For those a bit wary about venison, the meat is actually quite lean; venison is lower in fat, calories and cholesterol than beef, pork, or lamb.
Creamy Asparagus Soup with Prosciutto
Return to the pot. Cook for ten minutes over medium low heat, stirring occasionally.
Oh my. This was delicious! I really wish I was able to make this in the spring, when asparagus is it’s freshest, I can only imagine how tasty this soup would be!
The Alfredo sauce complements the brightness of the asparagus and adds to the smooth texture. I loved the bites of prosciutto, which added a burst of saltiness to the soup. The asparagus spears and garlic croutons added nice crunch to an otherwise silky soup.

Tomato Seafood Chowder &Review of Pomi Vodka Sauce
1/4 teaspoon red pepper flakes, or to taste
1/2 cup chicken broth
8 oz crab meat
Add the scallops and cook for another 2-3 minutes, stirring.
Add the clam juice and chicken broth. If you want, you can sub out the clam juice for all broth. Add the Pomi Vodka Sauce, red pepper flakes, and diced tomatoes. If you do not want a chunky stew, you can leave out the chopped tomatoes.
Bring to a boil, reduce heat, cover, and cook for about 10 minutes. Add the clams and cover, cooking for 3-5 minutes or until the clams open.
Stir in the orzo and the crab meat and serve with day old French bread.
The Pomi Vodka sauce added plenty of flavor to the soup. It created a wonderful base and tasted awesome with the clams, crab meat and scallops. I strongly suggest adding the red pepper flakes for a tiny bit of heat, it works so well with the tomatoes. My boyfriend, who was really wary of trying the chowder, ended up polishing off his bowl, and he doesn’t even like scallops!

Curried Pumpkin Soup with Spicy Pumpkin Seeds
Ingredients:
Pumpkin Seeds:
- 1/4 teaspoon cayenne
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 2 teaspoons unsalted butter
- 1/2 cup raw pumpkin seeds
Soup:
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 medium Golden Delicious apples, peeled, cored, finely chopped
- 2 tablespoons minced fresh ginger
- 2 tablespoons all-purpose flour
- 1 teaspoon cumin
- 2 tablespoons curry powder
- 1/8 teaspoon cayenne
- 3 cups low-sodium chicken broth
- 2 15-oz. cans pumpkin
- 1 13.6-oz. can light unsweetened coconut milk
- Salt and pepper, to taste
- Plain yogurt, for serving (optional)

Jalapeno Ginger Butternut Squash Soup
Be very very careful doing this! I managed to burn my hand pretty badly when removing the top off the blender. Ouch!
Stir in the coconut milk and serve. I added a tiny bit more of the coconut milk on top of a poured serving and swirled it.

Irish Stew
I joined a food swap, and the first swap is coming up next week, so I decided to make Irish Stew.
While researching Irish Stew, I couldn’t find a recipe I liked, so I decided to wing it.
I also have yet to attempt to use my slow cooker, so I thought this would be a great opportunity to do so. Here’s hoping it turns out ok…
Ingredients:
- 3 medium-size onions, chopped
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 tablespoon dried thyme
- 1 tablespoon garlic powder, or 3 garlic cloves, minced
- 4 pounds lamb shoulder, cut into chunks (can substitute in beef)
- 7 carrots, chopped
- 3 leeks, chopped
- 3 tablespoons pearl barley
- 5 cups beef stock
- 1 bottle of Guinness
- 1 tablespoon Worcestershire sauce
- Salt & Pepper, to taste
- 1 bouquet of parsley, thyme, and bay leaves, plus more parsley for garnish
- 6 medium potatoes, peeled and cut into 1 inch cubes
- 1 parsnip, peeled and chopped (leave this to prep last)
- 1 cup frozen peas

Chickpea and Spinach Stew
Ingredients:
1 cup water
10 ounces baby spinach
2 large garlic cloves, crushed
Kosher salt
Pinch of saffron threads
2 teaspoons sweet paprika
1/4 teaspoon ground cumin
Pinch of ground cloves
Pinch of freshly ground pepper
Two 15-ounce cans chickpeas with their liquid
1/4 cup extra-virgin olive oil
1 small onion, finely chopped
1 large tomato—peeled, seeded and coarsely chopped
1/4 cup golden raisins
Crusty bread, for serving

In a small bowl, mix the garlic paste, paprika, cumin, cloves, and black pepper and mash until combined.
Stir in 1/4 cup of the chickpea liquid.
To seed the tomatoes, cut the tomato in half and use a spoon to remove the seeds.
Add the spiced garlic sauce to the pot and cook for 1 minute.
Add the spinach, reduce heat, and simmer for 15 minutes.
Drizzle the remaining 2 tablespoons of olive oil on top and serve with some crusty bread.

Tomato Soup with Chickpeas and Pasta
The original recipe is linked above. I made a few substitutions, based on what I already had in my house.
Ingredients:
7 cups diced tomatoes with their juice (two 28-ounce cans)
2 tablespoons olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 /2 teaspoons dried sage
2 cups canned low-sodium chicken broth or homemade stock
2 cups water
1 3/4 teaspoons salt
1/2 cup orzo
2 cups drained and rinsed canned chickpeas (one 19-ounce can)
1/3 cup chopped fresh parsley
1/4 teaspoon fresh-ground black pepper
1/3 cup grated Parmesan, plus more for serving

Moroccan Butternut Squash Soup
I love pumpkin… the word “obsessed” has been used many times to describe my affinity for this delicious gourd. Sadly, I had to choose a rather seasonal (unless its from a can) product, so I’ve really been trying to get my fix of pumpkin over the past few months. A good substitute for pumpkin in most dishes is butternut squash, which is a little easier to come by. Tonight for dinner, I decided to try to make a Moroccan Butternut Squash (or you can use pumpkin) soup. As with most of my base recipes, I went to myrecipes.com to see where to start. I tend to switch the recipes based on what I happen to have in my house already.
Ingredients:
- 3 1/2 cups cubed peeled fresh pumpkin or butternut squash
- 2 cups organic vegetable broth (I had chicken broth on hand)
- 1 3/4 cups diced yellow onion (I used two medium sized onions)
- 1 cup water
- 1 teaspoon Ras el Hanout (this is a mixture of a bunch of other spices that I mixed together, I’ll add that recipe below)
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground coriander
- 1/2 cup whole milk (I had heavy cream, so I changed it to a little more than a splash)
