Cardamom Glazed Carrots

Carrots are a staple on most Thanksgiving tables. My dad loves super mushy carrots, which just don’t do it for me.  I want a bit of a crunch! So this recipe for Cardamom Glazed Carrots from Cooking Light is perfect for me; sorry, Dad!

The cardamom adds a lightly floral taste which works so nicely with the fresh ginger. This recipe takes just 15 minutes to make so it’s a great weeknight option as well. The recipe serves 6, so multiply as needed.

Ingredients:

  • 1 tablespoon unsalted butter (or margarine to make vegan)
  • 1 tablespoon olive oil
  • 2 teaspoons minced peeled fresh ginger
  • 1/4 teaspoon ground cardamom
  • 1/2 cup water
  • 2 tablespoons light brown sugar
  • 1 pound carrots, peeled and cut diagonally into 1/2-inch pieces
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh cilantro leaves (optional)

Steamed Spinach with Curry Butter

Sometimes your sides need a bit more pizzazz. This simple recipe for Steamed Spinach with Curry Butter from Cooking Light adds a ton of flavor (and a little bit of heat if you want it) with little effort and time. The recipe below makes enough for 4 people but can easily be multiplied to fill a crowd (this would be a yummy side at Thanksgiving!)

Ingredients:

  • 1 tablespoon unsalted butter (or olive oil to make paleo)
  • 1 tablespoon mild curry powder
  • 2 (16-ounce) containers fresh spinach
  • 1 tablespoon fresh orange juice

Apple Sage Stuffing Cups

Stuffing is one of my favorite parts of Thanksgiving, probably because it’s usually the only time of year I get to eat it. But now that I’ve found this awesome single serving version for Apple Sage Stuffing Cups, I can have it whenever I want with little effort!

This recipe from Cooking Light adds the stuffing to a cupcake tin to bake so that you get more crispy edges. It’s also great as a make ahead option because everything is already portioned out for easy reheating.

Ingredients:

  • 12 ounces sourdough bread, cut into 1/2-inch cubes (about 8 cups)
  • 1 1/2 tablespoons butter
  • 1 1/2 cups diced apple
  • 1 1/4 cups chopped onion
  • 2/3 cup chopped celery
  • 1 1/2 tablespoons chopped fresh sage
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 3/4 cups unsalted chicken stock (or vegetable stock to keep it vegetarian)
  • 2 large eggs, lightly beaten
  • Cooking spray

Cherry Port Cranberry Sauce

I absolutely love cranberry sauce. This not-too-tart and not-too-sweet Thanksgiving staple is always a favorite of mine.

Now I don’t turn my nose up at the canned stuff, but this homemade version for Cherry Port Cranberry Sauce is a really simple alternative. It’s also a bit of a chunky sauce instead of the smooth canned version, so it has a really nice texture to it. Plus, it can be made in 20 minutes!

If you don’t want to use port in the recipe, you can substitute in pomegranate juice.

 

Ingredients:

  • 2 cups fresh cranberries (about 8 ounces)
  • 3/4 cup dried sweetened cherries
  • 3/4 cup port wine
  • 1/3 cup brown sugar
  • 1 tablespoon red wine vinegar
  • 1 tablespoon orange juice
  • 1/4 teaspoon freshly ground black pepper

Cauliflower with Anchovy Breadcrumbs

Thanksgiving is just around the corner, so I’ve been cooking up a bunch of sides, including this Cauliflower with Anchovy Breadcrumbs, to share with you until my favorite holiday!

This recipe from Cooking Light adds a toasted breadcrumb mixture over cooked cauliflower florets to make a really simple but tasty side dish! I changed the recipe up a bit, using sourdough bread because that’s what I had in my apartment. I also tossed the cauliflower in some olive oil and a touch of salt before adding the breadcrumbs to add some more flavor to the dish.

 

Ingredients:

  • 1 head of cauliflower, cut into bite sized florets
  • 2 ounces torn sourdough bread pieces
  • 1 tablespoon chopped fresh sage, plus more for garnish
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 3 anchovy fillets, rinsed and drained
  • 3 garlic cloves
  • 1 1/2 tablespoons butter
  • 1 tablespoon olive oil
  • salt, to taste

Spinach Chive Potato Bites with Kerrygold Cheese and Butter

You can always find the signature gold wrapping with green logo in my fridge. Kerrygold is my go-to butter brand for when butter quality is key. My favorite way to use it though is just on a slice of toasted Rosemary Olive Oil Bread, yum!

The Kerrygold brand is a line of all-natural, grass-fed cheeses and butters crafted at dairy farms throughout Ireland. The hormone-free cheese and butters are available around the world but still come from milk supplied from independent dairy farmers within the Emerald Isle. My relatives in Ireland actually own some dairy farms so this concept is pretty close to my heart.

Needless to say, I was so excited to make a recipe using both Kerrygold Butter and Cheese. Through Cooking Light Bloggers’ Connection, I was sent coupons to buy and use some yummy Kerrygold products. I decided to adapt a recipe for Spinach Chive Potato Bites from the Kerrygold website.

Ingredients:

Potatoes:

  • 15 small yellow, white or red potatoes (about 2 pounds)
  • 1/2 package (3.5 ounces) Kerrygold Dubliner Cheese, shredded, divided
  • 2 tablespoons Kerrygold Garlic and Herb Butter
  • 3 tablespoons milk
  • Salt and freshly ground pepper to taste
  • Chopped fresh parsley (optional)

Filling:

  • 1 tablespoon Kerrygold Garlic and Herb Butter
  • 1 cup spinach leaves, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons fresh chives, finely chopped

Ghost and Mummy Snack Pack Pudding Cups

Halloween is right around the corner so it’s time to start planning all the yummy Halloween treats you want to serve! If you’re having a party, a get-together before Trick-or-Treating, or are just looking for an easy to make dessert with a Halloween theme, I have a super simple idea that also looks great set out for a party. Snack Pack pudding cups make it so easy to make a creative dessert with little effort, like these Ghost and Mummy Snack Pack Pudding Cups. Just use the pudding cup as the base and mix in some other treats for a fun and tasty #SnackPackMixins!

 

I really love pudding cups, they are my go-to for an afternoon snack to get my yummy chocolate fix for the day with just 120 calories a cup. Plus, they have the same amount of calcium as an 8 oz glass of milk!

 

 

To give the Snack Packs a Halloween spin, I decided to make ghosts and mummies rising from the dead.  I used the Snack Pack pudding cups as the “dirt” sprinkled with a bit of crushed Oreos on top and made “ghosts” and “mummies” out of candy-coated Nutter Butters. Aren’t these Ghost and Mummy Snack Pack Pudding Cups cute?

I found the Snack Pack pudding cups, Oreos, and Nutter Butters in the cookies/snacks aisle at Walmart. Keep an eye out for displays in select Walmarts that include vanilla and chocolate pudding cups, Oreos, and Nutter Butters to make shopping for this recipe really easy!

 

The mummies and ghosts should be made ahead of time so that they have time to dry. They can be made a few days ahead of time. If making the day of, just give yourself about 30 minutes to prepare them and to let them dry before adding to the Snack Packs.

 

Ingredients:

  • 12 (3.25 oz) Chocolate Snack Pack Pudding Cups
  • 12 Oreo cookies, filling removed and crushed
  • 12 Nutter Butter cookies
  • 12 oz. vanilla-flavored candy coating

Shrimp Rotini with Arugula Pesto

We are in that weird beginning-of-fall/end-of-summer phase right now, where the weather can be anywhere from 50-80 degrees. So my weeknight dinners are just as random. I keep going in between comfort food choices like Mushroom and Sausage Ragu over Polenta to lighter meals like Autumn Apple Salad with Cinnamon Honey Dijon Dressing. So sticking with tradition and flip flopping again, after posting a recipe for Pumpkin Cake Bites earlier this week, I bring you a seafood pasta recipe with pesto!

This recipe uses arugula as the primary ingredient in the pesto, so it’s really perfect for this time of year. It also comes together in no time (which is why I love meals that use pesto) while adding such freshness to a recipe.

Ingredients:

  • 1 cup uncooked mini rotini
  • 1 1/2 cups arugula
  • 1/4 cup basil leaves, plus more for garnish
  • 3 tablespoons grated Parmigiano-Reggiano cheese
  • 2 tablespoons pine nuts
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 1 garlic clove
  • 2 1/2 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon butter

Autumn Apple Salad with Cinnamon Honey Dijon Dressing

It’s September which means apples are right in their prime season! Although apples are available year-round, most apples ripen in the August-October time frame. I’ve had a craving for apples ever since September began so I was so excited when I was contacted recently about trying an apple variety called SweeTango that I’ve never had before.

SweeTango apples a variety bred at the University of Minnesota and are a cross between  the Honeycrisp and Zestar! varieties.  The apples are crisp and sweet with a hint of citrus, honey, and spice and have a nice crunchy and juicy texture that’s perfect to eat raw. They have a beautiful coloring too — SweeTango is a blush apple with deep red coloration over a yellow breaking background. The variety first hit store shelves in limited quantities in 2009, and has since grown to achieve distribution across the U.S. and Canada.

I received two SweeTango apples in the mail and couldn’t wait to try them! One I saved for me to just enjoy on its own and the other went into one of the most delicious salads I’ve ever had, Autumn Apple Salad with Cinnamon Honey Dijon Dressing! This salad is packed with a bunch of different textures and flavors which is what I really love about it. But the true star of the salad is the SweeTango apple!

Ingredients:

Salad:

  • 2 cups red leaf lettuce, torn
  • 2 cups spinach leaves, torn
  • 1/2 cup thinly sliced fennel bulb
  • 1/2 cup walnuts, toasted
  • 2 tablespoons salted pumpkin seeds (pepitas)
  • 2 tablespoons dried cherries
  • 2 tablespoons golden raisins
  • the juice of 1 lemon
  • 1 SweeTango apple, thinly sliced

Dressing:

  • 4 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon red wine vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 tablespoon minced shallot
  • 1/2 teaspoon cinnamon
  • a pinch of salt and pepper

Cheese Ravioli with Pesto

I have another busy week this week so I needed some easy meals that can be prepared quickly. Pasta is usually a great option and this recipe for Cheese Ravioli with Pesto is no exception. It comes together in about 15 minutes!

 

I found this recipe on Cooking Light. The pesto is more of a “pesto” and stays pretty chunky. But don’t be fooled, those little flecks of green are packed with flavor!

 

Ingredients:

  • 1 (16-ounce) package frozen cheese ravioli
  • 2 cups fresh baby spinach
  • 1 cup fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 2 garlic cloves
  • 2 tablespoons fat-free, lower-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 plum tomatoes, diced
  • 3/4 cup shaved fresh Parmesan cheese, divided

Eggplant Portobello Pasta #BeerLoversHH

I love cooking with beer, I’ve used it a lot in past recipes — everything from Beer-Steamed Clams and Mussels to Pumpkin Spice Bread. So this new cookbook is right up my alley! The Ultimate Beer Lover’s Happy Hour includes bar snacks, beer cocktails, and recipes that incorporate beer into the dish as well as almost 1,000 beer pairing suggestions for the recipes.

I was sent one of the recipes in the cookbook to test and share with you: Eggplant & Portobello Pasta. I used local witbier in the recipe but you can also use a slightly toasty Vienna Lager, mellow Golden Ale, or classic American Wheat Ale.

Farfalle with Sun Dried Tomato and Scallion Cream

Almost every Sunday night, my boyfriend and I have pasta for dinner. We typically just have spaghetti or rigatoni with meat sauce. I make the sauce in huge batches and freeze it for later use. Last weekend, I didn’t realize we had used up the last of our sauce until Sunday afternoon! So we needed a quick pasta recipe that we could use instead: Farfalle with Sun Dried Tomato and Scallion Cream! (Don’t worry, I made more sauce this weekend so we are safe for the next few weeks!)

This recipe from Food and Wine uses sun-dried tomatoes to make a quick and simple no-cook sauce. The meal was done in under 30 minutes!

 

Ingredients:

  • 5 scallions, white and light-green parts only
  • 12 sun-dried tomato halves
  • 1 cup half-and-half
  • 1  box (1 pound) bow tie/farfalle pasta
  • 1 teaspoon salt
  • 1/2 teaspoon fresh-ground black pepper
  • 3 tablespoons chopped fresh parsley

Spicy Flank Steak Tacos with Watermelon Salsa

When I first spotted this recipe for Spicy Flank Steak Tacos in the August issue of Cooking Light, I knew I wanted to make it. I have never used watermelon in a savory recipe before and it sounded like a perfect summer dinner! This recipe comes together in no time (and is really simple to make), making it a great weeknight meal option.

 

 

The rub on the steak is only four ingredients: salt, black pepper, white pepper, and red (cayenne) pepper. If you don’t have white pepper you can just substitute in more black pepper. But each pepper does bring it’s own taste to the rub.

 

Black and white pepper comes from the same pepper plant but white peppercorns have the outer layer removed, leaving the seed inside. White pepper has a more subtle flavor than black pepper. Red pepper, or cayenne pepper, is ground from hot peppers so it has a nice level of heat to it. The three together add a nice spiciness to the steak without being overwhelming.

 

 

I altered this Spicy Flank Steak Tacos recipe a little bit but the general idea is there. If you’re interested in seeing the original version, check it out here.

Ingredients:

  • 1/2 teaspoon plus 1/8 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon ground red pepper
  • 1 (1-pound) flank steak, trimmed and halved lengthwise
  • 2 tablespoons olive oil, divided
  • 8 green onions, roots trimmed
  • 2 cups finely chopped fresh watermelon
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons fresh lime juice
  • 1 jalapeno, seeded and chopped
  • 8 (6-inch) corn tortillas
  • 2 ounces feta cheese, crumbled (about 1/2 cup)

Charred Corn Salad with Basil and Tomatoes #WhatAGrillWants

Grilled corn is one of my absolute favorite foods of summer. There is just nothing like a cob of sweet corn charred over a grill. Mmm. But as much as I love a simple corn on the cob, sometimes I need a little variety. This recipe for Charred Corn Salad from Bon Appetit gives me my beloved grilled corn, plus fresh herbs and tomatoes. What’s not to love?

This Charred Corn Salad recipe also allows me to show off some of my favorite grilling tools, courtesy of OXO. I was sent some grilling essentials as a participant in OXO’s #WhatAGrillWants campaign, including a Corn Stripper, Silicone Basting Brush, and 16″ tongs. I was also sent a Bladed Meat Tenderizer (which I plan on using for steak in an upcoming recipe… stay tuned) and a Little Salad Dressing Shaker that is the perfect size for 2 servings; I will have a post including that little guy soon too!

The Silicone Basting Brush is perfect for grilling because it is head resistant, odor resistant, and easy to clean. I used it this time around to rub the corn with olive oil before grilling. The center bristles have circular gaps that hold on to the liquid as you transfer the sauce from the bowl to the food and the tapered outer bristles let you baste easily. Because the bristles are heat resistant to 600 degrees F, it’s a great tool to add an extra layer of barbecue sauce to a protein while grilling! The basting brush is also dishwasher safe.

 

My boyfriend was most excited about the 16″ tongs. They are stainless steel but have non-slip handles that make them safe for barbecuing. The long length is very much appreciated when working over a hot grill! The tongs also lock closed with a large pull tab that also doubles as a hole for hanging, great for my peg board! (You can also get the tongs in 9-inch and 12-inch sizes).

 

The corn stripper is the perfect tool for this recipe. I’ve mentioned on here before that I have a (ridiculous) fear of knives. So when trying to strip corn off a cob, I get a bit anxious. This tool makes it SO much easier without the risk! The corn stripper has a container that actually stores the kernels as you strip them from the cob; it holds up to 1/2 cup. You can then just pour the kernels out of the top of the container and you’re good to go! 

 

Now that I’ve gone through all of my nifty tools that made this recipe a breeze, maybe it would be a good idea to actually share the recipe, no? 🙂

  • 3 tablespoons olive oil, divided
  • 1/2 cup thinly sliced red onion

  • 1 tablespoon chopped fresh thyme

Pasta Rustica with Smoked Mozzarella

If you follow my Facebook page, you may have seen that my recipe for Wild Mushroom Truffled Pizza Topped with a Runny Egg won a recipe contest hosted by Cooking Planit and sponsored by Formaggio Cheese! Not only is my recipe now available through Cooking Planit, but I also won some snazzy prizes, including an amazing assortment of Formaggio products. My fridge is now happily filled with cheese, so I will be posting a few cheesy recipes over the coming weeks.

One of the first products I noticed in the basket was Smoked Mozzarella. I’ve had smoked mozzarella in the past and found the flavor to be a bit… overwhelming… so I was interested to see if I could get it to work well in a recipe instead of becoming the only flavor you can taste. But Formaggio’s smoked mozzarella was a pleasant surprise! The smoky flavor is present without being overpowering and works to enhance other flavors instead of covering them up.

I found this recipe for Pasta Rustica with Smoked Mozzarella on Bon Appetit and altered the amounts of the ingredients to fit my taste.

 

Ingredients:

  • 16 oz package frozen cheese tortellini
  • 4 tablespoons olive oil
  • 1 medium onion, sliced
  • 12 oz cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 1 cup dry vermouth
  • 1 cup chopped fresh Italian parsley
  • 1 cup thinly sliced fresh basil
  • 1 1/2 teaspoons dried oregano
  • 8 oz smoked mozzarella, cut into small cubes
