116 oz box rigatoni, cooked according to package directions
1package Hillshire Farms Beef Smoked Sausagecut into slices
1tablespoonolive oil
1small onionchopped (~1 cup)
2garlic clovesminced
1tablespoonfinely chopped fresh basil leaves
214.5 oz cans Fire Roasted Diced Tomatoes
salt and pepperto taste
grated Parmesan cheeseoptional
Instructions
Heat a pot of water over high heat and bring to a boil. When the water is boiling, add the pasta and cook according to package directions. Drain the pasta and set aside.
While waiting for the water to boil, chop your onion, garlic, and basil.
Cut the smoked sausage into ½ inch slices. Add to a large saute pan with sides over medium high heat and cook for 6-9 minutes, turning half way through.
Remove the sausage pieces from the pan and set aside. Lower the heat to medium. Add 1 tablespoon olive oil to the pan and swirl to coat. Add the onions and garlic and saute until softened, about 2-3 minutes.
Add the basil and cook for 1 minute, stirring occasionally.
Add the fire roasted diced tomatoes cans, stirring to combine.
Cover and let simmer for 10 minutes, until the tomatoes break down a bit.
Add the sausage back to the pan and stir to coat in the sauce. Add the pasta and stir to combine.
Serve with grated Parmesan and more fresh basil, if desired.
