My guess is you might want to allow the tomato sauce to simmer and reduce longer before adding in the heavy cream and cheese. But yes, the parmesan will help thicken the sauce.

Thanks for sharing your recipe. Where can you purchase the Bacon Vodka? I’ve never seen it before. I’ve made penne with regular vodka, but for some reason, my sauce wasn’t as thick as your’s. I skipped the Parmesan cheese. Do you think that could be the reason?

Tracy, there is a smokiness not found in traditional vodka sauce. However, you might be able to get similar results with smoked paprika or fire roasted tomatoes if you don’t want to buy the Bacon vodka
