Banana-Oatmeal Chocolate Chip Cookies

I never seem to eat all my bananas before they get too ripe. I know the go-to saver for over ripe bananas is banana bread, but I wanted to use them for something a little different. Cooking Light had a great cookie recipe that used ripe bananas, so I tried it out.
Ingredients:
  • 1/2 cup mashed ripe banana (about 1 medium)
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 5 3/5 ounces all-purpose flour (about 1 1/4 cups)
  • 2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semisweet chocolate chips

Preheat your oven to 350 degrees. Add the banana, brown sugar, butter, sugar, and vanilla extract to a large bowl.

 

Use a mixer to combine until smooth. Add the egg and beat until smooth.

Add the flour, oats, baking soda and salt to a medium bowl. Stir to combine.

Add the oat mixture to the banana mixture and beat with a mixture at medium speed until well blended.

Stir in chocolate chips.

 

Drop large tablespoons onto a baking sheet lined with parchment paper. If you do not have parchment paper, coat a baking sheet with cooking spray before adding cookie dough. (It should make about 18 cookies)
Bake at 350 for 18 minutes. Remove from the oven and allow to cool on the pans for 2 minutes before transferring to a rack to cool completely.
What a wonderful find! The cookies were moist and chewy and the banana taste shown through.
I think I’ve found my new recipe for over ripe bananas!

  2. I have another bunch of ripe bananas in my yard that I need to find recipes for. This looks like a winner! By the way, bananas can be sliced and frozen on a baking sheet for later use.
