Snickerdoodles

I am back in cookie baking mode. This time around, I’m going the more traditional route. First on my list, classic snickerdoodles.

Snickerdoodles

Ingredients

  • 3/4 cup granulated sugar
  • 2/3 cup light brown sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour (about 6 3/4 ounces)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Preheat your oven to 400 degrees. Add the sugar, brown sugar, and softened butter in a large bowl. Using a hand mixer, beat at medium speed until well combined. Add the egg and vanilla and beat in until incorporated. In a medium sized bowl, combine the flour, baking powder, 1/2 teaspoon cinnamon and salt. Add the flour mixture to the butter mixture and beat on medium until just combined.




Shape the dough into 30 balls. (I somehow ended up with 29. So close..)


Combine 1/3 cup sugar and 1 1/2 teaspoons cinnamon in a shallow bowl. Roll the bowls in the sugar mixture one by one.




Place two inches apart on a baking sheet lined with parchment paper. 

Bake at 400 degrees for 8 minutes. The original recipe said to bake until the tops cracked, but mine just didn’t want to crack. Oh well.

 

Cool on pans for 1 minute. Remove from the pan and cool fully on a wire rack.


These ended up being the perfect amount of crisp and chewy. I don’t think I’ve ever met a snickerdoodle I didn’t like, but I was really pleased with the consistency of these cookies.



Be careful to not crowd the cookie dough on the baking sheet. They spread out quite a bit!



They passed my taste test, but the real test will come over the weekend… 🙂
