The weather this September has been quite warm, but I am starting to crave more comfort-food-like dishes. This recipe for Sous Vide Boneless Leg of Lamb is a combination of warm weather meets comfort food, perfect for this time of year.

The lamb is slow cooked to the perfect temperature in a water bath and then is finished off on the grill to add some char!

Potato Farls (Irish Potato Bread)

I personally did not grow up eating Potato Farls, probably because around me, there was no such thing as leftover mashed potatoes. (I am still a mashed potato fiend, but I’ve managed to turn it down to a more respectable level.)

But when I am visiting family in Ireland, Potato Farls is one of the foods I am most excited to eat (along with Irish Brown Bread and the rest of the components of a beautiful Ulster Fry.)

Potato Farls is just mashed potatoes kneaded with some flour, butter, salt, and pepper, then fried up into tasty little pieces, making them the perfect recipe for the day after Thanksgiving!

Ingredients (multiply as needed):

  • 4 tablespoons (1/2 stick) unsalted butter, melted, plus more for frying

Grilled Rosemary Lamb Tenderloin

I love a good wine pairing with my recipes, and boy, do I have a great pairing for this Grilled Rosemary Lamb Tenderloin recipe! A perfectly paired wine can really enhance a dish! Côtes du Rhône wines are a perfect transitional wine as we move from summer into fall. They pair beautifully with barbecued or low and slow cooked meats. (And it is absolutely delightful with this Grilled Rosemary Lamb Tenderloin!)

But first, some info about Côtes du Rhône wines…

Côtes du Rhône is a wine-growing AOC for the Rhône wine region of France. There are different tiers: Côtes du Rhône, Côtes du Rhône Villages, and Côtes du Rhône Villages with Geographic Indication. Knowing a bit about each tier ensures you can choose the perfect bottle for every occasion!

First, a bit about some of the most popular of the 23 grape varieties that can be used to make Côtes du Rhône AOC wines: Grenache, Syrah and Mourvèdre.

  • Grenache is the most widely grown grape in the Rhône Valley Vineyards. It grows well across a variety of terroirs, and in blends, it embodies the warmth and generosity that Rhône wines are known for. It’s bursting with sweet cherry and raspberry fruit, cinnamon spice and classic Mediterranean garrigue.
  • Syrah is stylish and complex, but difficult to grow, requiring careful cultivation. More common in the Northern Rhône, Syrah has powerful dark fruit flavors, delicate violet aromas and characteristic pepper notes. In blends, it contributes a full-bodied yet balanced savory element that wines from this region are known for.
  • Widely cultivated on the sun-drenched slopes of the Southern Rhône, Mourvèdre has a robust structure and strong tannins, delivering notes of blackberry and plum, a meaty savory-ness and a slight floral character.

Within the region, there are three distinct tiers of quality:

  • Côtes du Rhône represents 171 villages, 180,800 acres of vineyards and 6,000 vine growers. Côtes du Rhône wines are known for their berry fruit flavors, well-structured and velvety tannins, and bright acidity. These wines are known for their distinctive freshness that makes these reds easy to be served chilled. They also pair beautifully with lighter fare such as vegetables and fish, the robust roasted meats of fall, and can help keep drinkers cool while enjoying the rusticity of barbecue.
  • Côtes du Rhône Villages AOC represents the unique character of specific villages within the valley and is the next step up in terms of sophistication and distinctiveness. Showcasing villages that have proven their wines have exceptional quality and character, there are 95 villages that may label their wines as Côtes du Rhône Villages. There is an enormous range of Côtes du Rhône Villages wines in terms of style, depending on the nature of the soil. Red wines make up 96% of the production from the Côtes du Rhône Villages AOC. Village’s AOC’s generous, more complex wines pair with richer, more elevated dishes, such as herb-crusted chicken, lamb, or spice-crusted pork tenderloin.
  • Côtes du Rhône Villages with Geographic Indication is reserved for the wines made in the 22 Villages that are identified for their specific terroir. Wines labeled as Côtes du Rhône Villages with Geographic Indication come from 22 communes. The communes have a standard of quality authorizing them to add their village name to the labels of their wines. Some of these communes include Plan de Dieu, Valréas, Visan and Chusclan. With stricter production standards and lower yields, Côtes du Rhône Villages with Geographical Indication wines are typically truer expressions of their terroir and can age for 5 to 10 years. These wines have deep layers of flavors that express their terroir and are perfect for holidays and special occasion meals.

For Labor Day weekend, I paired this Grilled Rosemary Lamb Tenderloin with a bottle of Domaine Paul Jaboulet Aîné Côtes du Rhône Parallele 45. Made with a blend of 60% Grenache and 40% Syrah, the wine has notes of wild berries, white pepper, and cherries. Those notes complement the woodsy flavor of the rosemary while enhancing the natural flavor of the lamb.

Homemade Avocado Ice Cream

I’m sure you’re thinking to yourself, “Avocado Ice Cream? Really??”

Me making a Homemade Avocado Ice Cream is actually a long time coming. I have a coworker who absolutely loves avocados. And years ago, I mentioned that (the now shuttered and very much missed) Capogiro Gelato in Philadelphia had an avocado ice cream, and that I’d buy her a pint the next time I saw it. Well. Capogiro sadly closed at the end of 2018 without me ever bringing her a pint. So, now that I am feeling more comfortable making my own homemade ice cream, it was time to finally deliver on my promise!

This recipe might be my easiest ice cream recipe to date. It has just 4 ingredients, does not require heating the cream mixture, and doesn’t even need to refrigerate overnight!

Ingredients (makes about 3/4 quarts, or 1 1/2 pints):

  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1/2 tablespoon vanilla extract

Homemade Nutella Ice Cream

Well, I’m sure this comes as no surprise but now that I know how easy it is to make homemade ice cream, I’m trying out more and more flavors. This recipe for Homemade Nutella Ice Cream was one of my husband’s first requests.

(He’s a HUGE Nutella fan, which is why I have quite a few Nutella-filled recipes on my blog.)

This recipe is actually even easier than the pistachio one, so I was happy to make this for him. It does not have any egg yolks in the recipe, and you don’t even have to heat the cream mixture! With just five ingredients, it comes together in no time as well!

Vegan Cranberry Goat Cheese Pistachio Truffles

It’s the time of year where having a few party appetizer recipes on hand can be very helpful, especially ones that you can create quickly and travels well, if needed.

I prefer to have some recipes that can fit different dietary needs, including an appetizer or two for dairy-free or vegan friends and family.

This recipe for Vegan Cranberry Goat Cheese Pistachio Truffles is made with Spero Alternative Goat Cheese. No Bake Chocolate Orange Tart

This No Bake Chocolate Orange Tart is a wonderfully luxurious dessert that you can make with very little effort!

Rigatoni Sausage Arrabbiata

If you follow my posts somewhat regularly, you know that pasta is a very important part of my life. In fact, it gets its own day each week. Every Sunday is pasta night in my house!

I tend to make big batches of Meatballs in Tomato Sauce so we always have some on hand in the freezer, but there are many a Sunday where I open my freezer only to realize I am completely sauce-less. So this recipe for Rigatoni Sausage Arrabbiata is perfect for the nights I want to whip up a quick pasta dinner in no time without sacrificing flavor!

I started making this recipe when I came across Wilmington-based Rockford Catering‘s Tomato Sauce, made by owner and Chef John Wigton. John grew up in Northern Delaware and received his Culinary Arts Degree from Delaware Technical Community College. He has worked in the hospitality business for 20+ years and established Rockford Catering in 2017. And his sauce is legit!

The chunky tomato sauce is flavored with onions, garlic, and basil, and is really great on its own heated up over pasta.

Rockford Catering also (obviously) provides catering services, like this tasty Valentine’s Day menu currently available. Even better, they deliver! Rockford Catering’s sauce is vegetarian (they also sell a vegan version), so I decided to add in some hot Italian sausage from my local butcher to enhance the flavor. The result is this super easy Rigatoni Sausage Arrabbiata recipe!

  • 1 lb hot Italian sausage, removed from its casing (I love that Primal Supply sells it already out of the casing!)

Bacon Wrapped Stuffed Figs

From August to October, figs are in season. Whenever I come across fresh figs, I just have to buy them!

I’ve shared recipes in the past using this yummy ingredient — everything from adding it to a flatbread to turning it into a cookie filling to using it in a jam.

So today I figured I’d go a little simpler with a favorite appetizer: Bacon Wrapped Stuffed Figs!

This recipe is so easy, and uses just 4 ingredients. They are great for parties or just as an appetizer with friends.

Ingredients:

  • 12 fresh black mission figs
  • 2 oz blue cheese
  • 6 slices of bacon, cut in half crosswise
  • freshly ground pepper, to taste

Caramel Apple Coffee Jam

I’m really in canning mode recently! I’m still a relative novice to canning, so I stick to sources I trust so I can preserve safely.

Freshpreserving.com is the ultimate source, so when I saw this recipe for Caramel Apple Coffee Jam, I knew I had to try it!

Using coffee in a jam intrigued me; I was interested to see what the flavor of this jam was like!

This is the first time I’ve worked with pectin in a recipe, which is basically a gelling agent that gives jams and jellies their texture. It is a starch found naturally in fruits and vegetables, so a lot of recipes for canning use a bit of acid to create the thickening needed. (I’ve also used chia seeds to create this texture in the past too.)

Ingredients (makes about 6 half pint jars):

  • 5 apples, peeled and diced (about 7.5 cups) – I used honeycrisp apples
  • 3 cups extra strong brewed coffee
  • 6 tablespoons pectin
  • 3/4 teaspoon ground allspice
  • 3 cups brown sugar, lightly packed

Bratwurst and White Beans with Sage

As we transition into fall, I start craving comfort food-type dishes, especially ones that don’t take all day to make, because despite still working from home, I find that I have even less time to cook!

This recipe for Bratwurst and White Beans with Sage is a quick and easy dinner that also only uses one pan, so it has quickly become a favorite of mine.

Slow Cooker Creamed Corn

I’m all about making as many things as possible ahead of time to make actual dinners or events easier to manage. And Thanksgiving is certainly no different. Slow Cooker recipes, like this Slow Cooker Creamed Corn, are perfect for make ahead sides for Thanksgiving!

Medium Rare Sous Vide Steak

For the last few months, I’ve been messing around with a new toy: a precision cooker that allows me to cook sous vide (which means “under vacuum”).

To cook sous vide, you add ingredients to a sealed plastic bag (or glass jar) and cook it in water that has been brought to a specific temperature. Cooking using this method takes considerably longer than sautéing, roasting, or grilling, but the result is a perfectly even and tender meal! I’ve made a few things sous vide so far, but wanted to first share the most common recipe: Sous Vide Steak. This cooking method seals in moisture and results in a super flavorful steak, so you only need a simple sauce to complete your meal.

I drizzled my Sous Vide Steak with a sauce from Le Sauce & Co.: Classic Green Peppercorn Sauce. Le Sauce is a boutique, craft food company that believes every meal should be an experience. They have four different finishing sauces that elevate a meal with little effort! The Classic Green Peppercorn Sauce is the perfect complement to a perfectly cooked steak, and is made with cream, butter, shallots. cognac, and green peppercorns. Other finishing sauces include Coconut Thai Red Curry, Roasted Poblano & Garlic, and White Wine Lemon & Garlic, and all can be found on Amazon.

Ingredients:

  • 2 (8 to 12 oz) boneless beef tenderloin steaks
  • salt and pepper, to taste
  • 2 garlic cloves, peeled and smashed
  • 1 tablespoon vegetable oil or other oil with a high smoking temperature
  • 1 tablespoon butter

  • Freshly chopped parsley, for garnish

Overnight Chia Seed Breakfast Pudding Jars

My husband really likes chia seeds. He will even just add them to water and have them that way. As (un)appealing as that sounds, I’ve been trying to incorporate them into some recipes that make the most of chia seeds while being a bit more… tasty, like this recipe for Overnight Chia Seed Breakfast Pudding Jars.

Chia seeds are pretty bland, so they are easy to add to recipes without impacting taste. When soaked in a liquid, they expand and thicken whatever liquid they are added into, making them perfect for pudding or jam.

This recipe for Chia Seed Breakfast Pudding is an easy make ahead recipe for breakfast on the go. My husband and I just grab one of these pre-made jars and bring with us to work to eat.

Note: this recipe makes 4 (16 oz) jars or 8 (8 oz) jars, depending on how large you want your servings

  • 2 (14 oz) cans light coconut milk
