First, make your quinoa. Bring 1 cup rinsed quinoa and 2 cups chicken broth to a boil in a medium pot. Lower to a simmer, cover, and cook for approximately 15 minutes, or until the broth has evaporated. Remove from heat and let stand, covered, for 5 minutes.

While the quinoa cooks, heat a large skillet over medium heat. Add 2 tablespoons olive oil. Add your sliced bratwurst to the skillet and cook until browned, about 2 to 3 minutes. Flip the slices and brown on the other side, another 2 to 3 minutes. Remove the bratwurst from the pan with a slotted spoon.

Add your sliced peppers and onions to the skillet. Cook for about 5 minutes or until the onions become translucent.

Add in the garlic cloves, and cook, stirring for another minute. Season with salt, pepper, and Italian seasoning, stirring to combine. Cook for another 3 to 5 minutes.

Add the cooked bratwurst and quinoa to the pan, stirring to combine.
Top with parsley and serve.
