Excellent! Very flavorful. I did find it helpful to rearrange the order of the ingredients to be closer to the order in which they were used, and listed (on my copy) the toppings in a separate section for clarity. I do not understand why the bruschetta recipe specifies inappropriate amounts of everything. I had at least twice, if not three times, more than I needed. I personally think it should be scaled to fit the amount of chicken used. I used Monterey Jack (out of Mozzarella) cheese, and broiled the chicken on HI, as close to the element as possible. The timing was good. I added a little bit extra oil and vinegar to the bruschetta. It was wonderful! Both my husband and I loved it, and he "pigged out". Very moist, flavorful, and tender! Thanks.

This sounds great! But you simply must try some Himalayan pink salt. I get mine from Sustainable Sourcing https://secure.sustainablesourcing.com. The flavor is so much better than regular salt! Thanks for sharing this recipe—I can’t wait to try it!
