Chocolate Peanut Butter Pie

Happy Pi Day! As a Mathlete alum, Pi Day has always been a part of my nerdy math world.  And what better way to celebrate than to make a pie?

I have some other pie recipes on here, but I have had a hankering for peanut butter lately, so I am celebrating this year with a Chocolate Peanut Butter Pie.  This is a FoodNetwork.com recipe but I decided to make my own crust (you are more than welcome to just buy one – use a 9-inch pie crust).

Ingredients:

Pie Crust:

  • 1 package oreos
  • 4 tablespoons butter, melted

Hot Fudge Sauce:

  • 1/3 cup heavy cream
  • 1/4 cup light brown sugar
  • 1/4 cup light corn syrup
  • 2 tablespoons unsweetened cocoa powder
  • 1/8 teaspoon table salt
  • 2 teaspoons vanilla extract
  • 3.5 ounces milk chocolate, finely chopped

Peanut Butter Pie:

  • 8 ounces cream cheese, at room temperature
  • 3/4 cup confectioners’ sugar, plus 2 tablespoons, divided
  • 3/4 cup creamy peanut butter, at room temperature
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Chopped peanuts, optional
  • Whipped cream, optional
  • Crushed cookies, optional

Pull-Apart Party Loaf

Let’s be honest, one of the best parts of Super Bowl Sunday is the food. Although I’m excited to hang out with friends as we root for (so far) the most successful graduate in our class (Go Flacco!) and watch some amazing commercials, I’m more focused on the tasty treats that come along with the viewing.

I’ve been in the Football Food spirit for a while now. Last week, Land O’ Lakes and Rebecca of Foodie With Family hosted a webinar all about food for the big game.

 

We discussed a bunch of different group-friendly snacks, which ones travel well to other locations, and even how to keep food safe while it is sitting out during the game. Land O’ Lakes has a great round up of game day favorites, so be sure to check it out for some inspiration here. I learned a lot, but I was unfortunately kind of distracted. Why? Because the first darn photo they showed me was of a Pull-Apart Party Loaf.

Slow Cooker Apple French Toast Casserole

I love recipes that make it easy to serve a bunch of people with minimal effort. A slow cooker is usually a go-to for those types of recipes but I’ve never considered using it to make breakfast before. The Ninja Cooking System is the perfect tool for it though. They sent over this recipe for a Slow Cooker Apple French Toast Casserole and I couldn’t wait for the weekend to come so I could make it.

This recipe makes 8 servings so it would be great for breakfast for a larger group but I also packed up the rest of my servings to reheat during the week.

Ingredients:

  • ½ cup butter
  • 2 Granny Smith apples, cored and chopped
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • ½ cup packed brown sugar
  • ½ cup pure maple syrup
  • 1 loaf challah bread (about 1 pound), cut into cubes
  • 6 large eggs
  • 2 cups vanilla almond milk (or normal milk)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon vanilla extract
  • Pinch salt
  • Confectioners’ sugar

Sweet Orange Salmon with Browned Butter Orange Couscous

After all the pasta, meat, and desserts I’ve had over the past, oh, month, I think it’s about time to switch back to some seafood recipes.

This is actually two different recipes from Cooking Light but I thought they’d be fantastic together. The Sweet Orange Salmon recipe is so easy and quick to make and the Browned-Butter Orange Couscous can be whipped up in no time as well!

Ingredients

Salmon:

  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon grated orange rind
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon black pepper
  • 4 (6-ounce) salmon fillets
  • Cooking spray
  • Orange wedges

 

Couscous:

  • 2 tablespoons butter
  • 1/4 cup slivered almonds
  • 1 cup uncooked couscous
  • 1 (14-ounce) can fat-free, less-sodium chicken broth
  • 1/2 cup coarsely chopped orange sections
  • 1/4 cup pomegranate seeds
  • 3 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • Orange wedges

Tiramisu Brownies

I am a huge fan of coffee and coffee-related foods, so tiramisu is obviously a favorite of mine. When the concept of Tiramisu Brownies was mentioned, I was immediately excited. What a fantastic combination of desserts!

Barista Prima Coffeehouse® K-Cup® (paid link) packs are four dark, rich coffee blends that really deliver an intense flavor that are more bold and robust than other K-Cup offerings. The four flavors offered are: Colombia, House Blend, Italian Roast, and French Roast. I’ve had a Keurig for years now (I just had to retire my original Keurig and buy a replacement, sniffle) and am always really pleased with the coffee choices that can be found in K-Cup form. I tend to use coffee grounds in a bunch of recipes, especially ones that use chocolate, to really up the flavor.

Barista Prima was nice enough to send me a box of their House Blend K-Cups so I naturally wanted to make a dish that used these delicious grounds as well as a dessert that would be perfect paired with a cup of House Blend coffee. Many thanks to Barista Prima for also sending me this mouthwatering recipe!

Ingredients:

  • 12 oz. chocolate chips
  • 1 cup butter, softened
  • 1 cup sugar
  • 4 whole eggs

Oatmeal, Chocolate Chip, and Pecan Cookies

This year, I participated in the Great Food Blogger Cookie Swap.The Cookie Swap is in its second year and helps raise money for Cookies for Kids’ Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease. I was assigned three food bloggers and made one dozen cookies for each of them. In return, I received three different boxes of cookies from other bloggers.

 

I wanted to make a cookie that was a spin on a traditional cookie. This Cooking Light recipe was perfect: Oatmeal, Chocolate Chip, AND Pecans!

 

Ingredients

  • 1 1/4 cups all-purpose flour (about 5 1/2 ounces)
  • 1 cup Steel Cut oats
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/3 cup butter, softened

Rainbow Cookies (a.k.a Seven-Layer Cookies)

If you’ve never heard of these lovelies, you are not alone. Rainbow cookies are made of almond cake dyed fun bright colors with apricot preserves all sandwiched in between two thin layers of chocolate.

They really aren’t cookies at all, more like thinly packed cake. But whatever the heck they are, they are delicious!

 

 

I don’t really recall these cookies growing up, but my boyfriend (who is from Long Island) absolutely loves them. In fact, he was kind of taken aback when I mentioned I didn’t really know what they were. One of his friends was absolutely horrified; he basically forced me to eat one right then and there which I didn’t complain about. I love them now!

 

So I wanted to try to make these little guys… I’m not sure why. They are awfully difficult (well, more time consuming than difficult). But I was so darn proud of myself when they were done, I don’t even care about the effort I had to put in! The cookies go by a ton of names… Rainbow, Seven Layer, Neapolitan, Tricolor… but I’m pretty sure they tend to be a Christmas staple in Italian households. I found this recipe on Epicurious.

 

Ingredients:

  • 1 (12 oz) jar apricot preserves, heated and strained
  • 4 large eggs, separated
  • 1 cup sugar, divided
  • 2 1/2 sticks (1 1/4 cups) unsalted butter, softened
  • 1 teaspoon almond extract
  • 1 (8 oz) can almond paste
  • 2 cups all purpose flour (or cake flour)
  • 1/2 teaspoon salt
  • 25 drops red food coloring
  • 25 drops green food coloring
  • 7 oz fine-quality bittersweet chocolate (not unsweetened), chopped

Duck Breasts with Cider-Farro Risotto

So, I found myself in the odd position of craving farro. Yes, farro. So after some searching, I came across a Cooking Light recipe that sounded fantastic. The recipe not only has farro, but it also uses apple cider (how autumnal!) AND it’s a risotto! I’ve never thought of using farro in a risotto but, better late than never.

 

 

Ingredients:

Risotto:

  • 1 cup farro
  • 1.5 cups fat free, less sodium chicken broth
  • 1.5 cups apple cider
  • 1 tablespoon butter
  • 1 cup chopped fennel bulb (1 small fennel bulb should cover you)
  • 3/4 cup dry white wine
  • 1/2 cup water (if needed)
  • grated lemon rind from one lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cinnamon

Duck:

  • 4 6-ounce boneless duck breast halves, skinned
  • 1/2 teaspoon salt
  • 1/2 teaspoon chopped fresh thyme
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil, divided

Mini Cranberry-Vanilla Coffee Cakes

What is it about tiny treats that make the food taste better? I love perfectly portioned food so I was excited to be sent Petite Treats: Mini Versions of Your Favorite Baked Delights. The cookbook has recipes for mini donuts, muffins, scones, pies, and bundt cakes. The recipes sound absolutely delicious but to make most of the treats, you’ll need quite a bit of hardware: mini bunt cake pans, mini donut pans, mini scone pans, mini cupcake pans, etc. There are a few recipes that use a normal muffin pan that sounded really appealing, including mini cakes, but I decided to make the mini coffee cakes so I could have breakfast all week.

Ingredients:

  • 1/2 vanilla bean, split lengthwise
  • 1 3/4 cup sugar
  • 1 cup fresh cranberries (I used frozen cranberries, thawed)
  • 2 cups plus 1 tablespoon all-purpose flour, divided
  • 2 teaspoons baking powder

Cream of Tomato Soup

James Beard is basically the father of American cooking as we know it today. He, along with the beloved Julia Child, is basically the “foodie” community’s version of The Beatles. As Julia Child put it, “in the beginning, there was James Beard.” So when I was offered to review a new compilation of some of his best recipes, I couldn’t wait to dig in. The cookbook, The Essential James Beard Cookbook: 450 Recipes That Shaped the Tradition of American Cooking is in stores beginning today.
The cookbook is filled with what we think of today as quintessential recipes: coleslaw, potato salad, pot roast, chicken pot pie. But James Beard’s travels through France as well as inspiration from the Chinese cooks who worked at the hotel his mother owned. Each page is filled with both new and different recipes as well as classic approaches to everyday food (ex. roasting a chicken). The editors did a great job of going through and adding notes to help enhance the recipes as well, including insight into what an ingredient is and what can be substituted.
I really had a tough time choosing a recipe to do this post. It’s really tough to pinpoint what James Beard is known for, because, well, he’s known for everything! I finally settled on his Cream of Tomato Soup recipe.
This recipe, passed down from his mother, is a classic comfort food choice. I loved the idea of making a family recipe and was intrigued by the process. (The onset of Hurricane Sandy may also have had some input into my decision.)
Ingredients:
  • 2 28-oz cans of Italian plum tomatoes, undrained
  • 1 cup Beef Stock
  • 1 small yellow onion, roughly chopped
  • 2 whole cloves, smashed
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon baking soda
  • 1 tablespoon plus 1 1/2 teaspoon all purpose flour
  • 1 tablespoon plus 1 1/2 teaspoons unsalted butter, melted
  • 2 cups heavy cream
  • Chopped fresh basil or fresh flat-leaf parsley, for garnish

Champagne-Browned Butter Chicken

My CSA share this week came with the most beautiful carrots. I am not the biggest fan of carrots but I don’t mind them mixed into a dish. These were too pretty to not use! Cooking Light had a recipe in its latest issue that sounded really intriguing: Champagne-Browned Butter Chicken. The dish is pretty simple to make, although it takes a good hour and a half so this is not a weeknight meal. But the presentation is definitely snazzy enough for company!
Ingredients (serves 2 heartily, or up to 4):
  • 2 slices center-cut bacon
  • 1/2 cup all-purpose flour
  • 2 bone-in chicken thighs
  • 2 bone-in chicken drumsticks
  • 1 1/4 teaspoons kosher salt, divided
  • 3/4 teaspoon freshly ground black pepper, divided
  • 2 tablespoons canola oil, divided
  • 1/3 pound potatoes, cut into equal pieces
  • 1/2 poundbaby bella mushrooms, halved
  • 1/4 cup brandy
  • 2 shallots, halved
  • 3/4 cup no-salt-added chicken broth
  • 1 tablespoon black peppercorns
  • 3 thyme sprigs
  • 1 bay leaf
  • 1/2 bunch fresh flat-leaf parsley
  • 6 baby carrots with tops
  • 1 cup Champagne
  • 3 tablespoons butter
  • 1 teaspoon all-purpose flour
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 teaspoons chopped fresh thyme

Mini Orange & Cardamom Muffins

This weekend, I am co-hosting a Tiny Food Party with Bridges, Burgers & Beer, another Philly food blogger, using recipes from Teri Lyn Fisher and Jenny Park’s cookbook: Tiny Food Party. A bunch of the recipes we are making use mini muffin tins. I wanted to try out my new min muffin tins at least once before making food for the party, so I found this recipe for Mini Orange & Cardamom Muffins from a book I received last year and have used once before for a recipe (see it here) called 1 Mix, 100 Muffins.
The flavors of these muffins sounded absolutely delicious. It was a lot of prep though: you have to juice and zest the oranges for the recipe. It’s well worth it, the citrus-y flavor is perfect with the cardamom seeds.
Ingredients: (makes 48 mini muffins)
2 oranges
1/2 cup milk (maybe less)
6 whole green cardamom pods
2 cups all purpose flour
1 tablespoon baking powder
1/8 teaspoon salt
1/2 cup sugar
2 large eggs
6 tablespoons butter, melted and cooled

Begin by melting the butter over medium-low heat. Allow to cool.
Preheat your oven to 350 degrees. Line the mini muffin pans with paper liners.
Grate the rind from the oranges and juice the oranges.
Add the milk to the orange juice until you have 1 cup total of liquid. Add the orange rind.
Remove the seeds from the cardamom pods (I just cut into them and poured them out).
Combine the flour, baking powder and salt in a large bowl. Stir in the sugar and cardamom seeds.
Lightly beat the eggs in a separate bowl. Add the orange/milk mixture and the cooled butter.
Make a well in the center of the dry ingredients.
Add the wet ingredients to the dry and mix until just combined.
Spoon the batter into the muffin pans (I used a coffee scoop to measure them out, it worked really well).
Bake for 15-20 minutes or until risen and golden brown. Allow the muffins to cool in the pan for 5 minutes then transfer to a wire rack.
So the original recipe said to bake these at 400 degrees for 20 minutes. When I did that they turned out quite dark and slightly burned on the bottoms. (in the photo above, they are the ones in the background)
Next batch I tried at 400 degrees for 15 minutes. Not as browned but still too dark bottoms (that’s the one in the foreground of the above photo).  So I suggest trying 350 degrees instead, checking on them at 15 but probably baking for 20 minutes.
The muffins were wonderfully floral from the cardamom, which was balanced out by the citrus of the orange. I’m glad these were mini muffins, if not I’d probably consume at least 2 normal sized versions, I loved how they tasted!

Cinnamon Rum-Spiked Grilled Pineapple with Ice Cream

When I was creating my Labor Day Round Up post, I realized one of my favorite grilling recipes was conspicuously missing. My friends and I love to soak pineapple in a rum-sugar mixture, heat it on the grill until the sugars caramelize, and dig in. Although I have been butchering the recipe all summer, I used this Cooking Light recipe as inspiration for our favorite summer grilling treat. Now that I am making this in my kitchen on a grill pan, I’m actually able to pair it with the ice cream for the full effect.
Ingredients:
1/4 cup packed brown sugar
1/4 cup dark spiced rum (such as Captain Morgan’s)
1 pineapple, peeled, cored, and sliced
1 tablespoon butter
1 pint vanilla ice cream
Cinnamon, to taste

Biscuits and Gravy

To my readers who come to my page looking for quick and health(ier) cooking options, I apologize for this post. I am making Biscuits and Gravy, and I can’t even pretend that there are any health benefits to this, except perhaps a feeling of pure joy as you consume it. Healthy readers, maybe we can pretend that this recipe for a Southern favorite never happened? For the rest of my readers, I hope you enjoy this recipe. Because I sure did, it was fantastic.
So why the sudden move into southern cooking? Biscuits, of course! I was sent a few boxes of Robinhood Meetinghouse‘s frozen biscuits, including their original Cream Cheese Biscuit. The Maine-based biscuiteers (yes, I just really wanted to write the word biscuiteer) also make pull apart cinnamon bread, sticky buns, and mini pies. The company’s products contain no artificial flavors, colors, corn syrup, or genetically modified ingredients (GMOs). And the best part? The frozen biscuits are ready in the oven in only 25 minutes time.
There are plenty of ways to use their original biscuits, but a friend mentioned one of her favorite recipes from the South, Biscuits and Gravy, and I had to try it. This recipe is really out of my comfort zone. It even uses sausage, eep (I’m really not the biggest fan of pork products… you’ll notice that there are very few of my blog, with the exception of bacon and proscuitto.) I used a Paula Deen recipe as the base for the gravy because, well, it’s Paula Deen.
  • Ingredients (Serves 3):
    1 box of Robinhood Meetinghouse’s frozen original cream cheese biscuits
  • 1/2 to 1 pound sausage (I went with garlic sausage from Martin’s in Reading Terminal)
  • 1/4 pound bacon (4-6 slices), chopped
  • 3 tablespoons flour
  • 2 cups whole milk
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons butter
  • a dash of hot sauce

Scallops Gratineed with Wine Garlic and Herbs

I am on a butter kick. Darn you, Julia Child, and your deliciously simple but butter-filled recipes. There are few things that change the taste of a meal as easily as really good butter. I’m talking full-fat, salted, hand-churned butter. Keep in mind, meals like this should not be a weekly staple. But my goodness are they fantastic as a treat. This recipe for Scallops Gratineed with Wine Garlic and Herbs is no different. I am obviously on a bit of a Julia Child kick at the moment as well which is well timed because her 100th birthday is coming up on August 15. Might I suggest making this lovely (but amazingly easy) recipe to celebrate? I made this as a meal for two, with a salad on the side. It would also make a wonderful appetizer, or just multiply as you see fit.

 

Ingredients:

  •  1/3 cup minced yellow onions
  • 1 tablespoon butter (I’m talking good butter, no substitutions here!)
  • 1 1/2 tablespoons thinly sliced green onions
  • 1 clove minced garlic
  • 4 washed dry scallops
  • salt and pepper, to taste
  • 1 cup flour in a dish
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2/3 cup dry white wine (I used a Sauvignon Blanc)
  • 1 small bay leaf
  • 1/8 teaspoon thyme
  • 1/4 cup grated Swiss cheese (I used gruyere)
  • 1 tablespoon butter cut into 6 pieces
