Pan Seared Flounder with Fried Rosemary and Garlic

In an effort to eat more fish, I have been in search of recipes that call for fish other than salmon, my main seafood staple. I’ve made flounder once before and loved how quick it cooked up and how delicious it tasted.
So when I found this recipe for Pan Seared Flounder with Fried Rosemary and Garlic in Cooking Light’s Fresh Food Fast cookbook, I knew I had to try it.
I’ve had the Cooking Light Fresh Foods Superfast cookbook for a while now and just finally opened it. I found so many delicious recipes that I can’t wait to try!
  • 1 tablespoon olive oil
  • 3 large garlic cloves, thinly sliced
  • 4 rosemary sprigs
  • 2 flounder fillets
  • Salt, pepper and paprika, to taste
  • Lemon wedges

Prepare your garlic and rosemary.
Heat the olive oil in a saute pan over medium to medium-low heat. Add the garlic and rosemary.
Cook, stirring, for 3 minutes until the garlic is lightly browned.
Transfer garlic and rosemary to a bowl using a slotted spoon. Reserve the oil in the pan.
Sprinkle the fish with salt, pepper, and paprika.
Add the fish to the pan and cook for 3 minutes on each side. Flounder is a very delicate fish, so take some care when flipping the fish. If it breaks apart, oh well. It will still taste good!
When finished cooking, add the fish to individual plates. Top with even amounts of the garlic and rosemary.
(I preferred to take the rosemary off the sprig. You can keep it on if you like. Serve with lemon wedges.
Flounder had a wonderful buttery flavor that you can really taste in this dish. The crispy rosemary and garlic added amazing flavor and a nice crunch to the delicate fish.
Best part, this meal can be made in under 15 minutes. I tried to make mashed potatoes to go with this, but the recipe just didn’t work out, sigh. But this recipe would work great with mashed potatoes, steamed green beans, or roasted vegetables.

  2. This is fabulous and easy. I add some toasted almonds to the garlic and rosemary…gives a nice flavor and delightful crunch.

  3. I had a flounder and looked up the recipe, had the ingredient accept for the fresh rosemary but I used dried an, it is every easy and came together well. Used cast iron and stayed together for the most part. I think I added a little oil on the second filet.
    Is good!
