Sausage and Peppers Quinoa Skillet

One of my favorite quick dinner options is Sausage, Pepper, and Onion Sandwiches. I thought it might be nice to lighten it up a bit and make it into a one skillet (ok, one skillet plus a small pot) recipe. The result is this yummy recipe for Sausage and Peppers Quinoa Skillet.

This recipe for Sausage and Peppers Quinoa Skillet is made with sliced bratwurst, a bunch of colorful bell peppers, sautéed onions and quinoa and makes for a hearty and healthy dinner that can be made in less than 30 minutes!

Ingredients:

  • 1 cup rinsed quinoa
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 12 oz. bratwurst, sliced into coins
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • salt and pepper, to taste
  • 1 tablespoon Italian seasoning
  • fresh parsley, chopped, for garnish

Kitchen items used:

First, make your quinoa. Bring 1 cup rinsed quinoa and 2 cups chicken broth to a boil in a medium pot. Lower to a simmer, cover, and cook for approximately 15 minutes, or until the broth has evaporated. Remove from heat and let stand, covered, for 5 minutes.

While the quinoa cooks, heat a large skillet over medium heat. Add 2 tablespoons olive oil. Add your sliced bratwurst to the skillet and cook until browned, about 2 to 3 minutes. Flip the slices and brown on the other side, another 2 to 3 minutes. Remove the bratwurst from the pan with a slotted spoon.

Add your sliced peppers and onions to the skillet. Cook for about 5 minutes or until the onions become translucent. Add in the garlic cloves, and cook, stirring for another minute. Season with salt, pepper, and Italian seasoning, stirring to combine. Cook for another 3 to 5 minutes.

Add the cooked bratwurst and quinoa to the pan, stirring to combine.

Top the Sausage and Peppers Quinoa Skillet with parsley and serve.

I love a 30 minute meal that is both colorful and flavorful!

Feel free to experiment with the seasonings to snazz this recipe up – using ras el hanout instead of the Italian seasoning would be an awesome substitute!
