Pomegranate Margaritas

You can never have too many festive cocktails to help you celebrate this time of year, don’t you think, especially one that uses in season fruit, like these Pomegranate Margaritas!

This recipe for Pomegranate Margaritas makes a beautiful drink, perfect for small gatherings!

I made my own juice for this recipe (instructions below) but you can just purchase pomegranate juice at your grocery store to make this a super quick recipe.

Ingredients: (makes 4 servings)

  • Lime wedge, plus more for garnish
  • Coarse Kosher Salt
  • Ice
  • 4 ounces white tequila
  • 2 ounces Triple Sec or Cointreau
  • 1/2 cup pomegranate juice
  • the juice of 1 lime
  • Club soda, to taste

Spiked Mint Coconut Milk Hot Chocolate

Today (February 19) is National Chocolate Mint Day! With the cold temperatures across most of the U.S., I think we can all use a nice warm beverage to keep us toasty, and this is the perfect food holiday for such a beverage! So, I present: Spiked Mint Coconut Milk Hot Chocolate!

Blue Chair Bay must feel the same way, so I developed this non-dairy hot chocolate beverage to pair with their Coconut Spiced Rum. The coconut rum, spiced with cinnamon, nutmeg, and clove is the perfect accompaniment to hot chocolate, don’t you think? To enhance the coconut flavor in the rum, I decided to use coconut milk which makes a rich and creamy hot chocolate base.

Rum always reminds me of warmer weather, and the Coconut Spiced Rum is no exception. Blue Chair Bay offers a collection of premium-blended rums inspired by multi-platinum singer-songwriter Kenny Chesney’s love of the island lifestyle. So even though most of us probably are not soaking up the sun at the moment, we can have our own little escape with this winter-weather treat!

Lobster Rolls with Shaved Fennel and Citrus

This year’s South Street Spring Festival is right around the corner!

On Saturday, May 3 from 11:00 to 8:00 pm, eight blocks of South Street will showcase the best restaurants, bars, food trucks, live music, and shopping the street has to offer at a huge block party! The free, all-ages Spring Festival will be held on South Street between Front and 8th and will also run along the 2nd Street Plaza between South and Lombard. There will also be three main stages and eight other performance areas along the festival featuring live music.

 

During the Festival, Brauhaus Schmitz will also host their second annual German Maifest on the 700 block of South Street featuring German beers, dancers, music, food, flower headbands and even a May pole!

 

 

I was invited to attend a media preview at Brahaus Schmitz and got to taste and sip some of the offerings you can find at the Festival.

 

Everything was delicious! Be sure to look out for the sausage and potato salad from Brauhaus Schmitz, the Shepard’s Pie from Cavanaugh’s Headhouse, the Short Rib Tacos from Bridget Foy’s, the Sliders from Redwood, and the Lobster Rolls from Headhouse Crab and Oyster. Twisted Tail was also serving up Mint Juleps which should not be missed!

 

We also got to learn some German dance moves! Many thanks to all the chefs, mixologists, and everyone else who helped make the media event a success!

 

I decided to try my own hand at making a Lobster Roll and found this recipe for Lobster Rolls with Shaved Fennel and Citrus in Cooking Light’s Global Kitchen Cookbook. These are a bit different from the Headhouse Crab & Oyster ones so be sure to check out their version at the Festival!

 

Ingredients:

  • 3 cups coarsely chopped cooked lobster meat
  • 2 tablespoons olive oil mayonnaise
  • 2 teaspoons chopped fresh tarragon
  • 1/2 teaspoon kosher salt, divided
  • 2 cups thinly sliced fennel bulb (about 1 medium bulb)
  • the zest from one orange
  • 1 tablespoon fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons extra-virgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons unsalted butter, divided
  • 6 New England hot dog buns

Fizzy Old-Fashioned

Last weekend, I had some friends over to celebrate my boyfriend’s birthday. I made a bunch of little bites for everyone to snack on, but I also wanted to offer a cocktail or two for everyone to try, like this Fizzy Old-Fashioned!

The most recent Cooking Light had this recipe for a Fizzy Old-Fashioned cocktail that sounded like a perfect warm weather drink. The recipe plays off a traditional Old Fashioned (muddled sugar and bitters, bourbon, orange rind) but adds in Blood Orange Soda to give it more flavor and a beautiful color!

Ingredients (4 servings):

  • 3/4 cup bourbon
  • The juice of 1 lemon
  • 1/4 teaspoon Peach bitters (or whatever bitters you have)
  • 2 cups chilled blood orange soda (such as San Pellegrino Aranciata Rossa)
  • Ice
  • Garnish: orange rind twists

Note: Bourbon does include grains that contain gluten. However, distilled alcohol is considered gluten-free because the process of distillation removes the harmful gluten protein, which is why I have this recipe listed as gluten free. If you are highly sensitive to gluten, bourbon may be off limits for you.
