As my wedding quickly approaches (~2 weeks!), having time to make dinner every night has become, well, kind of difficult. Every now and then, I just need a quick but tasty meal that doesn’t involve any prep/effort on my part.
Grabbing something to go can sometimes mean making not-so-great choices nutritionally, so I am always looking for a clean option that is also convenient.
The Ready Pac elevAte Salads are such a lifesaver! There are eight different superfood salads, but I picked up two of them on my last trip to Wegmans for my fiance and me: the Organic Nutty Cranberry and the Organic Southwest Salad.
The salads are delicious while still being healthy. elevAte salads are packed with clean ingredients that are rich in antioxidants, high in omegas, and include plant-based proteins. Many of their offerings are USDA Organic and gluten-free. There are three offerings with antibiotic-free chicken, three vegetarian options, and one vegan option.
Each salad comes in fully recyclable packaging that is printed with soy-based inks.
The Organic Nutty Cranberry Salad is deliciously filling, with 7g protein, and is an excellent source of antioxidant vitamin E. The salad includes organic spring mix, dried cranberries, creamy feta cheese, walnuts and almonds topped with a raspberry vinaigrette.
The salad comes nicely packed up, with the toppings separated from the lettuce to keep everything from wilting. It even includes a fork! Just mix the ingredients into the lettuce, pour the dressing over everything, and dig in!
When looking for vegetarian meals, I try to find ones with a good amount of protein to keep me full, so the almonds and walnuts were an awesome addition. The dried cranberries add a touch of sweetness, the feta cheese adds some creaminess which is complemented with the crunchy nuts. The vinaigrette was delicious too!
My fiance had the Organic Southwest Salad, with organic romaine lettuce, carrots, fire-roasted corn, black beans, Monterey Jack cheese, crunchy tortilla strips, and creamy southwest dressing. This salad really packs in the antioxidants: its an excellent source of vitamins A, E, K, and folate. The southwest salad also includes 7g protein.
Everything was again separated to keep the salad nice and fresh.
My fiance loved the flavor of the fire-roasted corn. The black beans helped make the salad feel like a meal (the protein in the beans kept him full), and the crunchiness of the tortilla strips was a nice touch. He’s a runner, so a little bit of carbs always makes him happy!
We both loved our salads and can’t wait to try the other varieties offered! I am thrilled to have a simple option for nights that I just don’t have time to cook while still delivering a healthy and delicious dinner.
