Reuben with Homemade Sauerkraut
- 1 tablespoon olive oil
- 1/2 a small onion, chopped
- 1/2 a head of cabbage, roughly chopped
- 1/3 cup cider vinegar
- 1/4 cup apple juice
- 1/4 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon caraway seeds
Reuben:
- 2 tablespoons butter, divided
- Left over corned beef, thinly sliced
- Sauerkraut (recipe above)
- Rye bread
- Swiss cheese
- Creamy Horseradish Dijion (recipe here), or thousand island dressing
Lamb Wraps with Tzatziki Sauce
Ingredients:
Lamb Wrap:
- Cooking spray
- 2 lamb sausages (or 1/2 lb ground lamb)
- 1/2 cup chopped onions
- Pepper and salt, to taste
- 1 cup shredded romaine lettuce
- 2 pocketless pitas or other flat bread
Tzatziki sauce:
- 1/4 cup plain reduced fat Greek yogurt
- 1/2 a cucumber, seeded, peeled, and finely chopped
- 1/2 tablespoon chopped fresh mint
- the juice from 1/2 a lemon
- Salt, to taste
- 1 garlic clove finely minced

4 slices of sourdough bread
1 avocado
2 tomatoes, sliced (I used Roma tomatoes)
4 slices of Sargento Natural Cheddar Cheese
4 slices of a Processed Cheese (I used American)
4 slices of smoked applewood bacon
2 tablespoons butter
Tomato soup
Optional: a few drops of Tabasco and Worcestershire
Assemble the sandwich and cut in half. Serve with tomato soup for dipping.

Pulled Chicken Sandwiches
Ingredients:
For the chicken:
2 tablespoons light brown sugar
1 teaspoon paprika
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon ground chipotle chile pepper
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 pounds skinless, boneless chicken thighs
Cooking spray
For the sauce:
2 teaspoons canola oil
1 onion, finely chopped
2 tablespoons light brown sugar
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon ground allspice
1/8 teaspoon ground red pepper
1 cup ketchup
2 tablespoons cider vinegar
1 tablespoon molasses
Remaining ingredients:
8 sandwich rolls, toasted
Pickles, your choice
Sausage, Pepper & Onion Sandwiches
While the sausages are cooking (about 10 minutes), chop your garlic, onion, and peppers.
Cook for 3-5 more minutes or until the sausages are warm. Cut the rolls almost in half, but not fully. You want the sauce to be able to settle at the bottom of the bun.
To serve, add 1 sausage to each bun. Spoon the onions, peppers, and tomato mixture over the sausage. Add some Parmesan cheese and/or parsley if you prefer.
If you have an outdoor grill, you can alter this recipe to grill the sausages and add to the pan at the end. This recipe can also be used over pasta, just chop up the sausage into bit sized pieces. This is a pretty messy meal so be sure to have plenty of napkins on hand. Enjoy!
Smoked Salmon Panini
The original recipe is linked above. I made a few substitutions, which are listed below.
Ingredients: (this makes one sandwich, multiply as needed)
2 slices ciabatta
Dijon mustard, for spreading
thin slices of Gruyère cheese
2 oz thinly sliced smoked salmon
Finely grated zest of 1/4 of a lemon
Salt
Freshly ground pepper
Preheat the panini press or saute pan.
Spread 1 slice of ciabatta bread with some Dijon mustard, as little or as much as you’d like. Top with some Gruyere cheese.
Top with smoked salmon and lemon zest.
Season lightly with salt and pepper and cover with more Gruyere cheese. Top with other piece of bread.
Grill for 2 to 3 minutes until toasted and the cheese is melted.
