Election Cake

I had no clue that Election Cake used to be a thing until I saw an article recently about this lost tradition! Recipes for Election Cake are found back to the late 18th century, but apparently the tradition has fallen off in recent years.

This yeasted spiced bundt fruitcake was traditionally prepared prior to Election Day and served to hungry voters.

For years, I was the machine inspector for every general and primary election in my South Philly polling location, so any attention I can bring to voting is super important to me! I am also down for any and all food holidays so let’s bring back Election Cake!

I don’t have a ton of experience using yeast, so I looked up a recipe from NY Times Food. Because of the yeast, there are two proofing times in this recipe, so set aside 4 to 6 hours to make this cake.

Ingredients (serves 10):

  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 4 cups flour
  • 1 cup dark brown sugar, packed
  • 1 cup whole milk
  • 2 (¼-ounce) envelopes active dry yeast
  • 1 teaspoon sugar
  • 1 lemon, divided
  • 2 eggs, room temperature, lightly beaten
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons salt
  • 1/4 cup brandy, divided
  • ⅔ cup golden raisins
  • ½ cup dried cranberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • 2 cups confectioners’ sugar

Homemade Apple Cider Donut Ice Cream

You read that correctly. Homemade Apple Cider Donut Ice Cream!

My love of pumpkin is well documented on this blog, so I’ve been trying to start including another fall favorite: apple cider!

This apple cider donut ice cream includes a base of apple cider flavored ice cream with chunks of apple cider donuts stirred throughout.

Ingredients (makes 1 quart):

  • 4 cups apple cider
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup brown sugar
  • 4 egg yolks
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1-2 apple cider donuts, roughly chopped

Frosted Pumpkin Brownies

For those that follow me on Instagram or Twitter, it comes as no surprise that I am a huge fan of pumpkin recipes. In fact, I have over 30 recipes that use pumpkin on this blog!

So hopefully you’ll allow me to add another one to the list: Frosted Pumpkin Brownies!

So when I had a nagging sweet tooth recently, I figured it was time to also feed my pumpkin need. This recipe for Frosted Pumpkin Brownies is comprised of a chewy, chocolatey brownie topped with a nice thick layer of pumpkin buttercream frosting, resulting in a decadent treat for the chocolate and pumpkin lovers in your life.

Ingredients:

Brownies:

Pumpkin Buttercream Frosting:

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/4 cup pumpkin puree
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom (note: can also just use 1 1/2 teaspoons pumpkin pie spice instead of the individual spices, if preferred)
  • 1/2 teaspoon salt
  • 2-3 cups powdered sugar

Caramel Apple Coffee Jam

I’m really in canning mode recently! I’m still a relative novice to canning, so I stick to sources I trust so I can preserve safely.

Freshpreserving.com is the ultimate source, so when I saw this recipe for Caramel Apple Coffee Jam, I knew I had to try it!

Using coffee in a jam intrigued me; I was interested to see what the flavor of this jam was like!

This is the first time I’ve worked with pectin in a recipe, which is basically a gelling agent that gives jams and jellies their texture. It is a starch found naturally in fruits and vegetables, so a lot of recipes for canning use a bit of acid to create the thickening needed. (I’ve also used chia seeds to create this texture in the past too.)

Ingredients (makes about 6 half pint jars):

  • 5 apples, peeled and diced (about 7.5 cups) – I used honeycrisp apples
  • 3 cups extra strong brewed coffee
  • 6 tablespoons pectin
  • 3/4 teaspoon ground allspice
  • 3 cups brown sugar, lightly packed

Spiced Fig and Pear Jam

Early fall is my favorite time of year. I love that it’s still warm enough to enjoy the outdoors, the selection of produce available is awesome, and the back-to-school vibe fuels me to get things done.

It’s also an awesome time of year to can some jellies and jams, like this delicious Spiced Fig and Pear Jam!

Figs and pears are in season at the moment, two of my favorite fruits, so what better time to make (and can) this Spiced Fig and Pear Jam?

Ingredients (makes about 6 8oz cans):

  • 1 1/2 pounds Bartlett pears, peeled, deseeded, and cut into small bite sized pieces
  • 1 1/2 pounds fresh mission figs, cut into eighths
  • 3 1/2 cups sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cardamom
  • the juice and zest of 1 navel orange

Slow Cooker Spiced Blueberry Plum Butter

This may sound silly, but I woke up a few days ago and realized that summer is nearly over, and I had not canned anything! Blueberries have been particularly lovely this year, so I wanted to make a fruit butter using them as the main ingredient. I added in some plums I had and then spiced them with some autumnal flavors to mark the impending change of seasons.

The result is this Slow Cooker Spiced Blueberry Plum Butter!

Fruit butter is a jam-like product that doesn’t use any pectin, so it spreads easier than a normal jam or jelly. Fruit butters are best made by cooking the fruit low and slow, so a slow cooker is the perfect tool to make them! Although you are using a slow cooker, this recipe does require you to stir it every now and then, so you still have to stay close by.

I adapted this recipe from Food in Jar’s recipe for Slow Cooker Blueberry Butter. There are a few tools I find super helpful when canning, so I will link to those throughout this recipe, in case you wanted to know what I use.

Ingredients (makes about 5 pints, or 10 half pint jars):

  • 6 pints blueberries
  • 8 plums, quartered, pits removed
  • 3 cups sugar
  • the juice and zest of 2 lemons
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cardamom

Gingerbread Fudge

Note: I received a bottle of Nielsen-Massey’s Pure Vanilla Extract in order to write this post. All opinions are mine alone.

I have quite a few holiday cookie recipes on my blog. I even highlight a cookie recipe on my Instagram every day leading up to Christmas. But I have never tried to make fudge before. So when Nielsen-Massey contacted me about highlighting their Holiday Flavors Bundle, I was excited to find a holiday-themed Gingerbread Fudge in their recipe section!

The fudge uses Nielsen-Massey’s Madagascar Bourbon Pure Vanilla Extract, one of the extracts included in the Holiday Flavors Bundle. The Holiday Flavors Bundle also includes their Pure Almond Extract and their Pure Peppermint Extract, so you’re all set for your holiday baking!

Indian Spiced Chicken and Potatoes in Tomato Cream Sauce

I’m on a pretty good streak of making a bunch of meals on weekends so that we have quick and easy meals on weeknights. Last weekend, I came across this recipe for Indian Spiced Chicken with Tomato and Cream and knew it would reheat nicely. It takes some time to make, so it’s best for cooking on a weekend. But it’s a one pot meal!

This adapted version is awesome over cooked rice. If you like a thicker sauce, you may want to add some water mixed with cornstarch at the end to thicken.

Ingredients:

  • 3 tablespoons butter
  • 8 drumsticks
  • salt and pepper
  • 1 medium onion, chopped
  • 4 garlic cloves, grated
  • 2 tablespoons grated peeled ginger
  • 2 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 2 teaspoons ground turmeric
  • 3/4 teaspoon ground cayenne pepper
  • 3/4 teaspoon ground cardamom
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground allspice
  • 8 cups low-sodium chicken broth
  • 1 (14 oz) can tomato puree
  • 3/4 cup heavy cream

Chewy Gingerbread Cookies

I’m hoping you’ll allow me to post one more cookie recipe this season. These Chewy Gingerbread Cookies are too good to not post!

Every year, my mom and I bake multiple cookie recipes to give to friends and family. While there are some that we bake every year, (like these Hot Cocoa Cookies), we try to make a new cookie each time. After many years of trying to make gingerbread cookies and failing at the decorating part, we decided to try making gingerbread cookies instead.

This recipe makes a wonderfully soft and chewy cookie all with the yummy flavors of gingerbread.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup light brown sugar, packed
  • 1/3 cup molasses
  • 1 egg, at room temperature
  • 2 cups flour
  • 2 teaspoons baking soda

Slow Cooker Spring Lamb Stew

I’m so impatient weather-wise in the spring. I want it to warm up immediately, but that’s not exactly how this season goes.

Although today is supposed to be quite nice, some spring nights can be rainy and down right chilly. So it’s nice to have a comforting meal available for colder nights that still makes use of ingredients readily available in the spring.

This Slow Cooker Spring Lamb Stew is a Greek-inspired dish is made in a slow cooker, so dinner will be ready for you when you return from work. It also freezes well, so you can enjoy it whenever the weather calls for a yummy stew.

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 cup all-purpose flour
  • 1 and 1/2 pound lamb shoulder, cut into bite-sized pieces
  • 1/2 teaspoon ground allspice (I used 6 allspice berries; I was out of ground allspice)
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon tomato paste
  • 2 garlic cloves, peeled and minced
  • 1/2 pound shallots, peeled and quartered
  • 1 pound baby new potatoes
  • 1/2 pound carrots, peeled and cut into bite-sized pieces
  • 2 cups red wine
  • 2 cups tomato puree
  • 2 cups low-sodium chicken stock
  • 2 tablespoons fresh oregano leaves
  • 1 cup frozen peas
  • 1 tablespoon red wine vinegar
  • whole milk Greek yogurt, to serve
  • chopped mint, for garnish
  • drizzle of olive oil, if desired
  • salt and pepper, to taste

Chocolate Pumpkin Cake with Cinnamon Cream Cheese Frosting

Every year, I have two responsibilities for Thanksgiving: make Bloody Mary’s as everyone arrives and show up with a dessert that is chocolate and/or pumpkin.

This year, I decided to make a dessert that is both pumpkin-y and chocolatey: Chocolate Pumpkin Cake!

This recipe for Chocolate Pumpkin Cake is adapted from a Country Living recipe, and uses my cinnamon cream cheese frosting from my Pumpkin Spice Cupcakes recipe.

Ingredients:

Chocolate Pumpkin Cake:

  • 2½ cups all-purpose flour
  • 1 cup cocoa powder
  • 1 tablespoon baking powder
  • ½ tablespoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • ¾ cup low fat buttermilk
  • 1 (15 oz can) pumpkin purée
  • ½ tablespoon vanilla extract
  • 1 cup plus 2 tablespoons unsalted butter (2.25 sticks), at room temperature
  • 1½ cup dark brown sugar
  • 1½ cup granulated sugar
  • 5 large eggs, at room temperature

Cinnamon Cream Cheese Frosting:

  • 2 (8 oz) packages of Cream Cheese, softened
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1 tablespoon vanilla extract
  • 2 (16 oz) packages powdered sugar
  • 1 tablespoon ground cinnamon

Optional Chocolate Frosting:

  • 1/2 cup unsalted butter, softened
  • 1/3 cup cocoa powder
  • 1 1/2-2 cups powdered sugar
  • 2 1/2 tablespoons milk
  • 1 teaspoon vanilla extract

Hashweh (Spiced Ground Beef with Pistachios Over Rice)

It’s definitely still summer weather for the most part, but this past week, we’ve had a bit of a cool down in Philly. Which got me thinking about more fall inspired dishes.

  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground pepper

Beef Kofta Kebabs

This past weekend, we had my parents over for dinner. I had a hankering for Lamb Kofta, which is a dish of ground lamb with spices formed into meatballs and grilled.

My dad isn’t exactly the most adventurous eater, and doesn’t like lamb, so I instead decided to adapt the spices added to kofta into a marinade for beef kebabs. Kofta can be made with any ground meat, but I had some beautiful  Moyer Beef’s Rib Kebab meat on hand, so kebabs it is!

Kofta can be made with quite a range of spices, so this recipe is very adaptable. This version uses fresh parsley as well as dried spices to add a different dimension of flavor. I also served it with some tzatziki for dipping.

Ingredients:

Tzatziki (omit to make dairy free):

  • 1 cup plain low-fat Greek yogurt
  • 1/2 cucumber, seeded, finely diced
  • 1 garlic clove, minced
  • the zest of one lemon
  • the juice of one lemon
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill, chopped
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Kebab:

  • 4 cloves of garlic, roughly chopped
  • 1/4 cup chopped yellow onion
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 cup olive oil
  • 2 lbs kebab meat (I used Moyer Beef’s Rib Kebab meat)

Slow Cooker Ropa Vieja

I love love love this recipe for Slow Cooker Ropa Vieja. It’s a perfect slow cooker meal, which means dinner is ready for me when I come home from work.

Ropa Vieja translates to “old clothes,” referring to the shredded beef and colorful peppers in a tomato sauce with caramelized onions that resemble torn cloth. It’s a well-known Cuban dish, but its origins go back to Sephardic dishes in the Middle Ages.

This version has a bit more prep work to it to fully develop the flavors. Trust me, it’s worth it!

Ingredients:

  • 1 tablespoon olive oil
  • 2 pounds flank steak
  • 3 bell peppers (1 red, 1 green, 1 yellow), thinly sliced
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin seeds (or 3/4 tsp ground cumin)
  • 1 tablespoon smoked paprika
  • pinch ground allspice
  • 2 whole cloves (or a pinch of ground cloves)
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1/2 cup dry white wine
  • 1 15-ounce can crushed tomatoes
  • 1 6 oz can tomato paste
  • 1 tablespoon apple cider vinegar
  • 1/2 cup beef broth
  • pimiento-stuffed green olives, to taste
  • 1 tablespoon brine from the olive jar
  • Cooked white or yellow rice
  • 1 can black beans, optional, for serving

Pumpkin Gingerbread Cookies

Halloween and dessert go together like peanut butter and jelly. Or maybe that’s only true on my blog (I have quite a few Halloween desserts on here). Who cares? More yummy desserts for us to enjoy, like these Pumpkin Gingerbread Cookies!

Although most people don’t usually equate Halloween with cookies, I saw Halloween-themed cookie cutters in the supermarket and made an impulse buy. Whoopsie. So these cookies are to justify my purchase. Plus, it gives me another excuse to add pumpkin into a recipe! I adapted this recipe form a traditional gingerbread cookie recipe from Cooking Light.

I was recently sent Truvia’s new Brown Sugar Blend, a mixture of Truvia and Brown Sugar that offers a brown sugar-like taste, texture and volume, with 75% fewer calories than regular brown sugar.
