Green Bean Casserole with Mushrooms
Ingredients
For the fried onions:
- 1 medium sized yellow onion, thinly sliced
- 1 cup flour
- 1 teaspoon paprika
- Salt & Pepper to taste
- 1/2 cup milk
- Canola Oil
For Green Beans:
- 1 1/2 pounds green beans, trimmed and halved crosswise
- 2 tablespoons olive oil
- 2 cups chopped sweet onion
- 2 teaspoons dried oregano
- 4 ounces shiitake mushrooms, stemmed and sliced
- 1 (8-ounce) package presliced baby bella mushrooms
- 1/3 cup dry sherry
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons all-purpose flour
- 1 cup fat-free, lower-sodium chicken broth
- 1/2 cup (2 ounces) grated fresh Parmigiano-Reggiano cheese
Mashed Potatoes with Mushroom Sauce
- 8 medium-size red potatoes, peeled and quartered
- 2 cups half-and-half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup butter or margarine, softened
- 2 teaspoons chopped fresh chives
- 2 teaspoons chopped fresh parsley
Mushroom Sauce:
- 2 teaspoons butter
- 2 garlic cloves, minced
- 1 container of sliced cremini (baby bella) mushrooms
- 1/2 teaspoon chopped fresh thyme
- 2 tablespoons balsamic vinegar
- 1 tablespoon water
- 1 teaspoon low-sodium soy sauce (or coconut aminos to make gluten free)
- Salt and pepper, to taste
Mushroom Risotto
- 1 tablespoon butter or olive oil
- 2 cups assorted mushrooms, sliced (I used oyster, shiitake, portobello & trumpet)
- 1/2 a small onion, chopped
- 1 cup arborio rice
- 1/3 cup white wine
- 4 cups chicken stock
- 4 tablespoons Parmesan cheese
- Salt and pepper, to taste
- Parsley, chopped (for garnish)
Pumpkin Spice Cupcakes
I am so excited that pumpkin season is back, and to share this recipe for Pumpkin Spice Cupcakes with Cinnamon Cream Cheese Frosting! I eat/drink pumpkin flavored things all year, but September through December are when I can truly indulge in my pumpkin obsession.
To kick off the season in style, I decided to make pumpkin cupcakes.
The cupcake recipe is adapted slightly from Annie’s Eats recipe for Spiced Pumpkin Cupcakes and the icing is an adaptation of a Cinnamon Cream Cheese Frosting from Kraft.
Pumpkin Spice Cupcakes:
- 2 2/3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon pumpkin spice
- 1/8 teaspoon grated nutmeg
- 1/8 teaspoon ground cloves
- 1 teaspoon salt
- 2 Green Mountain Pumpkin Spice K-Cups (about 3 tablespoons?)
- 1 15 oz can pumpkin puree
- 1 cup sugar
- 1 cup packed dark brown sugar
- 1 cup canola oil
- 4 large eggs, at room temperature
Cinnamon Cream Cheese Frosting:
- 1 8 oz. package of Cream Cheese, softened
- 1/4 cup butter, softened
- 1 teaspoon vanilla extract
- 1 16 oz package of powdered sugar
- 1 teaspoon ground cinnamon
Garlic and Dill Smashed Potatoes
1 tablespoon chopped dill (plus more for garnish)
Green Beans with Garlic and Pecans
Ingredients:
- 1 pound green beans
- 3 garlic cloves, thinly sliced
- 1 tablespoon butter
- 1 teaspoon olive oil
- 1 tablespoon chopped pecans
- Salt and pepper to taste
Garlic and Rosemary Smashed Potatoes
Truffled Roasted Potatoes
Ingredients:
1 small container of red potatoes, washed and quartered
2 tablespoons olive oil
2 garlic scapes, chopped
Salt and pepper, to taste
1 tablespoon white truffle oil
1 teaspoon each of chopped fresh thyme leaves, sage leaves, and rosemary
Preheat your oven to 450 degrees. Wash your red potatoes thoroughly, but gently. (The skin of red potatoes is fragile). I used a little brush to lightly buff off the dirt under warm running water.

Cut the potatoes into wedges: quarters for the larger potatoes, and halves for the smaller potatoes, and arrange on a cookie sheet.
Drizzle olive oil over the potatoes and sprinkle with garlic scapes, salt and pepper.
Bake at 450 degrees for 30 minutes or until the potatoes are brown and slightly wrinkled.
While the potatoes are cooking, chop your thyme, sage, and rosemary. Combine.
Remove the potatoes from the oven, drizzle with truffle oil, and sprinkle with the herb mixture.
This was fantastic. I honestly couldn’t stop eating the potatoes. Truffle oil is such a great ingredient, although it is a bit of a splurge. Truffle oil is usually added at the end of a dish, the oil is too delicate to be subjected to high heat. A little bit of truffle oil goes a long way though so do not overpour! When I make this recipe in the future, I plan on using normal minced garlic (2-3 cloves), the garlic scapes were quite burnt from the oven so I didn’t get any of the garlic taste from them. Boo.
Lemon Broccoli
- 1 head broccoli, cut into bite-sized florets
- 1/2 teaspoon salt
- 1 tablespoon extra-virgin olive oil
- Juice and zest from 1 lemon
- 1/4 cup grated Parmesan cheese
Slow Braised Collard Greens
Ingredients:
3 slices of applewood-smoked bacon
1/2 cup chopped onion (I used about 1/3 of an onion)
1/4 teaspoon crushed red pepper, more for additional heat
1/4 teaspoon salt
6-10 leaves of collard greens, torn with the tough stem removed
1 cup chicken broth
1/2 cup water
1/4 cup white wine
1 1/2 tablespoons white vinegar (I used rice vinegar)
Begin by cooking your bacon in a Dutch oven over medium heat.
Cook until crisp, about 10 to 15 minutes.
Add the onion to the bacon drippings in the Dutch oven.
Stir in the crumbled bacon, broth, water, wine, and vinegar.
Cover, reduce heat, and simmer for 1 hours or until greens are tender.
Spinach with Pine Nuts and Golden Raisins
Ingredients:
1/2 cup boiling water
1/3 cup golden raisins
4 cups spinach
2 tablespoons water
1 teaspoon olive oil
2 large garlic cloves, minced
Salt and pepper, to taste
4 teaspoons pine nuts, toasted
First place golden raisins in a bowl. Add 1/2 cup boiling water and let stand for 15 minutes or until raisins expand. Drain and set aside.
Heat a large pot or Dutch oven over medium-high heat. Add the spinach and 2 tablespoons water.
Cook for 3 minutes or until the spinach wilts.
Cook for 1 minute or until heated. Stir in pine nuts and serve.
Smoky Asparagus and Mushroom Saute
I had some left over asparagus from making the Orzo Risotto with Buttery Shrimp dish a few days ago so this dish was perfect to use ingredients I mostly had on hand.
- 2 slices bacon
- 1 tablespoon butter (omit to make dairy free)
- 3 oz quartered fresh morel mushrooms
- 3 oz chopped hen of the woods
- 1 pound asparagus, cut into 1 inch pieces
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 3 tablespoons chopped chives
