Rosemary Syrup (makes enough for about 5 cocktails):
1/2cupwater
1/2cupsugar
2fresh rosemary sprigs
pinchsalt
Rosemary Grapefruit Prosecco Cocktail (makes enough for 1 cocktail; multiply as needed):
2ozgrapefruit juice
1tablespoonrosemary syrup
3ozProseccolike Valdo Marca Oro Brut
1grapefruit wedge
1fresh rosemary sprig
Instructions
You can make the rosemary syrup a few days ahead of time if desired. To make the rosemary syrup, add the water, sugar, rosemary sprigs, and pinch of salt to a small pot over medium-high heat. Bring to a simmer.
Let simmer for 5 minutes, stirring to dissolve the sugar fully into the water.
Remove from heat and let cool for about 10 minutes. Remove the rosemary sprigs and add the syrup to a jar with a lid. Refrigerate until ready to use.
When ready to make your Rosemary Grapefruit Prosecco Cocktail, add the grapefruit juice and rosemary syrup to a flute. Stir to combine.
Carefully pour in the Prosecco.
Garnish with a grapefruit wedge and a rosemary sprig.
