recipe called for a wine-size glass of milk. White wine or red wine glass? Completely full, or what a serving in the glass would be? You get the picture.)
But I figured if it was good enough for the 19th century, it’s good enough for me!
Every Christmas, my mom makes an absolutely delicious trifle to give to neighbors and have for dessert on Christmas day. This trifle is so ingrained in our winter holidays that I’m pretty sure we aren’t allowed to show up to my aunt and uncle’s house without the trifle in hand. I’ve always loved the simplicity of trifles and wanted to try out a version using my favorite ingredient: pumpkin!
I was given the opportunity to enter a contest with nine other bloggers. The challenge is to use Walkers Shortbread products to make a new dessert, and luckily one of the categories was trifle! It was a sign!
My mom’s trifle has custard, chocolate pudding, and rum-soaked pound cake slices with whipped cream and fruit on top. So I wanted to keep the general concept the same with my recipe. I decided to keep the chocolate pudding because, well, who doesn’t love chocolate pudding? A thought a pumpkin mousse would just be fantastic. I decided to make it a bourbon pumpkin mousse to add an extra layer of flavor. And of course instead of pound cake slices, I used Walkers’ Stem Ginger Biscuits and Pure Butter Shortbread. The trifle is topped off with whipped topping, pecan pieces, and a some more Walker’s cookie crumbs.
Ingredients:
1 box Walker’s Stem Ginger Biscuits
1 box Pure Butter Shortbread
3 cups milk
2 packages instant chocolate pudding
1 (15 oz) can pumpkin puree
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/8 teaspoon allspice
1 teaspoon vanilla extract
8 ounces (1 package) cream cheese
1/4 cup firmly packed brown sugar
2 cups whipping cream
2 ounces bourbon (can omit if you’d like)
1/4 cup sugar
1 container whipped topping
1/4 cup pecans, roughly chopped
Begin by preparing your ingredients. Thaw your whipping cream. Roughly chop the pecans and set aside. Crush the biscuits and shortbread in separate ziploc bags, using a rolling pin.
Take one tablespoon of the stem ginger biscuit crumbs and set aside. Combine the remaining biscuit crumbs with the shortbread crumbs.
Prepare your chocolate pudding. Combine the two packs of instant pudding mix with three cups milk.
Mix for two minutes with a whisk. Refrigerate until ready to use.
In a large bowl, combine 1 can pumpkin puree, the spices, vanilla extract, cream cheese, and brown sugar using a hand mixer.
In a separate bowl, make whipped cream. Add two cups heavy whipping cream, 2 ounces bourbon, and 1/4 cup sugar and whip on high speed until soft peaks form (about 3 minutes).
Fold the whipped cream into the pumpkin mixture. Refrigerate until ready to use.
Time to assemble! These are photos from my test batch so take note that I might be pointing out what I changed in comparison to the photo. Oh the joy of recipe development. You’ll need a clear bowl to get the full effect of the trifle.
Arrange a layer of cookie crumbs at the bottom of a glass or plastic (see through) bowl. You want to be able to see it coming up the edges. (I initially added melted butter to form more of a crust. But that made the crumbs super sticky, so leave that out)
Add a layer of chocolate pudding next. I attempted to put the pumpkin mousse first, which was silly. The pudding is much heavier than the pumpkin mousse and sank into it. So go pudding, pressing it against the sides of the bowl, and then put the pumpkin mousse on top.
Continue this process until the bowl is filled. (Crumbs, pudding, mousse). I made a mini version so it didn’t take much to fill mine up. Top with the whipped topping.
Rim the bowl with crushed pecans.
Sprinkle with the reserved ginger biscuits. I’d suggest refrigerating for a few hours to let the flavors meld together. You can also make it mostly ahead of time and just assemble a few hours before eating.
You clearly don’t have to have a steady hand to make these still look cool, although I do wish mine was a bit more uniform layer-wise. Ah well.
They are also easy to assemble as individual servings.

Rim the bowl with crushed pecans.
Sprinkle with the reserved ginger biscuits. I’d suggest refrigerating for a few hours to let the flavors meld together. You can also make it mostly ahead of time and just assemble a few hours before eating.
Well, we are apparently forecasted to get hit with yet another nor’easter on Halloween. I remember as a kid, some houses would serve us hot cider to keep us warm while trick-or-treating. Those (along with the houses with candied apples and tons of Reeces) were my favorite. Now that I no longer go house to house on Halloween, nor do I even get trick-or-treaters, I wanted to make a more adult hot cider to enjoy during the crummy weather, or Applejack Spiked Hot Cider, to be specific.

One of my favorite parts of reading other blogger’s pages is checking out the “about me” sections of their blogs. It’s always so interesting to read how bloggers began cooking, how they decided to start and blog, and what else in life interests them. So when I was offered a copy of White Jacket Required: A Culinary Coming-of-Age Story written by Jenna Weber of the wonderful blog Eat Live Run I couldn’t wait to dig in!
The book follows Jenna as she graduates college and makes the decision to go to culinary school to fulfill her dream of becoming a food writer. The book allows the reader a deep dive into Jenna’s journey to follow her dreams while dealing with life along the way. Like me, Jenna seems to pinpoint specific times in her life by food that sticks out from that time period. Throughout the book, her story is peppered with delicious recipes from her childhood as well as recipes she developed through her career.
One of the recipes stood out to me: Jenna’s recipe for Pumpkin Whoopie Pies. I am pumpkin obsessed, and I have wanted to make whoopie pies for a while now but was always kind of intimidated by them. Jenna’s recipe seemed approachable so I took the plunge.
I’m pretty sure whoopie pies can now be found basically everywhere but they originally hail from the Pennsylvania Dutch. (I gotta tell you, the Philadelphia area really has some awesome food. It’s no wonder I became a food blogger with all this inspiration surrounding me!) Whoopie pies are just cake-like cookies with creamy goodness sandwiched in between. They are oh so fluffy and just, well, make me happy. So let’s see if I can do them justice..
